HEALTHY GRANOLA



Healthy Granola image

This delicious healthy granola recipe is naturally sweetened with maple syrup (or honey). It's made with oats, coconut oil and your favorite nuts and fruit. Make it your own! Recipe yields about 8 cups granola, enough for about 16 half-cup servings.

4 cups old-fashioned rolled oats (use certified gluten-free oats for gluten-free granola)
1 1/2 cup raw nuts and/or seeds (I used 1 cup pecans and 1/2 cup pepitas)
1 teaspoon fine-grain sea salt (if you're using standard table salt, scale back to 3/4 teaspoon)
1/2 teaspoon ground cinnamon
1/2 cup melted coconut oil or olive oil
1/2 cup maple syrup or honey
1 teaspoon vanilla extract
2/3 cup dried fruit, chopped if large (I used dried cranberries)
Totally optional additional mix-ins: 1/2 cup chocolate chips or coconut flakes*

Steps:

  • Preheat oven to 350 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper.
  • In a large mixing bowl, combine the oats, nuts and/or seeds, salt and cinnamon. Stir to blend.
  • Pour in the oil, maple syrup and/or honey and vanilla. Mix well, until every oat and nut is lightly coated. Pour the granola onto your prepared pan and use a large spoon to spread it in an even layer.
  • Bake until lightly golden, about 21 to 24 minutes, stirring halfway (for extra-clumpy granola, press the stirred granola down with your spatula to create a more even layer). The granola will further crisp up as it cools.
  • Let the granola cool completely, undisturbed (at least 45 minutes). Top with the dried fruit (and optional chocolate chips, if using). Break the granola into pieces with your hands if you want to retain big chunks, or stir it around with a spoon if you don't want extra-clumpy granola.
  • Store the granola in an airtight container at room temperature for 1 to 2 weeks, or in a sealed freezer bag in the freezer for up to 3 months. The dried fruit can freeze solid, so let it warm to room temperature for 5 to 10 minutes before serving.

For our best granola, we wanted a crunchy, clustery version that wasn't too sweet. We created this simple but universally likeable recipe that's flavored with vanilla and a blend of brown sugar and maple syrup. We love its pure flavors and balance of salty and sweet. It is the perfect canvas for personalization, so we've included some ideas for mix-ins at the end of the recipe.

Nonstick cooking spray
3 cups regular rolled oats (not quick-cooking)
1 cup slivered almonds
1 cup large unsweetened coconut flakes
1 tablespoon kosher salt
1/2 cup packed light brown sugar
1/3 cup pure maple syrup
1/3 cup vegetable oil
2 teaspoons pure vanilla extract

Steps:

  • Preheat the oven to 300 degrees F. Lightly spray a rimmed baking sheet with nonstick cooking spray.
  • Combine the oats, almonds, coconut chips and salt in a large bowl and stir to combine.
  • Combine the brown sugar, syrup and oil in a medium saucepan over medium-high heat and cook, stirring often, until the sugar is dissolved, about 2 minutes. Remove from the heat and stir in the vanilla extract.
  • Pour the sugar mixture over the oats and stir until well combined, then spread the granola mixture in an even layer on the prepared baking sheet. Bake, stirring occasionally (see Cook's Note) until toasted and golden brown, 60 to 70 minutes. Remove to a wire rack to cool completely and store in an airtight container for up to 1 week.

1 cup sunflower seeds

¼ cup maple syrup
¾ cup honey
1 cup vegetable oil
1 tablespoon ground cinnamon
1 tablespoon vanilla extract
2 cups raisins or sweetened dried cranberries

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Line two large baking sheets with parchment or aluminum foil.
  • Combine the oats, wheat germ, oat bran, sunflower seeds, almonds, pecans, and walnuts in a large bowl. Stir together the salt, brown sugar, maple syrup, honey, oil, cinnamon, and vanilla in a saucepan. Bring to a boil over medium heat, then pour over the dry ingredients, and stir to coat. Spread the mixture out evenly on the baking sheets.
  • Bake in the preheated oven until crispy and toasted, about 20 minutes. Stir once halfway through. Cool, then stir in the raisins or cranberries before storing in an airtight container.

