NO-PEEL APPLE CAKE
No-Peel Apple Cake is VERY easy to make, no need to peel the apples (yay!) and the aroma while it's baking is absolutely divine. It's delicious warm from the oven, but I keep leftovers in the fridge and its equally good served cold.

- Preheat oven to 350°
- Grease or spray a 9" pie plate with Pam, set aside.
- Mix first eight ingredients (both sugars and all dry ingredients) together in a medium bowl. Melt butter and add vanilla and egg, stir to combine in a small bowl.
- Slice apples into bite-sized pieces and add to dry ingredients, add wet ingredients and mix together until there's no sign of dry ingredients at the bottom of the bowl. The dough will be stiff.
- Spread into prepared pie plate and bake 40-45 minutes. Serve with vanilla ice cream or fresh whipped cream.

- Preheat oven to 350 degrees F. Grease and flour a Bundt pan; set aside.
- In a large bowl, use an electric mixer to beat together the eggs, sugar and oil until light and fluffy.
- In a separate bowl, sift together the flour, baking soda, salt, cinnamon and nutmeg. Add the dry ingredients to the egg mixture and mix just until combined. Add vanilla; mix. Gently fold in the nuts and apples.
- Transfer the batter to the prepared pan. Bake for 70-80 minutes, or until a toothpick inserted in the center comes out clean. Cool in the pan for a few minutes while you make the glaze, then turn out onto a wire rack. Glaze the cake while it's still warm.

- Preheat oven to 350°F. In a large bowl, mix the eggs, sugar, cinnamon, and oil. Peel and slice the apples and add to mixture in bowl, coating the apples as you go to keep the apples from turning brown. Mix together the baking soda and flour, then add to the ingredients in the bowl. Mix well with a fork until all of the flour is absorbed by the wet ingredients. Pour mixture into a greased one 9x13-inch or two 9-inch round pans. Bake for approximately 55 minutes. Let rest for 10 to 15 minutes, then serve.

- Prepare an 8″ springform pan by spraying with oil (or butter) and lining in parchment paper (sides optional, if you want really clean sides), then spray the paper, too.
- In a food processor, or blender, process the apple pieces and lemon juice until it is almost pureed.
- Place the sugar and eggs in a large bowl and beat with a mixer until light and fluffy. Sift the flour with the baking powder then add to the mixture in the bowl a little at a time along with the softened butter. Continue to mix until completely blended, then stir in the yogurt.
- Add the processed apples and grated lemon rind to the cake batter and stir until evenly combined.
- Pour into prepared cake tin.
- Bake for 50-60 minutes (depending on your oven), but test with a cake tester or skewer to make sure the apple cake is done before removing from the oven. If desired, sprinkle lightly with some granulated sugar immediately. Allow to cool for about 15 minutes, then remove the side of the springform pan.
- Let cool completely before cutting and serving.
- The cake can stand on its own, but you can also serve it with a fruit sauce, dollop of whipped cream, custard or vanilla ice cream. I prefer it plain with a cup of tea!

- Prepare Cake: Preheat oven to 350°F. Beat first 2 ingredients at medium speed with a heavy-duty electric stand mixer until light and fluffy. Add eggs, 1 at a time, beating just until blended after each addition; stir in vanilla. Whisk together flour and next 4 ingredients in a medium bowl. Add flour mixture to sugar mixture alternately with buttermilk, beginning and ending with flour mixture. Beat just until blended after each addition. Spread batter in a greased (with shortening) and floured 9- x 2-inch round cake pan. Bake at 350°F for 50 minutes or until a wooden pick inserted in center comes out clean, shielding with aluminum foil after 35 to 40 minutes to prevent excessive browning, if necessary. This delicious apple crisp is so easy to make as you don't have to peel the apples.

- Preheat oven to 350 degrees. Grease a deep-dish pie plate or large baking dish with cooking spray and set aside.
- Slice each apple into 8 slices and remove the seeds. Toss the apple slices in the lemon juice.
- To the apple slices add the sugar, cinnamon, and vanilla extract in a large bowl. Mix well until all of the apples are evenly coated. Pour into the prepared baking dish.
- In a separate medium-size bowl, combine the flour, oats, brown sugar, salt, and cinnamon. Pour in the melted butter and stir until well coated and crumbly. Sprinkle the crumb mixture evenly over the top of the apples.
- Bake in the preheated oven for 45-60 minutes until fruit is soft and the topping is golden brown. Allow to cool slightly before serving. Serve warm or cold.

- Position a rack in the center of your oven and preheat the oven to 350°F. Butter or coat a 9-inch round baking pan with nonstick spray. Line the bottom of the pan with a round of parchment paper.
- In a large bowl, whisk the brown sugar and eggs until pale and foamy, about 1 minute. Add the oil, vanilla, cinnamon, nutmeg, salt, and whiskey and espresso powder, if using. Whisk until smooth and emulsified.
- Add the flour, baking powder, and baking soda and whisk until well-combined and smooth.
- Use a rubber spatula to fold in the apples and ¼ cup of the nuts.
- Pour the batter into the prepared pan and use an offset spatula to gently smooth the top, making sure the apples are well dispersed and go all the way to the edges of the pan. Tap the pan gently on the counter to release any air bubbles. Sprinkle the remaining ¼ cup nuts over the cake.
- Bake until puffed and golden, and a tester inserted into the center comes out clean, 30 to 40 minutes. There may be a bit of moisture on the tester from the apples. Set the pan on a rack to cool for about 15 minutes. Run a thin knife around the edge and carefully turn the cake out onto a cooling rack. Then invert it again so that it's puffy side up, if desired.
- Store the cake, wrapped tightly, at room temperature or in the fridge for up to two days.
