1/2 cup chopped onion
1/2 cup chopped green pepper
1/2 cup chopped celery
1 teaspoon minced garlic
1 tablespoon olive oil
1 can (28 ounces) crushed tomatoes
1 can (14-1/2 ounces) Mexican diced tomatoes
1/4 cup chopped sun-dried tomatoes (not packed in oil)
1 can (15 ounces) pinto beans, rinsed and drained
1 can (16 ounces) kidney beans, rinsed and drained
1 can (15 ounces) black beans, rinsed and drained
1/2 cup dark beer
1 tablespoon chili powder
2 teaspoons baking cocoa
1 cup shredded Mexican cheese blend

Steps:

  • In a Dutch oven, saute the onion, green pepper, celery and garlic in oil until crisp-tender. Add the tomatoes, beans, beer, chili powder and cocoa. Bring to a boil. Reduce heat; cover and simmer for 40 minutes. Serve with cheese.

2 tablespoons olive oil
2 pounds ground turkey (not lean)
Kosher salt and freshly ground black pepper
4 cloves garlic, chopped
2 stalks celery, chopped
1 large onion, chopped
3 tablespoons chile powder
2 tablespoons tomato paste
One 28-ounce can diced tomatoes
One 15-ounce can pinto beans, rinsed and drained
One 15-ounce can kidney beans, rinsed and drained
One 15-ounce can black beans, rinsed and drained
One 4-ounce can diced green chiles (mild, medium or hot, as desired)
2 cups chicken broth
1 cup shredded pepper Jack or sharp Cheddar, for topping
1 cup sour cream, for topping
1 cup sliced scallions, for topping

Steps:

  • Heat the olive oil in a Dutch oven or large wide pot over medium-high heat. Add the turkey, 1 teaspoon salt and a few grinds of pepper and cook, breaking up any clumps with a wooden spoon, until brown, about 8 minutes. Remove the turkey and set aside. Add the garlic, celery, onion and 1/4 teaspoon salt to the pot and cook, stirring occasionally, until the vegetables have softened, about 8 minutes. Add the chile powder and tomato paste and cook, stirring, 1 minute.
  • Return the turkey to the pot and add the diced tomatoes, beans, green chiles and chicken broth. Increase the heat to medium-high and bring to a simmer, then reduce the heat and simmer until the vegetables are tender and the flavors have melded, about 30 minutes.
  • Serve the chili topped with the cheese, sour cream and scallions.

This is so easy and so tasty. Freezes great for meals later in the week. If you want it a little thinner add an extra can of tomato sauce. Also the green chiles are not hot but add a wonderful flavor, so don't be afraid of them.

1 (28 ounce) can diced fire-roasted tomatoes
1 (16 ounce) can tomato sauce
1 (15.5 ounce) can pinto beans, rinsed and drained

1 (15 ounce) can reduced-sodium black beans, rinsed and drained
1 small onion, chopped
1 (4.5 ounce) can chopped green chiles

Steps:

  • Cook and stir turkey in a large skillet until completely browned, 7 to 10 minutes; transfer to slow cooker.
  • Stir tomatoes, tomato sauce, pinto beans, kidney beans, black beans, onion, green chilies, chili powder, garlic, oregano, and cumin with the turkey in the slow cooker.
  • Cook on High for 4 hours or on Low for 7 hours.

This is a wonderful and healthy chili. Sometimes I make a Mexican mole version (that's mo-lay, not the rodent!) by adding 2 to 3 tsps. cocoa powder, 1 tsp. cinnamon and 1/2 tsp. cloves to the spice mixture. Gives it a great flavor twist! The beer is optional - I love the flavor it gives, but you can just add some water or broth if you prefer.

