BACON AND TOMATO MACARONI AND CHEESE
This is one of my family's choice meals. I have even taught my 11-year-old daughter to make it. Awesome for busy weeknights and when you have your kid's friends over. If you prefer it meatier add more bacon.

Steps:
- Cook and stir bacon and onions in a skillet over medium heat until bacon is crisp and onions are softened, 10 to 15 minutes. Add tomatoes to skillet; cook and stir until liquid is evaporated, 5 to 10 minutes.
- Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes. Drain and return pasta to pot.
- Preheat oven to 355 degrees F (180 degrees C).
- Stir 3 cups Cheddar cheese into the tomato mixture until cheese is melted and sauce is thickened, about 5 minutes. Mix sauce into pasta. Pour pasta mixture into a 9x13-inch baking dish and top with remaining Cheddar cheese and mozzarella cheese.
- Bake in the preheated oven until cheese is golden brown and crisp, about 15 minutes.

- Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13 inch baking dish.
- Bring a large pot of water to a boil over high heat. Stir in the rotini, and return to a boil. Cook until the pasta is slightly under-cooked, about 8 minutes. Drain well.
- Combine the processed cheese, tomato juice, and butter in a large saucepan over medium-high heat. Stir until melted and smooth. Mix the pasta into the cheese sauce; stir well. Transfer macaroni and cheese to the prepared baking dish. Top with the raw bacon slices.
- Bake in preheated oven until the bacon is cooked and crisped, about 30 minutes.

- Boil the pasta JUST until al dente, according to package directions. Drain and return to the pan you boiled it in. Set aside. (Mix in a little butter to keep the noodles from sticking if it's going to be awhile before you make the sauce)
- Preheat the oven to 375 degrees Fahrenheit.
- To a medium saucepan over medium heat, add the butter. When the butter has melted, add the flour, salt, dry mustard, pepper, and 1/8 teaspoon smoked paprika. With a wooden spoon or whisk, stir constantly for three minutes.
- Add the milk in a thin stream, stirring constantly with a whisk. Continue to stir constantly until the sauce thickens enough to coat the back of a spoon, 5-8 minutes.
- Remove from heat and add 2 cups of the cheese, stirring until melted. You'll reserve the last cup of cheese for topping. Pour the cheese sauce over the pasta and toss gently until all of the pasta is coated.
- Add half the pasta to a two-quart casserole dish (I like a tall 8-inch by 8-inch baking dish). Sprinkle on half the cheese. Add the rest of the pasta. Sprinkle on the rest of the cheese, then dust lightly with the smoked paprika.
- Bake for 25-30 minutes, until the mac and cheese is bubbling and browning on top.
- Serve, topping individual servings with parsley or cooked, chopped bacon if desired.

- In sauce pan melt butter, stir in 4tbs flour, salt, pepper (until smooth) and add milk and cook (cook on low, milk will scald) while stirring until thickened and bubbly.

- 1. Cook pasta as per packet directions
- 2. Pan fry the bacon until cooked and slightly crispy, set aside
- 3. Melt the butter in a medium saucepan and add the flour, whisking to combine over medium heat.

- Place the bacon in a large pan over medium high heat. Cook until crispy, about 4-5 minutes. Remove the bacon from the pan and drain on paper towels.
- Leave 2 tablespoons of bacon fat in the pan; discard the rest of the fat.
- Add the flour, then whisk until combined, about 30 seconds.
- Pour in the water and whisk until smooth and just thickened.
- Add the milk and whisk until combined.
- Stir in the pasta, salt, garlic powder, onion powder, smoked paprika and pepper, then bring the mixture to a simmer.
- Cook for 10-12 minutes, stirring occasionally, until pasta is done.

A couple of years ago, my friends Kymberli and Courtney shared a recipe for macaroni and cheese with me. I fell in love with it; however, I made several changes to it first. This recipe is a hit with my family and friends! Every year my middle school students beg me to make it for our Thanksgiving potluck! It's that good!!!

- 1. Preheat oven to 375.
- 2. In a large, heavy bottom sauce pan, cook noodles according to package. I prefer to boil my noodles in chicken broth. This adds flavor!
- 3. In a separate sauce pan, sauté chopped bacon until cooked through. Add the ham to the bacon/grease, and stir until heated through. With a slotted spoon, remove the meat and set aside. Add the butter to the bacon grease and melt it down. Add soups, heavy cream, and evaporated milk mixing constantly over medium heat until smooth.
- 4. Once the cheese mix is smooth, the the noodles and mix evenly.
- 5. Add 6 cups of the shredded cheese. Make sure the cheese sauce and shredded cheese evenly coat the noodles.
- 6. Pour half of the noodle mix into a 13x9 baking dish.
- 7. Sprinkle half of the bacon and ham mix over the noodles.
- 8. Top the bacon and ham with the slices of provolone.
- 9. Add the remaining noodles over the first layer. Spread them evenly. Sprinkle with salt and pepper to taste.
- 10. Layer the remaining shredded cheese, bacon, and ham over.
- 11. Poke the cubes of block cheese into the Mac evenly spread apart. These pockets of yumminess will surprise your guest!
- 12. In a food processor or blender, pulse croutons until they become a fine breadcrumb.
- 13. Sprinkle the crumbs over the top of the Mac.
- 14. Cover with foil and bake for 35-40 minutes.
- 15. During the last 10 minutes remove the foil.
- 16. This recipe is just as good without the bacon and ham.

- Preheat oven to 450°F.
- Slice bacon into 1-inch pieces and fry until crispy.
- Boil the pasta in large pot in salt water until al dente.
- Drain but do not rinse.
- Return pasta to pot.
- Stir in butter, milk, salt & pepper, garlic and sour cream over low heat until butter is melted.
- Turn off heat and stir in cheese and most of the fried bacon.

- Line a large baking sheet with foil and lay each slice of bacon down with at least an inch of space between each slice. Place the baking sheet full of bacon on the lowest rack of your oven and let it cook for 8 to 10 minutes or until crisp but still pliable. It will crisp even further once it’s baked, so don’t crisp it too much at this stage. Drain on paper towels and chop into bite sized pieces. Set aside.
- In a large pot, boil water for your pasta. Once it starts to boil, season with about a tablespoon of salt and stir to dissolve. Add the pasta and boil for 5 minutes. Reserve one cup of the pasta water just in case. Drain the pasta and rinse with cold water to stop the cooking process. Don’t toss the pasta around, just let it sit while you rinse it — this helps keep some of the starch in place. Drain the cold water and let the cooled off pasta hang out on the sidelines while you make the cheese sauce.
- Rinse the pot you boiled the pasta in with cold water to cool it off completely then place back on top of your stove over medium heat. Add the butter to melt — once it starts to foam/sizzle, it’s ready for the flour. Add the flour and whisk vigorously until smooth and lump-free. Let this cook for 1 minute to get that “raw flour” flavor out. Add 1 cup of the half & half, and continue to whisk vigorously until smooth, about 20 to 30 seconds. Add the remaining 2 cups of half & half and continue whisking. Add the rosemary, thyme, kosher salt, freshly ground black pepper, cayenne pepper, nutmeg, and minced garlic — mix well. Taste it! Adjust the seasoning as you need to. Increase the heat to medium-high and allow the mixture to come up to a simmer — whisking the whole time. The mixture will thicken very quickly so don’t walk away from it. It should take about 5 minutes to start simmering.
