EASY STIR-FRIED THAI GARLIC SHRIMP



Easy Stir-Fried Thai Garlic Shrimp image

This recipe for stir-fried shrimp in a tangy Thai garlic sauce takes just 15 minutes. It's a perfect weeknight dish and makes a great party appetizer.

For the Marinade:
1 1/2-2 tablespoons oyster sauce (Thai oyster sauce or Lee Kum Kee)
1 tablespoon soy sauce
1 tablespoon fish sauce
1 tablespoon brown sugar
4 to 6 cloves garlic (minced, to taste)
2 tablespoons lime juice
1 red chili pepper (minced, or 1/3 teaspoon dried crushed chili; to taste)
For the Stir-Fry:
12 to 15 medium to large shrimp (or prawns ; butterflied, shells can be removed or left on)
2 to 3 tablespoons oil (for stir-frying)
Garnish: 1 lemon (cut into wedges)
Garnish: 1/2 cup coriander (fresh)

Steps:

  • Gather the ingredients.
  • In a bowl, combine oyster sauce, soy sauce, fish sauce, brown sugar, garlic, lime juice, and chili pepper. Stir until the sugar has dissolved.
  • Place shrimp in the marinade and stir well to coat.
  • In a wok or frying pan, heat the oil over medium-high heat. Once hot, add the shrimp along with the marinade.
  • Stir-fry for 2 to 3 minutes or until the shrimp are plump and pink. They will also be lightly browned from the sauce. Avoid overcooking or the shrimp will turn rubbery.
  • Test the sauce for taste and adjust as needed to achieve a salty-sweet balance. Add more sugar if it's too sour. If it's too salty or sweet, add more lime juice.
  • Top the shrimp with coriander and add some lemon slices on the side. Enjoy!

You won't believe how easy and good it is. Try this and you may never be able to eat a shrimp soup in a Thai restaurant again. This is a blend of two recipes from a really good Thai cookbook, adapted to use easier-to-find ingredients (as recommended in the book, ginger instead of galangal, lime juice instead of lime leaves) and simplified a little. You can make it also with thinly sliced chicken breast instead of shrimp if you add the chicken about the time you add mushrooms and tomatoes and cook everything for a bit longer.

1 stalk lemongrass
6 slices gingerroot
1 lime
2 small red chilies
4 cups water
4 tablespoons fish sauce
1 teaspoon chili paste with garlic
6 ounces tomatoes, cut into chunks
4 ounces mushrooms, sliced (I use white or baby bella)
25 small cooked shrimp
2 tablespoons cilantro

Steps:

  • Cut off the dry end and a few top leaves of the lemongrass stem.
  • Bruise the stem with the handle of a knife and cut into 1-inch long pieces.
  • Reserve.
  • Bruise the chilies, cut them in half, scoop out and discard the seeds.
  • Reserve the chilies.
  • Bring the water to boil.
  • Add lemongrass and ginger, and squeeze out half the lime into the water.
  • Boil 2-3 minutes.
  • Add fish sauce and chili-garlic paste.
  • Cook for another minute.
  • Add tomatoes and mushrooms.
  • Cook for 2-3 minutes (or longer, until it boils and the tomatoes start to fall apart).
  • Squeeze the other half of the lime into the soup.
  • Take off the heat.
  • Add the chilies and let stand a few seconds, then add the shrimp.
  • Garnish with cilantro and serve immediately.
  • Leave lemongrass, ginger and chilies in the soup and either try to pour the soup without them, or, better, pour the soup with chunks of lemongrass and ginger in it and warn your guests not to eat these.
  • They do add flavour when left in the soup while you eat it.

7 cups water

3 fresh green chilies, thinly sliced (amount optional)
4 kaffir lime leaves, scored (if using dry, soak in warm water until pliable)
1 lb medium shrimp, cleaned and deveined
6 tablespoons fish sauce
2 tablespoons fresh lime juice
1/4 cup chopped fresh cilantro

Steps:

  • Heat oil in a pot with garlic until aromatic; add onion and cook, stirring, until onion is light brown.
  • Add the water and bring to a boil.
  • Add black pepper, lemongrass, galangal, chiles, and lime leaves; return to a boil and boil for 2 minutes.
  • Place shrimp in the pot along with the fish sauce and lime juice.
  • Simmer for 3 more minutes, or until shrimp are firm and cooked.
  • Garnish soup with fresh cilantro before serving.

