1/2 cup butter
1 large green bell pepper, chopped
1 large onion, chopped
3 cups chicken, cooked and chopped
2 (10 ounce) cans diced tomatoes with green chilies, drained
2 (4 1/2 ounce) jars mushrooms, sliced and drained
1 (15 ounce) can English peas, drained
1 (15 ounce) can chicken broth
1 (10 3/4 ounce) can cream of mushroom soup
1 (3 7/8 ounce) black olives, sliced and drained
1 teaspoon salt
1 teaspoon ground black pepper
2 (8 ounce) packages sharp cheddar cheese, shredded
2 (7 ounce) packages vermicelli (broken into 2-inch pieces, cooked and drained)

Steps:

  • Preheat oven to 350 degrees.
  • Lightly grease a 4-quart baking dish.
  • In large Dutch oven, melt butter over medium heat.
  • Add pepper and onion, and cook for 5 minutes, or until tender.
  • Stir in chicken, tomatoes, mushrooms, peas, broth, soup, olives, salt and pepper until combined.
  • Add cheese, stirring until melted.
  • Add vermicelli, tossing gently to combine.
  • Spoon into prepared dish; bake for 30 minutes or until hot and bubbly.

8-10 medium chicken breasts, with skin
1 large onion, chopped fine
1 large bell pepper, chopped fine
1 can(s) rotel tomatoes (type depends on how spicy you like it)
2 lb velveeta cheese, cubed
1 stick margarine
2 pkg vermicelli (12 oz packages)

Steps:

  • 1. Boil chicken in a large pot (5 to 6 quart). Remove chicken and debone. Using the same pot, cook the spaghetti in the chicken broth (if you have a lot of broth, you can pour some off before cooking the chicken and reserve for later use if needed). Once the spaghetti has cooked, turn heat to low. Do not drain the noodles. The broth is the base for your spaghetti.
  • 2. Cook the onion and bell pepper in the margarine until tender; add to the spaghetti and broth, then add the Rotel and Velveeta. Cook over low heat until cheese melts, stirring as needed to prevent sticking. Add the chicken. If the spaghetti mixture appears too thick, add some of the reserved broth.
  • 3. Pour the spaghetti mixture into a large baking dish, at least a 9x13 (may have extra, as this makes a lot). Bake at 350 until the spaghetti is bubbly around the edges.
  • 4. Makes a large amount of spaghetti. Excess or leftovers can be frozen for later.

8 boneless skinless chicken breast halves
salt and pepper
1 (12 ounce) package thin spaghetti
1 onion, chopped
1 green bell pepper, chopped
2 tablespoons butter or 2 tablespoons margarine
3 (10 1/2 ounce) cans cream of chicken soup
2 (4 1/2 ounce) jars sliced mushrooms
1/2 lb shredded sharp cheddar cheese
1/2 lb shredded Velveeta cheese

Steps:

  • In a large Dutch oven, fill 1/2 full with water; add salt and pepper if desired; add chicken breast halves.
  • Bring to a boil; cover and reduce heat; simmer 1 hour or until chicken breasts are done.
  • Remove chicken breasts, reserving broth, and allow chicken to cool; chop chicken meat into bite-size pieces and set aside.
  • Return chicken broth to a boil; add spaghetti noodles and cook until desired doneness; drain and set aside.
  • Saute onion and green pepper in butter until tender.
  • Combine onion mixture, cream of chicken soup, mushrooms, and cheeses; mix well.
  • Add spaghetti and chopped chicken; mix well.
  • Pour into a lightly greased 13x9 inch baking dish.
  • Bake at 375 degrees for 45 minutes.
