THE YUMMIEST ARRABIATA SAUCE
Robust, spicy and so delicious, this arrabiata sauce is easy to make, and unforgettably delicious. Slow cooked to perfection, serve with textured pasta for best results.

Steps:
- Cut the tops off 4 garlic cloves, leave the skin on. Drizzle some olive oil onto the tomatoes, onions and garlic.
- Roast at 450 F until tender. Peel the garlic cloves after they're cool.
- Once cool, add everything to a blender. Blend until chunky, but not very smooth / pureed.
- In a hot pan, add 1 tsp butter, and chop the remaining garlic. Stir the butter until it begins to brown. Add in the garlic and stir until the butter is browned. Be careful that it doesn't burn.
- Add in the blended tomato sauce, chili flakes and pepper. Bring to a boil. Then, lower your flame and let the sauce simmer for 20 minutes. Stir as needed.
- Then, toss in the crushed black olives. Stir and continue to simmer for another 15 minutes.
- Boil your pasta (in water, olive oil and salt) until al dente, and save 3/4 cup of the pasta water before draining.
- Stir in the pasta water, and bring to a boil. Then, simmer for another few minutes. Add in the pasta, basil, and salt (to taste), mix well and serve hot.
- Top off with more chili flakes as needed.

Steps:
- Heat oil in a large skillet or saucepan over medium heat. Saute onion and garlic in oil for 5 minutes.
- Stir in wine, sugar, basil, red pepper, tomato paste, lemon juice, Italian seasoning, black pepper and tomatoes; bring to a boil. Reduce heat to medium, and simmer uncovered about 15 minutes.
- Stir in parsley. Ladle over the hot cooked pasta of your choice.

Steps:
- Pour the oil into a saucepan and fry the garlic over a medium heat for 1-2 mins until fragrant, but not browned. Add the chilli, fry for another minute, then add the tomatoes along with 1 tsp salt and ½ tsp sugar. Stir well to combine the ingredients and simmer gently for 20 mins, stirring regularly. The sauce will thicken slowly as it cooks.
- Taste and adjust the seasoning if needed. Serve stirred through pasta, or blend it first to create a smoother sauce if you prefer. Will keep chilled for up to five days.

- Heat the olive oil over medium-high heat and add the chopped onions. Sauté five-eight minutes until soft but not brown, stirring often to prevent sticking.
- Add the garlic and chili flakes and cook for one-two minutes, until the raw garlic smell has gone.
