ULTIMATE CANDY BAR COOKIES
I created these after Halloween, when I had way too much candy left over. You can make them with any mini chocolate candy, but if you use peanut butter cups, throw them in the freezer just before unwrapping so the chocolate won't stick to the paper. -Tara John, Plymouth, Minnesota

PERFECT THUMBPRINT COOKIES
My mother, Pauline, made really nice thumbprint cookies, but I never wrote down her recipe. I knew the ingredients, but unless you have the right proportions, you won't get that perfect melt-in-your-mouth texture. So, I did an image search and found a recipe that looked very similar, credited to a great-grandma named Mitzi. Since my last name is Mitzewich, that pretty much sealed the deal. In case you can't decide between a shortbread-focused cookie and a more jammy one, here's how to make both.

Steps:
- Preheat the oven to 325 degrees F (165 degrees C).
- Mix butter and powdered sugar together with a rubber spatula until creamy. Add vanilla extract, almond extract, salt, and egg yolk. Mix with the spatula. Add flour and blend until just combined.
- Use a sorbet scoop to portion dough into 1/2-ounce (1-tablespoon) balls. Roll balls in a plate of white sugar to coat; roll again between your palms. Place several inches apart on a silicone-lined baking sheet. Flatten balls lightly with your fingers.
- To make shortbread cookies with a little jam, poke a well into each cookie using the end of a thick wooden spoon dusted with powdered sugar or using one of your fingers. Fill cookies with fruit jam. Tap baking sheet against the counter to let jam settle.
- Bake in the preheated oven until tops are barely blonde and bottoms are slightly golden, about 15 minutes. Let cool on a wire rack before icing.
- Meanwhile, mix powdered sugar with a little milk until you have a consistency that will hold its shape when piped. Pipe icing on top of cookies in a zigzag pattern. Let sit for 15 minutes before serving.
- For a more jam-forward cookie, press your thumb into the cookies to make large, shallow indentations. Spoon in jam. Tap baking sheet against the counter.
- Bake until not quite golden brown, about 15 minutes. Let rest on pan for 5 minutes before transferring a wire rack. Dust with powdered sugar.

Steps:
- Cover a baking sheet with the foil and lightly coat with cooking spray. Roll out the cookie dough and cut out rounds. Use aspic cutters to cut out shapes within each circle. To make a hanging cookie, punch a hole in the top of each cookie with a chopstick. Place the cookies on the baking sheet and bake as directed. Halfway through the baking time, fill the holes with the crushed candy (do not overfill). Once thoroughly baked, repoke the hole at the top of the cookie. Cool, then thread with shoestring licorice or ribbon.

- Beat the shortening and butter until smooth.
- Slowly add 3 cups of powdered sugar. Mix until combined.
- Mix in the vanilla extract and 1 tbsp water.
- Add the rest of the powdered sugar and mix until smooth. Add more water to get the right consistency.
- Use a large serrated knife to remove the edges of the middle and bottom cookie layers, if needed. Sometimes the centers of the cookies fall a bit and it can be good to cut off the edges, so that the layers are even.
- Place bottom cookie on your cake plate.
- Top cookie with icing. I used my Ateco 844 icing tip to pipe a nice, thick layer.
- Top icing with next cookie, then add another layer of icing.
- Add last layer of cookie, then finish off by piping icing around the edges and adding sprinkles.

- To make the cookie layer: Preheat oven to 325ºF. Spray a baking dish with nonstick cooking spray.
- Using a hand mixer or stand mixer, beat butter on medium-high in a large bowl until soft and fluffy, about 2 minutes. Add egg yolks and egg, and beat until incorporated, about an additional 2 minutes. Add cake mix in 3 stages over low speed until fully incorporated, and then fold in sprinkles.
- Bake for 16-20 minutes, turning the dish halfway through the cook time, until the edges start to turn golden brown. Remove from the oven, and let sit until cooled.
- To make fudge layer: Fill a large saucepan with about an inch of water. Set a large heatproof mixing bowl on top, and add the sweetened condensed milk, white chocolate chips, and vanilla extract to the bowl. Heat on high, stirring occasionally, until the chocolate is melted and smooth. Remove from the heat and pour over the cookie layer. While the fudge is still wet, garnish with Peeps, sprinkles, and candy. Let cool completely, and cut into squares.

- In a large bowl of a stand mixer, cream together the butter, brown sugar and sugar with a paddle attachment until creamy, about 1 minute. Add in the egg and egg yolk, plus the vanilla and beat to combine. Add in the espresso powder, soda, cornstarch, salt and flour and beat until a soft dough forms. Fold in the chocolate chips.
- Chill the mixture covered in the fridge for at LEAST 2 hours, up to 3 days long. Chilling is mandatory and prevents spreading the cookie dough.
- Preheat oven to 350 degrees F. Line 2 baking sheets with silicone liners or parchment paper. Drop rounded Tablespoonfuls of dough onto the baking sheets about 2" apart. I used a 2-ounce cookie scoop, but if you don't have one, simply use a 1/4 cup measuring cup and stack the cookie dough higher rather than wider so when it spreads, it stays puffy in the middle.
- Bake for approx. 9-12 minutes, rotating pans halfway through baking time to ensure even cooking. Cookies may appear slightly soft in the center - they will continue to cook as they cool. Do not over-bake! Cool completely on the cookie sheets before serving.
