THOSE POTATOES
I have been making this for Christmas dinner for 20 years. Great with roast beef or ham. I substitute half and half for the cream and use regular black pepper, because it's what I have on hand.

- Best-Ever Oven-Baked French Fries. Per 1 serving: 190 calories, 8 g fat (1.5 g saturated fat), 240 mg sodium. The French fry is one of those universally well-liked foods—it's hard to think of someone who doesn't like fries, right?
- Game-Day-Ready Spicy Potato Skins. Per 1 serving: 310 calories, 11 g fat (5 g saturated fat), 490 mg sodium. In 1974, T.G.I. Friday's introduced us all to the potato skin.
- Crispy Rosemary Potatoes. Per 1 serving: 150 calories, 3.5 g fat (0.5 g saturated fat), 330 mg sodium. You can never go wrong with a roasted potato recipe, as it makes for the perfect side dish with almost anything you decide to whip up for dinner.
- Not-So-Unhealthy Cheese Fries. Per 1 serving: 300 calories, 13 g fat (5 g saturated fat), 310 mg sodium. While delicious, the idea of eating fried potatoes covered in cheese at a restaurant is rather dangerous for your waistline.
- Garlic Mashed Potatoes. Per 1 serving: 180 calories, 8 g fat (5 g saturated fat), 360 mg sodium. When in doubt, making mashed potatoes is never a bad idea.
- Yukon Gold and Sweet Potato Gratin. Per 1 serving: 210 calories, 7 g fat (4.5 g saturated fat), 180 mg sodium. Most gratin dishes are filled with heavy cream and butter, which is why the side dish can end up being higher in calories than the main entrée!
- Smashed Potatoes. Per 1 serving: 210 calories, 8 g fat (1.5 g saturated fat), 380 mg sodium. That's not a typo you're seeing: These potatoes are smashed, not mashed, which means they're crispy on the outside but soft on the inside, and yes, you do smash them with your hands to get them to this state.
- Baked Potato Soup. Per 1 serving: 220 calories, 9 g fat (4 g saturated fat), 650 mg sodium. Most versions of the baked potato soup start with a base of heavy cream, which makes for an unnecessarily high-in-calories bowl of soup.
- Healthiest Potato Salad. Per 1 serving: 190 calories, 10 g fat (2 g saturated fat), 320 mg sodium. Potato salads you find at a typical summer cookout tend to be drowning in a pool of mayo.
- Best Homemade Potato Chips. Per 1 serving: 190 calories, 10 g fat (2 g saturated fat), 320 mg sodium. Potato chips are hard to resist, and most of the time, once you start eating some, you end up eating the entire bag.

- Baked potato. I thought it was impossible to improve on a simple baked potato. I was wrong. Steam the spud for 20 minutes to infuse with moisture, then bake for 40 minutes in a hot oven to get the perfect combo of fluffy inside and extra crisp outside.
- Classic potato salad. Picnics and barbecues would not be the same without a bowl of creamy potato salad on the side. This classic recipe pairs boiled new potatoes with shallots, capers and cornichons for a tangy kick.
- Fondant potatoes. These potatoes may sound fancy but there’s no need to whip out your chef whites quite yet! Recreate this traditional French dish with crisp, crunchy edges and a soft, silky middle for an elegant dinner party side or Sunday lunch accompaniment.
- Mashed potato. I’m not going to lie, I have found it hard to do full justice to this most magnificent of side dishes. However, everything improved once I got my head around this hack: after you’ve boiled the potatoes, drain them, return to the pan and cover with a cloth for 10 minutes.
- Rösti. Easier than you think. Grate a potato, squeeze out all the moisture, add rosemary, salt and pepper, then oven bake. Once you’ve flipped it, top with grated Gruyère or a fried egg.
- Crisp sandwich. As if crisps aren’t wonderful enough, it turns out they’re even better between bread. We’ve seen this trend emerging across the UK restaurant and café scene so it seems only right to replicate it in the comfort of a home kitchen.
- Boiled, squashed and then roasted. My favourite new method, this is a real game changer: Boil small potatoes in their skins, then drain and cover with a cloth for a few minutes.
- Dauphinoise potatoes. We’ve arrived at nirvana – layered potato slices with lots of cream, garlic and melted Gruyère – to be served on feast days on my desert island.
- Oven chips. Some foods are at their peak only when cooked brilliantly using the most expensive ingredients. The potato is not in this category. You can achieve perfectly crispy, golden chips using a home oven, which also takes away the effort of frying.

- Potato Salad with Mustard Sauce and Watercress. Peewee Dutch Yellow Potatoes are the perfect tiny potato for this recipe, but if you can’t find them, just use the smallest fingerling or Yukon Gold potatoes you can buy.
- Summer Greens with Mustardy Potatoes and Six-Minute Egg. Who said potato salad had to be boring? Or egg salad, for that matter! This deconstructed salad combines the best of both worlds, and is versatile to be served for breakfast, lunch, or dinner.
- Make-Ahead Mashed Potatoes. These creamy, glossy mashed potatoes can be made up to two days before the big night without losing their velvety texture. View Recipe.
- Savory Sweet Potato Casserole. Brown butter and rosemary are the ultimate, timeless pairing for sweet potatoes. Making your own breadcrumbs from sourdough bread shoots this recipe into all-star status, but using store-bought in a pinch is perfectly fine too.
- Pull-Apart Potato Rolls. Use these to make amazing leftover turkey sandwiches. View Recipe.
- Baked Potatoes Deluxe. These are impossibly fluffy on the inside and shatteringly crispy on the outside. View Recipe.
- Cast-Iron Roast Chicken with Crispy Potatoes. Size matters. This isn't the time for a mammoth Oven Stuffer, nor do we want some petite poussin—a 3½–4-lb.
- Loaded Sweet Potatoes. We like to roast the sweet potatoes ahead of time then rewarm them by flattening and crisping them in a skillet until lightly charred.
- Charred Sweet Potatoes With Hot Honey Butter and Lime. When you mix hot sauce with butter, it turns into a spicy, creamy spread that’s perfect for melting atop burnished sweet potato halves, bringing them to life.
- Charred Sweet Potatoes with Toum. This recipe is nice twice. The roasting and honey-glazing method is a great way to make sweet potatoes, and you also get an eggless garlic sauce that you’ll use again and again.
