My first Wisconsin winter was so cold, all I wanted to eat was homemade chicken noodle soup. Of all the chicken noodle soup recipes out there, this type of soup is my favorite and is in heavy rotation from November to April. It has many incredibly devoted fans.-Gina Nistico, Denver, Colorado

2-1/2 pounds bone-in chicken thighs
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon canola oil
1 large onion, chopped
1 garlic clove, minced
10 cups chicken broth
4 celery ribs, chopped
4 medium carrots, chopped
2 bay leaves
1 teaspoon minced fresh thyme or 1/4 teaspoon dried thyme
3 cups uncooked kluski or other egg noodles (about 8 ounces)
1 tablespoon chopped fresh parsley
1 tablespoon lemon juice
Optional: Additional salt and pepper

Steps:

  • Pat chicken dry with paper towels; sprinkle with salt and pepper. In a 6-qt. stockpot, heat oil over medium-high heat. Add chicken in batches, skin side down; cook until dark golden brown, 3-4 minutes. Remove chicken from pan; remove and discard skin. Discard drippings, reserving 2 tablespoons., Add onion to drippings; cook and stir over medium-high heat until tender, 4-5 minutes. Add garlic; cook 1 minute longer. Add broth, stirring to loosen browned bits from pan. Bring to a boil. Return chicken to pan. Add celery, carrots, bay leaves and thyme. Reduce heat; simmer, covered, until chicken is tender, 25-30 minutes., Transfer chicken to a plate. Remove soup from heat. Add noodles; let stand, covered, until noodles are tender, 20-22 minutes., Meanwhile, when chicken is cool enough to handle, remove meat from bones; discard bones. Shred meat into bite-sized pieces. Return meat to stockpot. Stir in parsley and lemon juice. If desired, adjust seasoning with additional salt and pepper. Discard bay leaves.

This is my beloved Grandmother's recipe. I have made noodles from scratch mixing, rolling, and cutting by hand. Today I use a dough mixer and pasta cutter to save time.

1 gallon chicken stock
4 bone-in chicken breast halves
3 cups all-purpose flour
¼ teaspoon salt
3 eggs
2 tablespoons water, or as needed
½ teaspoon ground black pepper
1 pinch salt

Steps:

  • Bring chicken stock to a boil; cook chicken breasts at a boil until no longer pink in the center, 15 to 20 minutes. Remove chicken, cool, and cut meat from bone; keep chicken stock at a low simmer.
  • Mix flour and 1/4 teaspoon salt together using the dough hook attachment in the bowl of a stand mixer on Low; add eggs and water, 1 tablespoon at time, until dough holds together.
  • Split dough in half. Roll 1 dough half on a lightly floured surface to 1/8-inch thickness. Cut dough into noodles 2 to 3-inches long x 1/4-inch wide using a sharp knife dipped in flour or a fettuccine pasta cutter. Repeat with other dough half.
  • Return chicken to the simmering stock; add noodles. Season stock with black pepper and 1 pinch salt. Cook soup until noodles are cooked through, 15 to 25 minutes.

2 cans (10-3/4 ounces each) condensed cream of potato soup, undiluted
1-1/2 cups chicken broth
1 teaspoon dill weed
1 cup frozen peas
1/2 cup half-and-half cream

  • In a large skillet over medium-high heat, brown chicken in oil. 2 tablespoons olive oil
4 large carrots (sliced)
4 celery stalks (sliced)
1 small onion (diced)
3 garlic cloves (minced)
2 Tablespoons fresh thyme (stems removed)
salt and pepper
10 cups chicken broth
12 ounce wide egg noodles
2 cups shredded chicken
2 Tablespoons fresh parsley

Steps:

  • In a large pot over medium-high heat, add the olive oil, carrots, celery, and onion. Sauté until tender 4-5 minutes. Add the garlic, fresh thyme, salt, and pepper, and sauté for 1 minute more.
  • Pour in the chicken broth and egg noodles and bring to a boil on high heat. Reduce to a simmer and let the noodles cook until al dente for about 10 minutes.

Hearty Homemade Chicken Noodle Soup image

This is one of the first recipes that I made off the top of my head when I was learning to cook as a newlywed 25 years ago. I've tweaked it a bit since then and now it's a family favorite. I have found that you can buy a ready cooked rotisserie chicken to save time or use leftover chicken. I use a food processor to make chopping the veggies much easier.

16 cups water
1/2 cup onion (diced)
1 cup carrot (chopped or diced)
1/2 cup celery (diced)
1 garlic clove (minced or 1 tsp garlic powder)
1/3 cup chicken stock paste (or 15 bouillon cubes)
2 tablespoons parsley
1 whole chicken (cooked, de-boned and shredded)
1 (12 ounce) bag egg noodles

Steps:

  • In large stew pot place 8 ingredients.
  • Bring to a boil and cook until vegetables are tender.
  • While soup is still boiling, add egg noodles and boil until noodles are tender.
  • ENJOY!

1/4 tsp each: garlic powder, onion powder
1/8 tsp salt, celery salt, turmeric powder
1 tsp chicken base
32 oz chicken broth
1 cup cooked chicken, diced small
1 cup Kluski Noodles (up to 1 1/2 cups) (Can use other types of noodles, just adjust the cooking time for your noodle type)

Steps:

  • In a large pot, over medium/medium-low heat, saute the carrots in the oil for 3-4 minutes. Stir in the garlic powder, onion powder, salt, celery salt, and turmeric powder. Pour in the chicken broth and add the chicken base, stir to combine.
  • Turn the heat up to medium/medium-high, and bring the pot to a simmer. Add the noodles and chicken, cook for 12-15 minutes, until the noodles are cooked thru.Taste for additional seasoning.

5 cups chicken broth, divided
5 tablespoons butter
1/3 cup flour
2/3 cup noodles (ring shaped, or small bow-ties or stars if rings not available)
2/3 cup cooked chicken, diced
salt, to taste (optional)
pepper, to taste (optional)

Steps:

  • In a large saucepan, heat 4 cups of the chicken broth to boiling.
  • In a small saucepan over low heat, melt butter, then stir in flour well to blend but do not brown.
  • Add this mixture to the boiling broth and cook over medium heat until it thickens.
  • In another pan, bring the remaining broth to a boil, add noodles and cook just until tender but not soft (package directions should give you an idea how long).
  • Do not drain noodles; add chicken, noodles and liquid to the thickened broth, and season to taste with salt and pepper if desired.
  • Serve immediately with crackers, if desired.

  • Place a large pan over medium heat and add 2 Tbsp olive oil. Add chopped onion and sauté until softened (5 min), then increase heat to med/high and add grated carrots, chopped celery and sauté 5-7 min, stirring often until soft and golden then transfer to soup pot.
  • Remove chicken thighs from the pot and let rest until cool enough to handle, then use forks or hands to shred chicken, discarding any bones and fat (which should come off easily). Return shredded chicken to the pot (by the time it's cooled and shredded, this is usually after step 4).
