I first came across this recipe in an old cookbook. As I became more brave with bread baking, I decided to redo this recipe, changing and adding ingredients to enhance flavor and nutrition. -Doris Kosmicki, Pinckney, Michigan

Number Of Ingredients 11

1-1/2 cups old-fashioned oats
3/4 cup whole wheat flour
1/2 cup packed brown sugar
1/4 cup toasted wheat germ
3 teaspoons salt
1 package (1/4 ounce) active dry yeast
2-1/2 cups water
2 tablespoons butter
5-1/2 to 6 cups all-purpose flour
Melted butter, optional
Additional old-fashioned oats, optional

Steps:

  • In a large bowl, combine the oats, whole wheat flour, brown sugar, wheat germ, salt and yeast. In a small saucepan, heat water and butter to 120°-130°. Add to dry ingredients just until moistened. Add 3 cups all-purpose flour; beat until smooth. Stir in enough remaining all-purpose flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Turn onto a lightly floured surface; divide into five portions. Shape each into a loaf. Place in five greased 5-in. x 3-in. x 2-in. loaf pans. Cover and let rise until doubled, about 30 minutes. , Bake at 350° for 30-35 minutes or until golden brown. Remove from pans to wire racks. Brush with melted butter; sprinkle with additional oats if desired. Cool.

Easy Homemade Oatmeal Bread made with rolled oats, whole wheat flour and sweetened with honey.

2 cups milk (, brought to a simmer)
1 cup rolled oats ((not quick or instant oats))
4 tablespoons butter (, softened)
1/2 cup honey
4 ½ teaspoons instant yeast
1/2 cup warm water
1 1/2 teaspoons salt
2 1/2 cups whole wheat flour
2 1/4 -3 cups all-purpose flour
egg wash: 1 egg mixed with 1 tablespoon of water

Steps:

  • Add oats and butter to the bowl of a stand mixer or large mixing bowl. Heat milk to a simmer and pour on top, stirring to combine. Set aside for about 1.5 hours. Mixture should be at room temperature.
  • Add honey, warm water, instant yeast, and salt to the bowl and stir well to combine. Add the whole wheat flour and mix on medium-low speed until combined. Add the all-purpose flour, a little at a time, until the dough begins to pull away from the sides of the bowl. Only add enough flour to make a dough that is soft, and not overly sticky (don't add too much flour!). Knead for a few minutes until smooth and elastic and scrape down the sides and bottom of the bowl as needed.
  • First Rise: Transfer dough to a greased bowl and cover with a dish towel or plastic wrap. Allow to rise until double in size, about 1 hour.
  • Punch down the dough and divide into two equal pieces. Shape into loaves and place in two lightly greased loaf pans. Make egg wash and gently brush some over the top of each loaf. Sprinkle a small handful of dry oats on top.
  • Second rise: Cover with a well greased piece of plastic wrap gently laid on top and let rise in a warm place until risen about 1 inch over the loaf pans, 45 minutes to 1 hour. Carefully peel off the plastic wrap.
  • Bake at 350 degrees for 30 - 40 minutes. Loaves are done when tapping lightly on the tops produces hollow sound (or when instant read thermometer registers 200° F). Cool for 15 minutes on wire rack, then turn out of pans and cool completely.

2 (1/4 ounce) packages quick-rising yeast
1/2 cup water (110 degrees)
1 1/4 cups boiling water
1 cup quick-cooking rolled oats
1/2 cup light molasses
1/3 cup butter
1 tablespoon salt
5 3/4-6 cups all-purpose flour
2 beaten eggs
quick-cooking rolled oats
1 beaten egg white
1 tablespoon water

Steps:

