2 lbs big fat fresh raw shrimp, peeled and deveined
1 large habanero pepper, stem removed,chopped
1/4 cup unsalted butter
1 1/2 tablespoons onions, chopped
1 tablespoon cayenne pepper
2 teaspoons reduced-sodium Worcestershire sauce
1 teaspoon lemon juice
1/2 teaspoon pepper
1/2 teaspoon paprika
1/2 teaspoon ground cumin
1 tablespoon brown sugar
bamboo skewer
2 cloves garlic, more to taste

Steps:

  • Wash the shrimp, drain and place on skewers 4-6 per skewer.
  • Sauté onions and garlic in butter, remove for heat and place in blender.
  • Add cayenne, Worcestershire sauce, lemon juice pepper, cumin, brown sugar and the habaneros with seeds; blend till smooth.
  • Brush onto the shrimp skewers and let marinate for 30-60 minutes in fridge.
  • Start grill and cook till opaque and slightly crispy.
  • Dust with paprika and serve.

1 pound shrimp
20 wooden skewers, soaked in water 30 minutes
1/2 cup soy sauce, plus 2 tablespoons
1/4 cup sake
5 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
2 shallots, finely diced
2 cloves garlic, minced
1 (28-ounce) can whole, peeled tomatoes, drained and hand-crushed
1/4 cup hoisin sauce
2 tablespoons rice vinegar
1 tablespoon red chili paste (recommended: Srirachi Hot Chili Sauce)
1/4 cup brown sugar
1/2 teaspoon chili powder
2 avocados, peeled and sliced, for garnish
2 scallions, sliced thin, for garnish
Lime wedges, for garnish

Steps:

  • Thread shrimp onto skewers and place in a shallow dish. Pour 1/2 cup soy sauce, sake, and 2 tablespoons oil over the shrimp and season them with salt and pepper. Set aside and let them marinate while you make the barbecue sauce.
  • Heat 3 tablespoons oil in a large saute pan over medium-high heat. Add shallots and garlic and cook for 1 minute. Stir in tomatoes and season with salt and pepper. Add 2 tablespoons soy sauce, hoisin sauce, vinegar, chili paste, sugar, and chili powder. Cook until the mixture has thickened, about 10 to 15 minutes. Use an immersion blender to break the tomatoes up into a chunky sauce.
  • Heat a grill or a grill pan and cook the shrimp about 3 minutes per side. To serve, spread some barbecue sauce onto a large platter and place the grilled shrimp skewers on top of that. Garnish with avocado, scallions, and lime wedges. Serve extra barbecue sauce on the side.

1/2 cup extra-virgin olive oil
8 tablespoons unsalted butter
12 cloves garlic, peeled and smashed (about 1 head)
2 bay leaves
4 sprigs thyme
1 pound large shrimp, shell on and deveined
1 teaspoon Worcestershire sauce
1 tablespoon kosher salt
1 tablespoon sweet paprika
1/2 to 3/4 teaspoon cayenne pepper
2 tablespoons dry sherry
3 lemons, cut into wedges
Crusty bread, optional

Steps:

  • 1. Preheat oven to 350 degrees F.
  • 2. Heat olive oil, butter, garlic, bay leaves, and thyme in a large ovenproof skillet over medium heat until butter melts and garlic and herbs are fragrant, about 5 minutes.
  • 3. Toss shrimp, Worcestershire sauce, salt, paprika, and cayenne in a bowl. Add to skillet along with sherry and transfer to oven. Bake until shrimp curl and are pink, about 10 minutes. Transfer to a serving dish and serve with lemon wedges and bread.

This is a great summer time recipe from my sister-in-law. You can bake the shrimp either peeled or unpeeled. The recipe calls for unpeeled, but I like to have the shrimp peeled when I serve them.

1/2 cup Italian salad dressing
2 tablespoons Worcestershire sauce
2 tablespoons barbecue sauce, of your choice (we like sweet baby rays)
1 tablespoon lemon pepper seasoning
4 crushed garlic cloves
2 bay leaves
2 lemons, sliced
1 onion, sliced
3 lbs raw shrimp

Steps:

  • Preheat oven to 400.
  • Mix first 7 ingredients, set aside.
  • Put sliced onion and lemons in bottom of baking pan.
  • Place shrimp in pan.
  • Pour sauce mix over shrimp.
  • Bake 20 minutes or till shrimp is done.

1 cup canola oil
¾ teaspoon hot pepper sauce (such as Tabasco®)
2 cloves garlic, crushed
¼ cup tomato-based chili sauce
1 lemon, juiced
1 teaspoon dried oregano
2 pounds peeled and deveined medium shrimp
16 skewers

Steps:

  • Whisk together the canola oil, hot pepper sauce, garlic, chili sauce, lemon juice, and oregano in a large glass or ceramic bowl. Add the shrimp and toss to evenly coat. Cover the bowl with plastic wrap, and marinate in the refrigerator 1 hour.
  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
  • Remove the shrimp from the marinade, and shake off excess. Discard the remaining marinade. Thread about 4 shrimp onto each skewer.
  • Cook on the preheated grill until pink on the outside and no longer translucent in the center, about 3 minutes per side.

2 green chilies or 2 jalapenos, chopped
