Instant Pot® Garlic-Herb Chicken Thighs and Rice image

This one-pot chicken and rice recipe is a family super hit. Flavorful and fluffy, buttery rice with juicy chicken thighs makes this a perfect Instant Pot® dinner dish. While serving, sprinkle some parsley and Parmesan cheese over.

1 ½ cups basmati rice
5 (5 ounce) bone-in chicken thighs
1 tablespoon lemon juice
2 teaspoons chili powder, divided
1 teaspoon salt, or more to taste
½ teaspoon ground black pepper, or more to taste
1 tablespoon vegetable oil
2 tablespoons butter
1 large onion, chopped
1 ½ tablespoons minced garlic
1 tablespoon ground paprika
1 ½ teaspoons dried oregano
1 ½ teaspoons ground thyme
1 ½ teaspoons dried parsley
2 cups chicken stock

Steps:

  • Rinse rice until it runs clear; drain excess water and let sit.
  • Season chicken with lemon juice, 1 teaspoon chili powder, 1 teaspoon salt, and 1/2 teaspoon black pepper.
  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add oil to heat. Sear seasoned chicken thighs in the hot oil until golden and crisp, 2 to 3 minutes per side. Remove and set aside.
  • Add butter to the pot, followed by onion; saute until onion is soft and translucent, about 5 minutes. Add garlic and cook and stir for 30 seconds. Add remaining chili powder, paprika, oregano, thyme, and parsley; season with salt and pepper to taste. Mix well. Add drained rice. Gently stir to toast, 2 to 3 minutes. Pour in chicken stock.
  • Arrange seared chicken thighs and any accumulated juices on top in a single layer. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 8 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, 8 to 10 minutes. Release remaining pressure carefully using the quick-release method, about 5 minutes. Unlock and remove the lid. Let rest for another 10 minutes. Fluff rice with a fork and serve.

5 strips bacon (chopped into tiny pieces)
1 tablespoons butter (or oil, plus more for brushing chicken )
1 medium onion (chopped)
3 cloves garlic (finely chopped)
5 chicken thighs (skinless & boneless)
1 1/2 cups long grain rice (rinsed)
2 3/4 cups homemade chicken broth (hot)
1 1/2 tablespoons Meat Seasoning (or use your favorite poultry seasoning)
1 teaspoon paprika
sea salt and pepper (to taste)

Steps:

  • Preheat the oven to 350F and get 9 by 13" casserole dish ready by placing it on the table.
  • Using a skillet, add 5 chopped bacon strips and saute until golden color about 5 minutes. Next remove bacon grease leaving about 1 tablespoon inside the skillet add 1 tablespoon butter (Or remove all of the bacon grease and add 2 tablespoon of butter!) and 1 chopped onion. Saute onion with bacon until onion is soft about 9 minutes, stirring few times.
  • Now, add 3 finely chopped garlic cloves and saute for 1 minutes, stirring few times. Place 1 1/2 cup of rice and saute onion with bacon into a casserole dish.
  • Using small dish, mix all spices together. Rub 1/2 of the spice mixture onto both sides of the chicken thighs and the rest of the spice mixture add it to the casserole to flavor the rice. Pour in 2 3/4 cups of homemade chicken broth. Stir the rice and broth try it, and add more salt if needed.
  • Place chicken on top the rice, cover the casserole and bake for about 30 minutes. After uncover (grease chicken thighs with oil or melted butter, to get that golden color), then bake for 20 more minutes.
  • Grease chicken again with oil & broil on high for 3-5 minutes. Sprinkle with freshly chopped greens like parsley and enjoy!

1 cup uncooked white rice
¼ cup butter
1 onion, chopped
2 cups water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Dissolve bouillon in 1 tablespoon water. In a medium bowl combine the rice, butter/margarine, onion and 2 cups water. Mix well and pour mixture into a 9x13 inch baking dish.

