4 -5 cups all purpose flour
2 tbsp rapid rise, instant yeast
1/3 cup granulated sugar
1 tsp salt
1 1/2 cups warm milk (, 110 degrees)
5 tbsp butter, softened
1 egg (, room temperature)
2 tbsp melted butter

Steps:

  • Combine 3 cups of flour, yeast, sugar, salt, warm milk, butter, and egg in the bowl of a stand mixer.
  • Attach the dough hook and turn the mixer on to the lowest speed and mix until flour is incorporated, scraping down the sides of the bowl as necessary.
  • Increase speed to medium and beat for 2 minutes.
  • Add 1/2 cup flour and blend with the dough hook until incorporated. And another 1/2 cup flour and repeat, mixing at medium speed for another 2 minutes until a ball of dough is formed.
  • Add additional flour as necessary. The dough should be slightly sticky and soft and pulling away from the edge of the bowl.
  • Transfer the dough to a lightly greased bowl and cover with a towel or plastic wrap. Let rise for 30 minutes at room temperature.
  • Remove the towel or plastic wrap and deflate the dough by punching down lightly.
  • Pinch off pieces of the dough and form 24 rolls. You can weigh them to keep the rolls close to the same size. Mine were about 2 ounces each but this will vary depending on how much flour you added.
  • Transfer the rolls to a lightly greased quarter baking sheet or 9 x 13 baking dish. Cover with a towel or plastic wrap and let rise for an additional 30 minutes at room temperature.
  • Preheat oven to 375 degrees. Bake the rolls for 12 to 15 minutes or until golden brown and cooked through. If the rolls are getting too brown, just tent the rolls with foil.
  • Remove rolls and brush hot rolls with the melted butter. Serve immediately or store cooled rolls in a plastic bag for up to 3 days.

2 cups warm milk
2 tablespoons instant dry yeast
1/4 cup white granulated sugar
2 teaspoons salt
6 tablespoons salted butter (softened)
2 large eggs
6 cups all-purpose flour
1 tablespoon melted butter

Steps:

  • In the bowl of a stand mixer, combine warm milk, yeast, sugar, salt, butter, and eggs.
  • Add in 5 1/2 cups of flour. Using a dough hook, turn the mixer on to a low speed. Once the flour starts to incorporate into the dough, increase the speed to a medium range. Slowly add the remaining 1/2 cup of flour until the dough pulls away from the sides of the bowl. The dough mixture should be slightly sticky and soft. Add more or less flour until the dough reaches the desired consistency. The amount of flour you add in bread making is always an approximation and you should go by feel.
  • Transfer the dough to a lightly greased mixing bowl. Cover with a towel and let rise 90 minutes.
  • Lightly grease a baking sheet. Punch down the dough and form into 24 rolls. Place on the greased baking sheet in six rows of four. Cover and let rise 1 hour.
  • Preheat oven to 375 degrees. Bake the rolls for 12 to 14 minutes, until lightly browned.
  • Remove rolls from oven and brush with melted butter. Serve the rolls warm, or to cool, let rest on the pan for 15 minutes before transferring to a wire cooling rack. Once cooled completely, store in a plastic bag.

2-1/4 cups warm water (110° to 115°)
1/3 cup sugar
1/3 cup shortening
1/4 cup powdered nondairy creamer

1 cup milk, warm
5 tablespoons melted butter
½ cup water, warm, plus more for brushing
¼ cup sugar
1 tablespoon instant dry yeast
2 teaspoons salt
1 egg
5 cups flour, divided
2 tablespoons butter, melted
1 tablespoon honey
shredded cheddar cheese
jalapeño, chopped
butter, melted
fresh parsley, chopped
garlic, chopped
grated parmesan cheese
shredded cheddar cheese
bacon, cooked
fresh chive, chopped

Steps:

  • Combine the warm milk (110-115˚F or 45˚C), melted butter, warm water (110-115˚F or 45˚C), and sugar in a large bowl and stir until mixed.
  • Sprinkle the yeast evenly over the top of the mixture and let sit for 1 minute.
  • Add the salt, egg, and 4 cups (500g) of flour. Mix until the mixture just comes together and forms a dough.
  • Cover for 30 minutes with a towel or plastic wrap.
  • Uncover, and mix in the remaining cup of flour, and turn out onto a well-floured surface.
  • Knead the dough until it forms a smooth ball and loses some of its stickiness.
  • Cover for 30 more minutes with a towel or plastic wrap.
  • Preheat the oven to 375˚F (190˚C).
  • Uncover, and roll dough into 16 equal balls, roughly the size of a tangerine. Ensure the rolls are smooth with no cracks.
  • Place the rolls in a greased cast iron pan and brush with water.
  • Add desired toppings, or customize with your own!
  • Honey Butter - Combine the melted butter with the honey and brush onto rolls.
  • Jalapeño Cheddar - Top the rolls with cheddar and diced jalapeño.
  • Garlic Parmesan - Top the rolls with melted butter, parsley, garlic, and Parmesan.
  • Bacon Cheddar Chive - Top the rolls with cheddar, diced cooked bacon, and chives.
  • Bake for 15-20 minutes, or until rolls have lightly browned.

My dad, Drew, was born in Budapest, Hungary, and immigrated to the U.S. in 1956, during the Hungarian Revolution. He learned to speak English by watching Wonder Bread commercials, so it's no small coincidence that one of his all-time favorite foods is bread-freshly baked bread, to be exact. Growing up in the States, he'd receive the same Christmas present every year: a single navel orange. This recipe is an ode to my dad and combines his two loves, with oranges lending faint citrus flavor to the lightest, fluffiest dinner rolls. I use the word "ultimate" sparingly when it comes to recipes, but this one is more than worthy of that claim.

2 1/4 cups all-purpose flour, divided, plus more as needed
1/2 cup whole milk, warmed to 110 degrees F
1 teaspoon grated orange zest
1/4 cup fresh orange juice, warmed to 110 degrees F
1 large egg, at room temperature
2 tablespoons unsalted butter, melted, plus more for topping
2 tablespoons sugar
One 1/4-ounce packet instant (rapid rise) yeast
1/2 teaspoon kosher salt
Cooking spray
Large-flake sea salt, for topping

Steps:

  • In the bowl of a stand mixer fitted with the dough hook attachment, combine 1 cup of the flour with the milk, orange zest, orange juice, egg, butter, sugar, yeast, and kosher salt. Mix on low speed until the flour is incorporated, scraping down the sides of the bowl as needed. Increase the speed to medium and continue mixing the dough for 2 minutes.
  • Add another 1/2 cup of the flour and continue mixing until it is incorporated. Add the remaining 3/4 cup flour and mix until combined and the dough begins to form a ball. The dough should be sticky but pulling away from the sides of the bowl. If it is too sticky, add more flour, 2 tablespoons at a time, as needed.
  • Lightly flour your work surface. Turn out the dough and knead until it comes together into a smooth ball, about 2 minutes. Transfer the dough to a greased bowl, cover the bowl with a towel, and let rest in a warm, dark place until the dough has doubled in size, about 1 hour.
  • Grease an 8-inch round baking dish with cooking spray. Divide the dough into 12 pieces. Roll each piece into a ball, then arrange the balls in a single layer in the prepared pan. Cover the pan with a towel, then return it to the warm, dark place for 30 minutes.
  • Preheat the oven to 375 degrees F. Uncover the rolls, brush with additional melted butter, and sprinkle with sea salt. Bake until the rolls are golden brown and cooked through, 20 to 25 minutes. Remove the rolls from the oven, brush them again with melted butter, and serve warm.