2 cup(s) diced green pepper

Steps:

  • Put 2 Tbl. oil in large soup pot and heat over medium high heat. Add turkey & chicken and cook, breaking up and stirring, until no pink remains. Pour into colander to drain oil.
  • In the same pot, put remaining 2 Tbl. oil and heat over medium high heat. Add onions, garlic & green peppers and cook until soft, about 3 minutes. While vegetables are cooking, mix chili powder, pepper, salt, oregano & sugar in a small bowl to combine.
  • Return drained meat to pot with onion mixture and reduce heat to medium. Stir spice mixture into pot and stir continuously over medium heat until spices are well mixed into the meat and vegetables, about 2 minutes.
  • If using fresh diced carrots, microwave (covered) in a little water on high for about 2 minutes. Drain and stir into the pot. (If using canned carrots, don't add them until you add the corn.)
  • Add all tomatoes & sauce, plus beer, and mix well. Stir in all rinsed and drained beans and mix well. Cook over medium heat, stirring occasionally, until chili is bubbling.
  • Once chili is bubbling, reduce heat to low or medium low and cook for at least an hour, stirring occasionally. (I often cook for 1-1/2 to 2 hours.)
  • Stir in corn (and diced, drained & rinsed canned carrots, if using) and continue cooking on low or medium low for at least another half hour, stirring occasionally.
  • This chili is fabulous the next day, too - and it freezes well.

3 cups shredded chicken breast (from 1 lb chicken breast, or rotisserie chicken)
2 Tbs olive oil
1 large onion (diced)
1 large red pepper (seeded and diced)
1 large jalapeño pepper (seeded and minced)
3 small cloves garlic (minced)
2 Tbsp chili powder
1 tsp cumin
1 Tbs dried oregano
1 Tbsp flour
2 cups low sodium chicken broth
1 cup low fat milk
1-15 oz can black beans
1-15 oz can kidney beans
1-15 oz can pinto or white beans
1/4 cup chopped cilantro
3 green onions (chopped)
juice of 1/2 lime
Kosher salt
Optional garnishes: chopped avocado

Steps:

  • If you are cooking the chicken breasts, season chicken with salt and pepper, and cook on the grill, or roast in the oven at 350 degrees. Set aside to cool, and then shred it with 2 forks.
  • Heat olive oil in a dutch oven, and sauté onion, red pepper, jalapeño and garlic about 5 minutes, or until soft.
  • Add spices and stir for 30 seconds until fragrant. Add flour and stir to coat all vegetables.
  • Add broth and milk, and stir while bringing mixture to a simmer to thicken.
  • Once the base is thickened, add the shredded chicken to the pot.
  • Rinse beans in a colander, and add to the chili.
  • Simmer chili for about 20 minutes.
  • Add chopped cilantro, green onion, and lime juice just prior to serving.
  • Season with salt to taste, and adjust any other seasonings as needed.
  • Serve immediately, and garnish as desired.

2 lbs boneless skinless chicken breasts
2 tablespoons oil
1 medium onion, diced
1 garlic clove, minced
2 tablespoons fresh oregano
2 tablespoons lime juice
1 (12 ounce) can cream of chicken soup
1 (14 1/2 ounce) can chicken broth
2 (4 ounce) cans diced green chilies
1 (15 ounce) can garbanzo beans
1 (15 ounce) can pinto beans
1 (15 ounce) can great northern beans
1 (15 ounce) can white corn
4 slices turkey bacon (optional)
cumin
cayenne pepper

Steps:

  • In a large stock pot, add oil, onion, and garlic. Saute until onions are clear, then add chunked chicken stirring often until cooked through.
  • Add cream of chicken soup and chicken broth, all beans (drained and rinsed), corn (drained), and diced green chiles. Bring to a bubble, then reduce heat and simmer until chili begins to thicken - about 20 minutes - stirring occasionally.
  • If you choose to add bacon, cook this now while the chili is simmering. After it is cooked, crumble it into the chili.
  • Add roughly chopped oregano and lime juice and cook for 10 minutes more.
  • Remove from heat and serve immediately, or allow to cool to room temperature, portion, and freeze.
