Time 58m

Number Of Ingredients 12

1 cup unsalted butter (softened to room temperature)
1 cup granulated sugar
1 cup dark brown sugar (firmly packed)
2 large eggs
2 teaspoons pure vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 1/2 teaspoons ground cinnamon
1 teaspoon salt
3 cups old-fashioned rolled oats
1 1/2 cups raisins

Steps:

  • Using an electric hand mixer or a stand mixer, cream the softened butter and both sugars together on medium speed until smooth, about 2 minutes. Add the eggs and vanilla; mix on high until combined, about 1 minute. Scrape down the sides and bottom of the bowl and mix again, as needed. Set aside.
  • In a separate bowl, whisk the flour, baking soda, baking powder, cinnamon, and salt together. Add to the wet ingredients and mix on low until combined. Stir in the oats and raisins on low speed. Chill the dough for 30-60 minutes in the refrigerator.
  • Preheat oven to 350°F. Line two large baking sheets with parchment paper or silicone baking mats. Set aside.
  • Scoop balls of dough (about 2 tablespoons of dough per cookie) and place 2 inches apart on the baking sheets. Bake for 11-13 minutes until golden brown. The centers will not look fully baked, but cookies continue to set after being removed from the oven. Remove from the oven; let cookies sit on baking sheet for 3-5 minutes before transferring to a wire rack to cool completely. Enjoy!

Time 25m

Yield 36 Cookies

Number Of Ingredients 13

1 cup butter (I prefer butter) or 1 cup margarine (I prefer butter)
1 cup sugar
1 cup brown sugar
2 eggs
2 teaspoons pure vanilla extract
2 cups white flour
2 teaspoons baking powder
2 teaspoons baking soda
1 teaspoon salt
2 1/2 cups quick oats
1 1/2 cups shredded coconut
1 1/2 cups raisins (optional)
1 (12 ounce) package milk chocolate chips (optional)

Steps:

  • Melt butter on the stove, then mix in sugar and brown sugar. DO NOT BOIL. Remove from heat. Pour butter and sugar mixture into a large mixing bowl and add eggs and vanilla. Mix thoroughly. Add baking powder, soda, salt, and finally the flour. Mix ingredient for about three minutes on high speed. Add quick oats and coconut. Mix for two more minutes. Then decide if raisins OR chocolate chips are your desire, and add them. (This cookie can stand on its own too, if you choose!).
  • Bake: 350 Degrees Time: 10 Minutes.
  • **This cookie dough can be rolled into cookie balls and frozen until you need them. So make them all now or just a few and freeze what you want to make later.

  • In a separate bowl, whisk the flour, baking soda, cinnamon and salt together. Stir this into the butter/sugar mixture. Stir in the oats, chocolate and walnuts, if using them.
  • At this point you can either chill the dough for a bit in the fridge or freezer, or scoop the cookies onto a sheet and then chill the whole tray before baking them. You could also bake them right away (if you’re impatient) but I do find that they end up slightly less thick.