5 bone in chicken thigh fillets, peel skin OFF (, (Note 1))
1 onion (, chopped (brown, white or yellow))
2 cloves garlic (large) (, minced)
2 tbsp (30g) butter ((or olive oil))
1 1/2 cups (270g) uncooked white rice ((Note 3))
1 1/2 cups (375 ml) chicken broth/stock (, hot (I microwave))
1 1/4 cups (315 ml) water (, hot (tap is fine))
1 tsp paprika powder
1 tsp dried thyme
1/2 tsp garlic powder
1/2 tsp onion powder
3/4 tsp salt
Black pepper
Oil spray
Fresh thyme leaves or finely chopped parsley

Steps:

  • Preheat oven to 180°C/350°F.
  • Scatter onion and garlic in a baking dish (about 10 x 15" / 25 x 35 cm), then place butter in the centre. Bake for 15 minutes (check at 12 minutes, mix if some bits are browning too much).
  • Meanwhile, mix together Chicken Rub. Sprinkle on both sides of the chicken.
  • Remove baking dish from the oven. Add rice then mix.
  • Place chicken on rice. Then pour chicken broth and water around the chicken.
  • Cover with foil, then bake for 30 minutes. Remove foil, spray chicken with oil (optional, gives chicken nicer finish), then bake for a further 20 minutes until liquid is absorbed.
  • Stand for 5 minutes, then remove chicken and fluff up rice. Garnish with parsley or thyme if desired, serve and enjoy!

Instant pot chicken thighs and rice. Easy one-pot instant pot recipe the whole family would love. Weeknight dinner just got easy and quick with this easy instant pot rice recipe. It is flavourful and uses pantry staple ingredients.

6 pieces bone-in chicken thighs
2 cups basmati rice
3 cups chicken stock
½ tbsp herb de provence ( substitute this with Italian seasoning or any other herbs of choice)
1 tsp paprika
½ tbsp ginger
½ tbsp garlic paste
1 tsp salt
½ tsp black pepper
1 small onion
2 tbsp butter
2 tbsp vegetable oil
2 tbsp chopped chives (substitute with chopped spring onions)

Steps:

  • Season the chicken thighs with salt, black pepper and paprika. Mix to combine and set aside.
  • Turn on the instant pot and select the Sauté button on normal heat. Sauté the onions in butter and vegetable oil until soft.
  • Stir in the garlic and ginger paste then add the seasoned chicken thighs to the pot and leave undisturbed to brown for 3 minutes, flip the side of the chicken and brown for another 3 minutes.
  • Take out the chicken thighs from the pot and set aside.
  • Add 2 cups of broth to the pot and deglaze the bottom of the pan thoroughly. This step is crucial in order to avoid getting a BURN notice.
  • Add washed rice to the pot, a cup of broth and stir to combine. Add herd de province, salt to taste (optional) don't mix. Place the chicken on top of the rice and securely cover the instant pot.
  • Select manual or pressure cook and cook on high pressure for 6 minutes. When the cooking cycle is completed allow the pot to come to natural pressure for 10 minutes then carefully do a quick release.
  • Open the pot, add the chopped chives and stir to combine. Leave the rice to stand covered for another minute or two. Fluff the rice and serve.

1 (14.5 ounce) can crushed tomatoes
1 teaspoon dried basil
1 teaspoon ground paprika

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine paprika, seasoning salt, and garlic powder for seasoning blend in a small bowl; rub into both sides of chicken thighs.
  • Heat olive oil in a Dutch oven over medium-high heat. Add chicken thighs to the hot oil and cook until browned, about 4 minutes per side. Transfer chicken to a plate.
  • Add onion and garlic to the Dutch oven and stir into the drippings. Cook, stirring occasionally, for 2 minutes. Add rice and stir until well coated in oil.
  • Turn off the heat and pour in chicken stock. Stir, scraping the bottom of the pot with a spoon to loosen any browned bits. Stir in crushed tomatoes, basil, paprika, seasoning salt, garlic powder, and pepper. Place chicken on top and cover with a lid.
  • Bake in the preheated oven for 30 minutes. Uncover and use tongs to remove chicken to a plate. Stir rice from the bottom to the top, then place chicken back on top of rice. Cook, uncovered, until all liquid is absorbed and rice is tender, 15 to 18 more minutes.
