CHILI WITH TURKEY AND BEANS
Ground turkey, stewed tomatoes, and four kinds of beans make this chili quick, light, and flavorful. It's great served in bowls and sprinkled with cheese for a fall lunch or supper.

Steps:
- Cook turkey, onion, and green pepper in a large soup pot or Dutch oven over medium heat until turkey is no longer pink, about 10 minutes, stirring often; rain excess grease. Stir stewed tomatoes, chili beans, kidney beans, pinto beans, black beans, jalapeno pepper, garlic, chili powder, molasses, cumin, bouillon cube, oregano, salt, and cayenne pepper into turkey mixture.
- Bring chili to a boil, reduce heat to low, and cover pot. Simmer until vegetables are tender and flavors have blended, about 20 minutes.

MOM'S TURKEY CHILI
This chili is thick and hearty...more like a stew than a soup. You can eat it as is or on top of rice or macaroni. Enjoy!

Steps:
- First add your olive oil to a pot and let heat up. Add your onion and green pepper and cook until they start to soften.
- Add your meat and as it starts to brown, add the cumin, chili powder, paprika, salt and pepper.
- Mix well and continue to brown.
- Lastly add your tomato products, beans and garlic. Make sure to drain and rinse the beans first.
- After adding the tomato paste, fill the 6oz can with water and add to the pot.
- Let cook over medium heat for 20 minutes to let the flavors meld.
- Can be served as is, over rice or macaroni.

SPICY AND THICK TURKEY CHILI
I love a spicy and thick chili during fall and winter months; this recipe (made with ground turkey) kicks butt! The cocoa powder is the secret ingredient! Works best to have all your ingredients chopped drained and ready before you start, as it thickens up pretty fast over the heat.

- Heat olive oil in a large pot over medium heat. Cook and stir onions, green bell pepper, red bell pepper, and garlic in hot oil until the onion is translucent, 7 to 10 minutes.
- Crumble ground turkey into small pieces and add to the pot. Place a cover on the pot and cook, stirring occasionally, until turkey is cooked through and no longer pink, about 5 minutes.
- Season turkey with chili powder, oregano, paprika, cumin, seasoned salt, red pepper flakes, ground black pepper, and cocoa powder. Add diced tomatoes with green chile peppers, red chili beans, black beans, tomato paste, light beer, Worcestershire sauce, liquid smoke, and tomato juice to the pot. Loosely cover the pot and cook mixture at a simmer, stirring occasionally, until thickened but still moist, for about 1 hour. Stir reserved liquid from diced tomatoes with green chilies into chili as it simmers to keep it from becoming too dry.
- Stir hot pepper sauce through the chili. Reduce heat to low and cook another 10 minutes. Allow to cool slightly before serving.

THICK GROUND TURKEY CHILI
This is a flavorful thick chili made with ground turkey and slow simmered vegetables. A perfect meal on a cold Northwest day while watching Sunday football.

Steps:
- Chop all vegetables into small pieces.
- In a large soup style pot saute all the vegetables in olive oil until soft. 15 minutes.
- Add ground turkey to sauteed vegetable and stir until well cooked.
- Stir in all seasonings; cumin, oregano, paprika, chili powder, black pepper, celery salt, kosher salt. Mix well to incorporate all the seasonings.
- Dump in tomato paste, Rotel tomatoes, and pinto beans.
- Mix all ingredients well.
- Reduce your heat to low and let simmer for 1 hour to meld all the flavors and thicken the chili. Stir often. Be sure to taste the mixture to see if it needs more salt, pepper or chili powder to your liking.
- Put chili into large bowls and garnish with shredded cheddar cheese (Tillamook), finely chopped jalapeno and fresh onion.
- Pair the chili with a local pale ale beer.