2 tbsp unsalted butter
1 tbsp chopped garlic (approximately 3 to 4 cloves garlic)
5 tbsp chopped lemongrass (approximately 1 large lemongrass)
6 tbsp chopped shallot (approximately 1 small shallot)
pinch of salt
2 tbsp fish sauce
2 tbsp honey
1 to 6 thai chili, chopped
1/4 to 1/2 tsp black pepper
2 lb U/15 head removed & deveined shrimp

Steps:

  • Heat a large skillet (possibly 12" skillet) over medium high heat; add butter, garlic, lemongrass, shallot and pinch of salt. Sauté for 5 to 6 minutes, stir occasionally.
  • Meanwhile, mix fish sauce, honey, thai chili and black pepper in a small mixing bowl to make sauce. Set aside.
  • Add the shrimp into the skillet, stir well so the shrimp will be coated evenly with the butter and aromatics. Spread the shrimp evenly as possible and cook for 2 minutes or until it's half way cooked through.
  • Pour the sauce mixture and stir. Cook for additional 2 minutes or until shrimps are fully cooked. (adjust cooking time if you are using smaller size shrimp than U/15.) Remove from heat and serve immediately. Enjoy with my Garlic Noodle or Garlic Rice!

1 pound medium shrimp, shelled and deveined, butterflied, shells reserved
1/4 cup lime juice
4 teaspoons Thai fish sauce
1/4 cup minced fresh green chilies
2 tablespoons very finely-minced lemongrass, from tender inner part of stalk, plus 2 tablespoons thinly-sliced
2 teaspoons vegetable oil
4 cups chicken stock
2 tablespoons crumbled dried Kefir lime leaves (available in Asian markets or specialty food stores)
2 tablespoons finely-minced fresh coriander roots and stems
2 thick slices galanga root (available in Asian markets or specialty food stores)
2 medium shallots, coarsely chopped
2 teaspoons dried tamarind pulp (available in Asian markets or specialty food stores)
1/2 cup straw mushrooms, rinsed
2 heaping tablespoons fresh coriander leaves
2 teaspoons minced scallion

Steps:

  • In a bowl combine shrimp, 2 tablespoons of the lime juice, 2 teaspoons of the fish sauce, 1 tablespoon of the green chilies, and 1 teaspoon of the finely-minced lemongrass. Mix well and let marinate while you prepare the soup.
  • In a large saucepan heat oil over high heat. Add shrimp shells and cook, stirring occasionally, 5 minutes, or until shells have begun to brown. Add chicken stock, 2 tablespoons of the green chilies, the 2 tablespoons sliced lemongrass, kefir lime leaves, coriander roots and stems, galanga root, shallots and tamarind pulp; bring to a boil. Reduce heat to simmering, cover and cook 30 minutes.
  • Into a clean saucepan strain soup through a fine sieve, pressing on solids to extract as much liquid as possible; discard solids. Heat over medium-high heat and add remaining 2 tablespoons lime juice. remaining 2 teaspoons fish sauce, remaining 1 tablespoon green chilies, remaining teaspoon minced lemongrass, straw mushrooms, coriander leaves, and scallions; stir well. To serve, add shrimp in their marinade and cook 30 seconds or until shrimp turn pink and are cooked through.

1/4 cup julianne sliced red pepper
1/4 cup julianne sliced jalipino pepper

1/4 cup fresh pea pods
1/4 cup FRESH mint leaves
1/4 cup FRESH chopped cilantro
Sauce:
1 TBL chopped lemongrass(try the prechopped in a tube from produce section of a large grocery)
2 TBL sugar or Splenda
3 TBL fish sauce
6 TBL lime juice
2 TBL red curry paste
Garnish;
2 c. shredded romaine lettuce
1/2 med. cucumber sliced
1 med. ripe tomato cut in wedges and drained on papertowel

Steps:

  • Heat wok or large heavy skillet until very hot but not smoking. Add oil,heat 5-10 seconds Add shrimp, stir fry 3 min or until just cooked through(do not overcook, shrimp color will turn whiter and texture will change firmer when cooked through, cooking too long will make shrimp tough) Add peppers, onions and pea pods. Stir fry 2 min or until hot. Add mint, cilantro and dressing. Toss all ingredients in hot pan. Serve on large platter garnished with shredded lettuce, sliced cucumber and tomato wedges.
