THE MAFIA COOKBOOK'S MANDARIN PORK ROAST

The Mafia Cookbook's Mandarin Pork Roast image

I am not the type to mix my food. I want my sweet tastes with the sweets and the salty with the salty stuff. David, on the other hand, has no problem with it at all--in fact, loves it. This recipe is the ONLY thing I'll eat that mixes flavors, so that should tell you just how YUMMY it really is. Enjoy! By Joseph "Joe Dogs" Iannuzzi, 2003.

Time 4h15m

Yield 14-16 serving(s)

Number Of Ingredients 14

6 lbs boneless pork loin (tied with string, David never does this)
1 teaspoon salt
1/2 teaspoon white pepper
3/4 teaspoon garlic powder
2 1/4 tablespoons Dijon mustard
1 (11 ounce) can mandarin oranges
1/4 cup light brown sugar
1/4 cup red wine vinegar (plain vinegar is fine, too)
1 chicken bouillon cube (vegetarian is fine, too)
1 1/4 tablespoons soy sauce (low-salt)
2 tablespoons cornstarch
3/4 cup water
1 medium onion, chopped
1/2 cup green pepper, chopped

Steps:

  • Preheat oven to 325 degrees.
  • Trim excess fat from pork. Rub salt, pepper, and garlic powder into pork. Spread mustard over roast.
  • Place roast in large dutch oven (or roasting pan). Cover and bake until meat thermometer reads 170 degrees (approximately 3 hrs).
  • Drain oranges, reserving the liquid. Set oranges aside.
  • Place orange liquid, brown sugar, vinegar, chicken bouillon cube, soy sauce, cornstarch, and water in saucepan. Cook, stirring, over medium heat until smooth and thickened.
  • Remove from heat and stir in onion, green pepper, and oranges.
  • Spoon sauce over roast and bake uncovered for 30-40 minutes, basting occasionally.
  • Slice pork and serve with sauce.
  • Serves 14-16.

Time 1h

Yield 6-8 serving(s)

Number Of Ingredients 8

1 tablespoon Dijon mustard
1 teaspoon ground thyme
1 teaspoon salt
1/2 teaspoon pepper
1 (2 lb) pork roast
2 tablespoons oil
1 cup dry white wine
1/2-1 cup sour cream

Steps:

  • Combine mustard, thyme, salt, and pepper; rub into roast.
  • Heat oil in skillet, and brown roast on all sides; add wine.
  • Roast in preheated 350F oven for about 45 minutes, or until meat thermometer registers 145F.
  • (It helps if you brown the roast in an oven-proof skillet so you only need one cooking vessel. Also, you don't lose any of the drippings.) When meat is done, remove from the pan.
  • Add sour cream to drippings and blend until smooth.
  • Bring to boiling; reduce heat and simmer while you slice the roast.
  • Add slices of roast back to sauce and warm slightly until ready to serve.
  • Garnish with sprigs of parsley, if desired.

DAD'S BASIC MOIST PORK ROAST

Dad's Basic Moist Pork Roast image

This is the best and most basic way to ensure a juicy, perfectly-cooked pork roast every time. This recipe really requires a good thermometer -- either a $10 instant-read type or, even better, the type that pierces the meat and stays in place while connected to an outside-the-oven monitor. If you can swing that, then try your favorite marinade or rub on this recipe. Use your imagination on the rubs and marinades, but ensure you bring your roast directly from the fridge to the roasting pan -- Dad's recipe works best that way.

Yield 6

Number Of Ingredients 4

2 tablespoons olive oil
1 teaspoon kosher salt
1 tablespoon ground black pepper
1 (3 pound) boneless top loin pork roast

Steps:

  • Combine oil, pepper, and salt in a bowl; rub oil mixture over pork and refrigerate while oven preheats.
  • Preheat an oven to 475 degrees F (245 degrees C).
  • Place a roasting rack in a large roasting pan; arrange pork on the roasting rack.
  • Roast in preheated oven until pork with browned, about 30 minutes. Remove pork from oven and reduce oven heat to 325 degrees F (165 degrees C). Allow pork to rest uncovered at room temperature for 30 minutes. An instant-read thermometer inserted into the center should read between 115 degrees F (46 degrees C) and 140 degrees F (60 degrees C).
  • Return to oven and continue to cook until pork is slightly pink in the center, 15 to 30 minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).
  • Let the roast stand uncovered at room temperature for 15 to 20 minutes before slicing and serving.
