EASY SPICY CHICKEN CASSEROLE (THE SPICY IS OPTIONAL)
This is a real tasty, very simple, no brainer sort of chicken casserole that everyone I've made it for just LOVES. This recipe makes A LOT so it's perfect for when the whole family gets together, or if you just want leftovers for work the next day. It can be prepared hours in advance and left to cook for later leaving the cook free to entertain.

Steps:
- Cut chicken in 1 ½ inch cubes (this will help it to cook faster and get the seasonings throughout the whole piece of chicken).
- Boil chicken in a big covered pot of water seasoned with sea salt, garlic powder, oregano, rosemary, cayenne, cumin and bay leaves for approximately 1 hour. (Don't let boil too hard or your broth will evaporate too quickly).
- Have soups, veggies, green chilies and 1 cup shredded cheese pre-mixed in bowl; set aside.
- Once cooked, scoop chicken out of pot, add more water to broth and boil egg noodles in broth until soft.
- Drain pasta and return to pot.
- Add chicken and soup mixture to pot and stir.
- Pour into casserole dish and top with remaining cheese.
- Bake at 400°F for 15 minutes.
- Turn to broil for another 5-6 minutes checking every few minutes to make sure the cheese doesn't burn.
- Sprinkle top with crushed red pepper and cayenne if you want it spicier.
- I usually top half of the casserole with the red pepper and cayenne for those that want it spicier.

THE VERY BEST JACK DANIELS SWEET 'N' SPICY CHICKEN CASSEROLE!...
i first tried the sauce for this recipe when having a meal in tgi friday's restaurant in london's leicester square about a month ago & have been in love with it ever since. i've tried to think of many variations for it as it is adaptable to a lot of things, but the recipe below works very well indeed...see what you think!...

Steps:
- firstly, take a large saucepan, add the olive oil & heat up. once the oil is hot, add the garlic & red chilli & fry off until soft.
- next, add to the pan, the water, pineapple juice, teriyaki sauce, soy sauce & soft brown sugar & stir thoroughly. bring to the boil over a medium to high heat & then reduce heat until the mixture is gently simmering away.
- add the remaining ingredients to the pan & again, stir thoroughly. bring back to the boil & then if need be, transfer the mixture to a blender & blend until smooth.
- when smooth, transfer mixture back to the pan, season to taste if desired & simmer for 35-45 minutes approx' or until the sauce has thickened & become almost syrupy & reduced by about half, making sure not to let the sauce burn or boil over.
- once the sauce has been prepared, fry off your chicken breasts in a frying pan with a little olive oil for approx' 10 minutes to speed up cooking time.
- once done, place in the oven for approx' 15 minutes. when the 15 minutes is up, remove from the oven, drain off any excess fat or oil & then pour over sauce, generously coating all the chicken.
- place back in the oven for a further 20 minutes or until the chicken is thoroughly cooked & voila! -- there you have it, jack daniels chicken casserole!
- plate up & pour remaining sauce into a serving jug. serve with cheesey mashed potatoes & freshly steamed vegetables, delectable! --
- serves about 3 people as a main meal.
- adjust cooking times in accordance with your oven!
- this sauce can also be used as a grill glaze for not just chicken, but pork chops, baby-back ribs, sausages or salmon fillets, etc.

- Pound chicken breasts to even thickness.
- Combine all marinade ingredients. Place chicken breasts in marinade and refrigerate for 2 to 4 hours.
- Slice peppers and onions and sauté in olive oil until al dente. Season with salt and pepper.
- Saute chicken breasts in olive oil over medium heat; cook evenly on both sides to a golden brown color.
- Heat cast iron skillet on burner over medium heat until very hot. Place mashed potatoes on top portion of skillet. Place cheeses on bottom portion of skillet and cover with pepper and onion medley. Add chicken to top of pepper and onion medley, resting on potatoes. Top with chopped parsley. Serve "sizzling.".
JACK DANIELS CHICKEN
This is so yummy and simple! You just have to plan ahead as cook time is 2.5 hours! Note that you can use less than 40 oz of chicken and you can use wings, drumsticks, thighs, etc. I would recommend smaller pieces with bone in and skin on for juiciness and taste though.

- Preheat oven to 350 degrees F. In small skillet cook onion and bell pepper in hot butter until tender; remove from heat and set aside.
- Combine chicken broth, mushroom soup and undrained tomatoes.
- In a 3 quart rectangular baking dish layer half of the soup mixture, half of torn tortillas, half of chicken, half vegetable mixture and half of cheese. Repeat layers.
- Bake uncovered 45 minutes. Let stand 5 to 10 minutes before serving.

Yummy Yummy Yummy - What more can I say. This is delicious, you wont regret going to the trouble of making it. The sauce is thick and creamy, the taste is hard to describe, it is unique and very good. You can just barely taste the Jack Daniels but it would not be the same without it.

Steps:
- Saute chicken breasts in butter (approx 7 minutes per side); wrap in foil and keep warm in 350* oven.
- Saute shallots.
- Add Jack Daniels and light with a match, flame will be high, let flame die down.
- Add broth and tarragon.
- Fast boil, uncovered, until sauce reduces to thick syrupy glaze (this takes longer than you think, approx 25 mins).
- Add lemon juice and cream; simmer until thickened (approx 15 mins).
- Put chicken breasts into sauce to coat.
- Serve with pasta or rice to utilize the yummy sauce.
- (I serve it with Penne Pasta and just toss the pasta in with the chicken and the sauce).
