RASPBERRY BELLINI CHAMPAGNE COCKTAIL



Raspberry Bellini Champagne Cocktail image

300 g frozen raspberries
250 g caster sugar
250 g warm tap water
1 tsp rose water (*optional)
140 ml Raspberry simple syrup
750 ml Prosecco or Sparkling wine (Brut)

Steps:

  • Place the raspberry, water and sugar in TM bowl. Heat 10 min/Varoma/Speed 1 (MC Out) Use the internal basket on top of the lid to prevent splatters.
  • Scrape down the bowl. Add the MC to the lid. Blend 1 minute starting and speed 2 and increasing to 9 over the minute period.
  • Place muslin over a strainer and strain the syrup into a jar to remove all the raspberry seeds.
  • Discard the seeds. Add 1 teaspoon of rose water to the raspberry syrup. Shake to combine.
  • Refrigerate the syrup until cold.

A spiced, no-sugar syrup bathes chunks of mixed fruit; you can substitute or add other seasonal varieties as desired.

2 cups apple juice
1 tablespoon lemon juice
1/2 teaspoon grated orange zest or 1/2 teaspoon lemon zest
2 (3 inch) cinnamon sticks
2 Red Delicious apples, cored and chopped
1 1/2 cups chopped fresh pineapple
1 orange, peeled and sectioned
1/2 cup seedless grapes

Steps:

  • In medium saucepan, combine apple juice, lemon juice, orange or lemon zest, and cinnamon sticks. Heat to boil and simmer, uncovered 10 minutes.
  • Cool to room temperature.
  • In large serving bowl, combine apples, pineapple, orange, and grapes.
  • Remove cinnamon sticks from apple juice mixture and pour mixture over fruit.
  • Chill before serving.

50 -100 g sugar
300 g strawberries, any fruit you like will do
1 lemon, peeled and pithed
1 orange, peeled and pithed
600 -700 g ice cubes
1 (750 ml) bottle sparkling white wine, chilled

Steps:

  • Place sugar into bowl and mill for 10 seconds/speed 9.
  • Add the fruit and ice and SLOWLY turn the dial up to speed 10. Use the spatula to incorporate all of the fruit and continue to process for about 40 seconds or until completely combined.
  • Turn the dial to speed 8 and SLOWLY pour in the wine (or lemonade). Use the spatula to allow the drink to blend uniformly without spilling over. Blend for 10-15 seconds until combined.
  • Serve immediately.