1/2 cup maple syrup
1/2 cup coconut oil
1 tsp vanilla extract
1 tsp Ceylon cinnamon
1 tsp sea salt
4 cups rolled oats
3/4 cup raw pecans, roughly chopped
3/4 cup raw cashews, roughly chopped
3/4 cup raw almonds, roughly chopped
3/4 cup raw pumpkin seeds (pepitas)
3/4 cup dried apricots, roughly chopped (Turkish are best)
3/4 cup dried goji berries, roughly chopped
3/4 cup golden raisins, roughly chopped
3/4 cup dried cranberries, roughly chopped
1 cup raw coconut flakes

Steps:

  • Preheat the oven to 275°F (135°C) and line two baking sheets with baking paper.
  • Heat a saucepan over low heat and add in the maple syrup, coconut oil, vanilla extract, cinnamon, and salt. Stir to combine. Once coconut oil has melted, turn off the stove, and allow the mixture to cool off.
  • In a bowl, combine the oats, nuts, seeds, and the liquid mixture. Toss well. Split the mixture between the two baking sheets, and spread it out evenly.
  • Bake for 15 minutes. Quickly remove the sheets from the oven, flip/toss the granola, and bake for a further 8 minutes. Quickly remove again and sprinkle the coconut flakes on top, and bake for 7 more minutes.
  • Remove from the oven, and allow the granola to cool completely. Mix with the dried fruit. Enjoy!

This granola recipe is the only one you'll ever need!

1/2 cup neutral oil or coconut oil
1/2 cup maple syrup
4 cups large flake oats
2 cups nuts and seeds
1.5 cups dried fruit
pinch salt
generous sprinkle of cinnamon

Steps:

  • Preheat oven to 325F.
  • In a small bowl, whisk together the oil and maple syrup.
  • In a large bowl, stir together the oats and nuts, salt, and cinnamon (leave the dried fruit out for now).
  • Pour the oil and maple syrup mixture over the dry ingredients and toss to thoroughly coat.
  • Spread granola onto a parchment-lined baking sheet. Spreading it thinly will result in a toastier taste, spreading it thickly will result in bigger clumps.
  • Bake at 325F for 20 mins or until nuts smell toasted.
  • Remove from oven and spread the dried fruit on top of granola and leave to cool.
  • Break into pieces.
  • Keep in an airtight container (I use a large Ziploc freezer bag).

1 cup cashews
3/4 cup shredded sweet coconut
1/4 cup plus 2 tablespoons dark brown sugar

1/4 cup vegetable oil
3/4 teaspoon salt
1 cup raisins

Steps:

  • Preheat oven to 250 degrees F.
  • In a large bowl, combine the oats, nuts, coconut, and brown sugar.
  • In a separate bowl, combine maple syrup, oil, and salt. Combine both mixtures and pour onto 2 sheet pans. Cook for 1 hour and 15 minutes, stirring every 15 minutes to achieve an even color.
  • Remove from oven and transfer into a large bowl. Add raisins and mix until evenly distributed.

125ml maple syrup
2 tbsp honey

50g sunflower seed

100g flaked almond
100g dried berries (find them in the baking aisle)
50g coconut flakes or desiccated coconut

Steps:

  • Heat oven to 150C/fan 130C/gas 2. Mix the oil, maple syrup, honey and vanilla in a large bowl. Tip in all the remaining ingredients, except the dried fruit and coconut, and mix well.
  • Tip the granola onto two baking sheets and spread evenly. Bake for 15 mins, then mix in the coconut and dried fruit, and bake for 10-15 mins more. Remove and scrape onto a flat tray to cool. Serve with cold milk or yogurt. The granola can be stored in an airtight container for up to a month.
