My family has a big farm appetite. To be extra-sure I don't get caught short at breakfast-time I make this casserole as a backup the evening before. It could have been a meal in itself! It comes out of the oven light and puffy, but there's enough egg, cheese and meat to be hearty. -Marion Kirst, Troy, Michigan

Number Of Ingredients 12

12 slices white bread, crusts removed
6 to 8 tablespoons butter, softened
6 slices deluxe American cheese
6 slices boiled or baked ham
Prepared mustard
4 large eggs, beaten
3 cups whole milk
Chopped fresh parsley
MUSHROOM SAUCE:
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1/3 cup whole milk
Dash Worcestershire sauce

Steps:

  • Spread bread with butter. Place six slices in a greased 13x9-in. baking dish. Top each bread slice with a slice of cheese and ham. Brush with mustard. Place the remaining bread slices, buttered side up, over mustard. Beat eggs and milk; pour over all. Cover and refrigerate overnight. , Remove from the refrigerator 30 minutes before baking. Bake at 325° for 50-60 minutes or until a knife comes out clean. Let stand 5 minutes before serving. Meanwhile, heat sauce ingredients and keep warm. Serve with the mushroom sauce; garnish with parsley.

This is my variation of breakfast casserole. Can you have too many? My family loves this recipe because it includes potatoes, while I pretend that it makes it lower in calories without bread cubes and eat lots more toast!

8 frozen hash brown patties
2 cups crumbed bacon or 2 cups browned sausage
2 cups shredded cheese, divided
2 cups milk
1 (10 3/4 ounce) can cream of mushroom soup, undiluted
4 eggs
1 teaspoon ground mustard
1/4 teaspoon pepper

Steps:

  • Place potato patties in a 9 x 13 inch baking pan coated with nonstick cooking spray.
  • Top with ham, bacon, sausage or any combination, and sprinkle with 1 1/2 cups of shredded cheese.
  • Combine milk, soup, eggs, mustard and pepper; pour over cheese.
  • Cover and refrigerate overnight.
  • Remove from refrigerator 30 minutes before baking.
  • Bake covered at 350 degrees for 1 hour.
  • Uncover and sprinkle with remaining 1/2 cup shredded cheese.
  • Bake 20-25 minutes longer or until a knife inserted near the center comes out clean.
  • Let stand 10 minutes before serving.

This cheesy ham- and bacon-filled breakfast casserole is the perfect make-ahead breakfast for Christmas morning-or any time you need to feed a crowd.

1 (32-ounce) bag of frozen tater tots
1 pound diced ham
1/2 cup bacon bits
1 1/2 cups, plus 1/2 cup cheddar cheese (shredded)
8 eggs
1 (10.5-ounce) can of cream of mushroom condensed soup
1 cup of milk
1/3 cup sour cream
1 teaspoon ground black pepper
1 teaspoon season salt
1 teaspoon onion powder
2 teaspoons hot sauce
1 red bell pepper (diced)
1 green bell pepper (diced)

Steps:

  • Preheat the oven to 375 F. Grease a 9 x 13-inch casserole dish with cooking spray.
  • Spread the tater tots, bacon, ham, and 1 1/2 cups of cheddar cheese into the casserole dish. Toss gently with your hands or a large spoon so that all of the bacon, cheese, and ham is evenly dispersed among the tater tots.
  • In a medium-sized bowl, whisk together the eggs, cream of mushroom soup, milk, sour cream, pepper, salt, onion powder, and hot sauce.
  • Pour the egg mixture evenly over the top of the tater tot mixture. Cover with aluminum foil and place in the oven. Bake for 45 to 50 minutes or until the eggs are almost completely set.
  • Remove the aluminum foil. Top the casserole with the remaining 1/2 cup of cheddar cheese and evenly distribute the red and green bell peppers.
  • Turn the heat of the oven up to 425 F and cook for 20 more minutes, or until the cheese is melted, the eggs are completely set, and the edges have browned.
  • Serve with a nice slice of toast and some fruit for a beautiful and complete breakfast!

1 (16 ounce) package pork sausage
10 eggs, lightly beaten
3 cups milk
1 teaspoon salt
6 cups cubed bread*
2 cups shredded sharp Cheddar cheese
1/2 teaspoon black pepper
1/2 cup diced red pepper, optional
sliced green onion, optional

Steps:

  • Butter a 9 x 13 x 2 inch casserole dish.
  • In large skillet, cook sausage over medium-high heat, stirring frequently until thoroughly cooked and no longer pink.
  • In large bowl, whisk together eggs, milk, and salt until thoroughly combined.
  • Evenly distribute half the bread into the prepared casserole dish. Sprinkle with half the cheese, half the black pepper, half the red pepper, and half the sausage. Repeat layers.
  • Pour egg mixture evenly over casserole.
  • Cover and refrigerate overnight, or bake immediately.
  • When you're ready to bake the casserole, preheat oven to 325 F. Bake uncovered for 55-60 minutes, or until eggs are set. If the top begins to brown too quickly, loosely cover the casserole dish with foil.
  • If desired, sprinkle the casserole with sliced green onions. Serve warm.
