Peach Cobbler image

This old fashioned Peach Cobbler recipe is not only extremely easy to make from scratch, but it's made with fresh or canned peaches so you can enjoy it all year round!

Provided by Lauren Allen

Categories     Dessert

Time 55m

Number Of Ingredients 10

5 peaches (, peeled, cored and sliced (about 4 cups))
3/4 cup granulated sugar
1/4 teaspoon salt
6 Tablespoons butter
1 cup all-purpose flour
1 cup granulated sugar
2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup milk
ground cinnamon

Steps:

  • Add the sliced peaches, sugar and salt to a saucepan and stir to combine. *(If using canned peaches, skip steps 1 & 2 and follow the directions starting at step 3)
  • Cook on medium heat for just a few minutes, until the sugar is dissolved and helps to bring out juices from the peaches. Remove from heat and set aside.
  • Preheat oven to 350 degrees F. Slice butter into pieces and add to a 9x13 inch baking dish. Place the pan in the oven while it preheats, to allow the butter to melt. Once melted, remove the pan from the oven.
  • In a large bowl mix together the flour, sugar, baking powder, and salt. Stir in the milk, just until combined. Pour the mixture into the pan, over the melted butter and smooth it into an even layer.
  • Spoon the peaches and juice (or canned peaches, if using) over the batter. Sprinkle cinnamon generously over the top.
  • Bake at 350 degrees for about 38-40 minutes. Serve warm, with a scoop of ice cream, if desired.

Time 1h5m

Number Of Ingredients 15

4 lbs fresh peaches ((firm but ripe) peeled, cored and sliced thick)
1 1/2 Tbsp fresh lemon juice
1/2 cup (100g) granulated sugar
1 Tbsp (8g) cornstarch
3/4 tsp ground cinnamon, ( divided)
1/8 tsp ground nutmeg
1 1/2 cups (200g) cake flour or all purpose flour* ((scoop and level to measure))
3/4 cup (150g) granulated sugar
2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
10 Tbsp (143g) unsalted butter, ( cold and diced into small cubes)
1 cup (235ml) buttermilk
1 tsp vanilla extract
2 tsp (8g) granulated sugar, (for sprinkling over top)

Steps:

  • Preheat oven to 375 degrees F.
  • Butter a 13 by 9 by 2 3/4-inch baking dish then pour peaches into baking dish and toss with lemon juice.
  • In a small mixing bowl whisk together 1/2 cup sugar, cornstarch, 1/2 tsp cinnamon, and the nutmeg.
  • Sprinkle sugar mixture evenly over peaches then toss to evenly coat, set aside.
  • If using cake flour sift into a large mixing bowl, if using all-purpose flour just add to bowl (no sifting is necessary). Add 3/4 cup sugar, baking powder, baking soda, and salt and whisk to combined.
  • Cut butter into flour with a fork or pastry cutter until it resembles coarse meal then make a well in center of mixture.
  • Mix vanilla with buttermilk then pour buttermilk mixture into well in flour and fold and stir with a spoon just until combined (don't over-mix, it should be lumpy).
  • Dollop and just lightly spread spoonfuls of the mixture evenly over top of peaches (about 12 dollops across the top).
  • Whisk together remaining 2 tsp sugar with 1/4 tsp cinnamon and sprinkle evenly over top.
  • Bake in preheated oven until topping is golden brown and set and and filling is bubbling, about 40 - 45 minutes.
  • Remove from oven and let cool several minutes before scooping into bowls. Serve with vanilla ice cream.

THE ULTIMATE PEACH COBBLER RECIPE (EASIER THAN YOU THINK!)

The Ultimate Peach Cobbler Recipe (Easier than You Think!) image

This Ultimate Peach Cobbler Recipe has been passed down in my family for years. The simplicity of the ingredients allows the juicy sweet flavor of the peaches to shine. A true staple of summer!

Provided by Brittany Dixon

Time 1h20m

Number Of Ingredients 6

8 large peaches
1/2 cup water
1 cup sugar
1 cup self-rising flour
1 egg
6 Tbsp butter

Steps:

  • Preheat oven to 400 degrees.
  • Wash peaches, then slice and peel them. Layer them into a baking dish (I use this 11 inch roasting dish but a 9×13 Pyrex will work). Pour the 1/2 cup of water over the peaches.
  • In a small mixing bowl, beat the egg, then add the sugar and flour. Mix well until mixture resembles a coarse meal. Spread evenly over the peaches.
  • Melt 6 Tbsp of butter and pour over the peaches and topping as evenly as you can.
  • Bake for 10 minutes (uncovered) and 400 degrees, then lower temperature to 350 degrees and bake for an additional 35-60 minutes until the peaches are bubbling and the top turns golden brown. The time will vary based on the size of your baking dish and depth of your peach layer.
  • Remove from oven and allow to cool for 5-10 minutes. Scoop into bowls and serve with Vanilla Mayfield Ice Cream.

Time 1h15m

Number Of Ingredients 21

PEACH FILLING INGREDIENTS
8 c fresh peaches, sliced and pitted
1/4 c white sugar
1/4 c brown sugar, firmly packed
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp clove, ground
1 tsp lemon juice
2 tsp cornstarch
TOPPING INGREDIENTS
2 c all purpose flour
1/2 c white sugar
1/2 c brown sugar
2 tsp baking powder
1 tsp kosher salt
1 tsp cinnamon
3/4 c butter
1/2 c hot water
CINNAMON SUGAR TOPPING
1/3 c white sugar
2 tsp cinnamon

Steps:

  • 1. To peel peaches: Bring a pot of water to a boil. Use a sharp paring knife to make a small "x" through the skin at the base of each peach. Prepare a large bowl of ice water. Boil them for 40 seconds. If peaches are slightly under-ripe, allow them to remain in the hot water a little longer-up to a full minute-to loosen the peel, it will also improve their flavor. Use a slotted spoon to transfer the boiled peaches to the bowl of ice water. Leave them to cool, about 1 minute. Drain the peaches and pat them dry. Slip the skin off the peaches using your fingers or a paring knife.
  • 2. Preheat oven to 425° degrees. In a small bowl, combine all the dry ingredients for the peach filling. Stir to combine and set aside. In a large bowl, combine the sliced peaches and the lemon juice and then add the dry ingredients. Stir well to coat evenly and pour into a large 9x13 baking dish.
  • 3. Bake the peach mixture in the preheated oven for 10 minutes. While the peaches are baking, combine the dry topping ingredients and whisk to combine. Blend in the chilled butter, using a pastry blender or your fingertips. Stir in the boiling water, just until combined.
  • 4. Remove the peaches from the oven and mix juice over peaches in pan. Drop the topping over peaches in spoonfuls. Sprinkle the cobbler topping with the cinnamon sugar mixture. Bake until the crust is golden and a toothpick inserted into the crust comes out clean, about 30 minutes. Serve warm or at room temperature.
  • 5. Enjoy!
