NO-PEEL APPLE CAKE

No-Peel Apple Cake image

No-Peel Apple Cake is VERY easy to make, no need to peel the apples (yay!) and the aroma while it's baking is absolutely divine. It's delicious warm from the oven, but I keep leftovers in the fridge and its equally good served cold.

APPLE CAKE (VERY MOIST, MADE WITH YOGURT

Apple Cake (Very Moist, Made with Yogurt image

A very moist and easy to make apple cake!

Provided by adapted by Christina Conte

Categories     Cakes & Pies

Time 1h10m

Number Of Ingredients 9

2 or 3 large organic apples, about (300g), washed and cut into pieces (do not peel, but remove the core/seeds)
2 Tbsp lemon juice
3 eggs
1 1/8 c (250g) sugar
1 3/4 c (275g) all purpose flour (plain flour in the UK)
2 1/2 tsp baking powder (or 1 packet Italian Paneangeli vanilla baking powder)
1/3 c (100g) butter, softened
1/3 c (110g) plain Greek yogurt
1 Tbsp grated fresh lemon zest/peel

Steps:

  • Prepare an 8″ springform pan by spraying with oil (or butter) and lining in parchment paper (sides optional, if you want really clean sides), then spray the paper, too.
  • In a food processor, or blender, process the apple pieces and lemon juice until it is almost pureed.
  • Place the sugar and eggs in a large bowl and beat with a mixer until light and fluffy. Sift the flour with the baking powder then add to the mixture in the bowl a little at a time along with the softened butter. Continue to mix until completely blended, then stir in the yogurt.
  • Add the processed apples and grated lemon rind to the cake batter and stir until evenly combined.
  • Pour into prepared cake tin.
  • Bake for 50-60 minutes (depending on your oven), but test with a cake tester or skewer to make sure the apple cake is done before removing from the oven. If desired, sprinkle lightly with some granulated sugar immediately. Allow to cool for about 15 minutes, then remove the side of the springform pan.
  • Let cool completely before cutting and serving.
  • The cake can stand on its own, but you can also serve it with a fruit sauce, dollop of whipped cream, custard or vanilla ice cream. I prefer it plain with a cup of tea!

The No-Peel Apple Cake Recipe - (4.4/5) image

Provided by ruthg

Number Of Ingredients 26

CAKE:
1 1/3 cups light brown sugar, firmly packed
3/4 cup butter, softened
3 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon table salt
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
3/4 cup buttermilk
Shortening
APPLES:
2 pounds McIntosh apples (about 6 apples, 6 to 7 ounces each)
1/2 cup light brown sugar, firmly packed
1 teaspoon cornstarch
1/4 teaspoon ground cinnamon
Pinch table salt
2 tablespoons butter
APPLE BRANDY SAUCE:
1/2 cup light brown sugar, firmly packed
1/4 cup butter
1/4 cup heavy cream
Pinch table salt
1 tablespoon apple brandy
1 tablespoon powdered sugar

Steps:

  • Prepare Cake: Preheat oven to 350°F. Beat first 2 ingredients at medium speed with a heavy-duty electric stand mixer until light and fluffy. Add eggs, 1 at a time, beating just until blended after each addition; stir in vanilla. Whisk together flour and next 4 ingredients in a medium bowl. Add flour mixture to sugar mixture alternately with buttermilk, beginning and ending with flour mixture. Beat just until blended after each addition. Spread batter in a greased (with shortening) and floured 9- x 2-inch round cake pan. Bake at 350°F for 50 minutes or until a wooden pick inserted in center comes out clean, shielding with aluminum foil after 35 to 40 minutes to prevent excessive browning, if necessary. Cool in pan on a wire rack 10 minutes. Remove from pan, and cool completely (about 1 hour). Meanwhile, prepare Apples. Cut apples into 1/2-inch-thick wedges. Toss together apples, 1/2 cup brown sugar, and next 3 ingredients. Melt 2 tablespoons butter in a large skillet over medium-high heat; add apple mixture, and sauté 5 to 6 minutes or until crisp-tender and golden. Cool completely (about 30 minutes). Arrange sautéed apples over cooled cake, and drizzle with desired amount of warm Apple Brandy-Caramel Sauce; serve with remaining sauce. Apple Brandy Sauce: Bring brown sugar, butter, cream, and salt to a boil in a small saucepan over medium heat, stirring constantly. Boil, stirring constantly, 1 minute. Remove from heat, and stir apple brandy. Whisk in powdered sugar; cool 15 minutes before serving.

APPLE CAKE

Apple Cake image

This easy apple cake recipe is the perfect fall treat! It's moist, lightly spiced, and jam-packed with tender apples. If you don't have an 9-inch round baking pan, you can bake this cake in an 8-inch square pan or a 9x5-inch loaf pan. See the post above for baking times. Recipe reprinted from Snacking Cakes: Simple Treats for Anytime Cravings by Yossy Arefi with permission from the publisher.

Provided by Yossy Arefi

Categories     Dessert     Snack

Number Of Ingredients 14

3/4 cup dark brown sugar
2 large eggs
1/3 cup neutral oil (like canola or grapeseed)
1 teaspoon vanilla extract
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon kosher salt
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
2 small apples (peeled, cored, and chopped into 1/4- to 1/2-inch pieces (about 2 cups))
1/2 cup toasted walnuts (chopped)
1 tablespoon whiskey (optional)
1/2 teaspoon instant espresso powder (optional)

Steps:

  • Position a rack in the center of your oven and preheat the oven to 350°F. Butter or coat a 9-inch round baking pan with nonstick spray. Line the bottom of the pan with a round of parchment paper.
  • In a large bowl, whisk the brown sugar and eggs until pale and foamy, about 1 minute. Add the oil, vanilla, cinnamon, nutmeg, salt, and whiskey and espresso powder, if using. Whisk until smooth and emulsified.
  • Add the flour, baking powder, and baking soda and whisk until well-combined and smooth.
  • Use a rubber spatula to fold in the apples and ¼ cup of the nuts.
  • Pour the batter into the prepared pan and use an offset spatula to gently smooth the top, making sure the apples are well dispersed and go all the way to the edges of the pan. Tap the pan gently on the counter to release any air bubbles. Sprinkle the remaining ¼ cup nuts over the cake.
  • Bake until puffed and golden, and a tester inserted into the center comes out clean, 30 to 40 minutes. There may be a bit of moisture on the tester from the apples. Set the pan on a rack to cool for about 15 minutes. Run a thin knife around the edge and carefully turn the cake out onto a cooling rack. Then invert it again so that it's puffy side up, if desired.
  • Store the cake, wrapped tightly, at room temperature or in the fridge for up to two days.

TO PEEL OR NOT TO PEEL. . . GRAVENSTEIN APPLE CHUNKS IN CAKE
2009-08-18 Aug 18, 2009 11:50 PM 2. I've got some nice green Gravensteins (with a lovely aroma I'd like to keep in the cake) and an old apple cake recipe that I've always made with thick slices of peeled apple. But I was reading a 2005 post (Gordon Wing, are you out there?) which said NOT to peel Gravensteins for pie because the skins just "melt away".
