WORLD'S BEST BRAISED GREEN CABBAGE
My d.h. HATES cabbage, but I just had to try this. It lives up to it's title! Luscious! AND healthy. He even agrees. Yee ha! It originates, I believe, from Molly Stevens' "All About Braising..." by way of the Atlanta Journal Constitution. There is nothing to it and after you make it once you don't need the recipe.

Steps:
- Heat oven to 325'. Oil a large baking dish (9"x13"). Discard ragged outer leaves from cabbage and cut into 1/8s, removing most of core. Arrange wedges in dish with no- or minimum overlapping.
- Thickly slice onion and cut carrot into 1/4" rounds.
- Scatter onions and carrot over cabbage; drizzle with oil and stock, salt and peppers. Cover tightly with foil and bake till tender, about 2 hours May turn the cabbage after an hour. At this point you can add a bit of water if dish seems too dry.
- When tender, remove foil, raise temp to 400' and roast another 15 minute or so till veggies are beginning to brown. Serve warm or at room temperature.

- Preheat a 6-quart Dutch oven over medium heat. Add avocado oil to the warm pan and heat until it shimmers, about 1 minute. Add sausage pieces, cut-side down, and heat until browned, 1 to 2 minutes. Turn and brown on the other side, about 1 to 2 minutes more. Transfer sausage to a plate and reserve juices in the pan.
- Add carrots, potatoes, and onion to the Dutch oven and stir to coat with pan juices. Add chicken broth and black pepper, stirring to combine. Return browned sausage to the pan on top of the vegetables, and place cabbage wedges on top of kielbasa. Bring broth to a boil, about 5 minutes, then cover the Dutch oven and reduce heat to a simmer. Cook until vegetables are fork tender, about 20 minutes.
- Use a slotted spoon to remove all vegetables and sausage pieces and set aside in a bowl. At this point, cabbage may be cut into bite-sized pieces.
- Place flour in a small bowl and add enough water to make a thin paste, stirring until all lumps dissolve. Whisk liquid in the Dutch oven constantly while gradually adding flour mixture until liquid boils again, about 5 minutes. Return vegetables and sausage to the Dutch oven and adjust seasoning, if necessary. Serve in individual bowls.

- Fry onion and bacon or pork until onion is soft.
- Add the cabbage, fry for 10 minutes until it starts to soften.

- Clean the onions and prepare the meat, which we cut into smaller pieces. Chop the onion finely because, after long cooking, it will almost disappear in the beef stew. Cut the cabbage with a kitchen knife, into thin slices, but it’s no problem if you can’t cut it very thin. Finely chop the thyme and dill.
- In a smaller saucepan, heat about 100 ml of olive oil, in which we will fry the chopped onion, two-three minutes. Add a tablespoon of sweet pepper paste stir and fry until the onion becomes translucent. Add the meat, the sweet paprika powder, stir and simmer for about 15 minutes. Season with sea salt, freshly ground pepper and caraway powder, add about 600 ml of beef stock, and let it simmer for about 45 minutes.
- Take a soup pot, heat 50 ml of olive oil in this and fry the chopped onion. Season with caraway powder and sugar, stirring occasionally. Add sliced cabbage, the first half of the quantity, mix and then the other half of the cabbage. Season with sea salt, add tomato juice, stir and bring to the boil. Add a cup of water, thyme and half of the chopped dill. Boil everything over low heat for about 20 minutes until the cabbage softens a little.
- With the help of a ladle, we remove the beef from the stew and add it to the cabbage stew. Add the other half of chopped dill and simmer for another 15 minutes, until it evaporates from the liquid and we get the desired consistency.