  • Soften yeast in the warm water.
  • Combine the boiling water, 1 cup oats, molasses, butter and salt.
  • Cool to lukewarm.
  • Stir in 2 cup of the flour, beat well.
  • Add the softened yeast and 2 beaten eggs, beat well.
  • Stir in enough of the remaining flour to make a soft dough.
  • Turn out onto a lightly floured surface and knead until smooth and elastic about 8-10 minutes.
  • Shape into a ball.
  • Place in a lightly oiled bowl, turning once to grease the surface of the dough.
  • Cover and let rise in a warm place until double (about 1 hour).
  • Punch dough down, turn out onto a lightly floured surface.
  • Divide dough in half and cover with the bowl.
  • Let rest 10 minutes.
  • Coat 2 well greased loaf pans with about 2 Tbsp of rolled oats per pan.
  • Shape dough into loaves.
  • Place the loaves into the pans.
  • Cover and let rise in a warm place until double (about 30- 45 minutes).
  • Mix the beaten egg white with the tablespoon of water.
  • Brush the tops of the loaves with this mixture.
  • Sprinkle the tops of the loaves with a few more rolled oats.
  • Bake at 375°F till done, about 40 minutes.
  • Cover loosely with foil during the last 15 minutes if the tops are browning too quickly.
  • Remove from pans and cool on a rack.

Adapted from Yankee magazine.Another neat recipe I clipped from Yankee's now defunct "recipe with a history" article. According to the article,this recipe was a family favorite for oatmeal bread that they also would often form into balls and drop into oil to make fried dough. One year, for a 4th of July church food booth, they instead used a fish shaped cookie cutter to shape the raw dough, then fried them. and served them dusted with powdered sugar and cinnamon sugar while warm. She said at home they just fried the dough balls and served them warm with maple syrup or honey. And of course, they made the oatmeal bread into regular loaves too. The amount of fish you get will vary greatly depending upon what size cookie cutter you use (and yes - of course you can use different shapes) but is approximately 48 fish from one batch of dough. Prep time/cook times include rising times for the dough. If making the fish, plan ahead as the dough need to chill overnight for them.

2 cups boiling water
1 cup oatmeal (regular or quick cooking, NOT instant)
1 teaspoon salt
3 tablespoons lard or 3 tablespoons shortening, the size of an egg
2/3 cup molasses
2 1/4 teaspoons active dry yeast
1/4 cup lukewarm water
5 1/2-6 cups all-purpose flour
1 -2 tablespoon butter, melted,for brushing tops,to taste
oil (for deep frying)
flour, for dusting board
powdered sugar, for dusting fish
cinnamon sugar, for dusting fish

Steps:

  • To make the oatmeal bread:Pour boiling water over oatmeal in a large mixing bowl.
  • Add salt and a egg sized scoop of shortening or lard and stir to dissolve; set aside to cool.
  • Meanwhile combine yeast in the 1/4 cup lukewarm water in a small bowl.
  • Once oat mixture has cooled, add yeast mixture and molasses.
  • Knead in enough flour to make a soft dough- amount will vary depending upon the humidity the day you make it; set aside covered, in a warm place for about 1 hour or until doubled in bulk.
  • Dump dough onto a floured surface and knead about 5-10 minutes, adding additional flour if needed prevent sticking (again- this amount will vary)- you want a smooth& elastic, dough that isn't sticky.
  • Divide into two balls and form into loaf shapes.
  • Set into greased loaf pans, cover and let rise until doubled (30-60 minutes).
  • Bake in a preheated 350 F oven for 35-40 minutes.
  • Brush tops with melted butter while still warm.
  • For Fried"Fish": Let the dough rise the first time, then punch down and chill overnight, covered.
  • Prepare a deep fryer using vegetable oil, heating oil to 370 degrees F.
  • Set dough onto a floured surface and (do not knead) roll out to 1/4 inch thickness.
  • Using a floured fish shaped cookie cutter, cut out fish shapes.
  • Tes fry a dough scrap before you begin- it will rise to the surface at once, then puff out and brown in 1 minute when oil is at proper temp.
  • Fry in small batches (don't crowd the pan), and let fried fish dry on paper towel lined plates.
  • While still warm, roll in cinnamon sugar or dust heavily with powdered sugar and serve at once.

Fresh Homemade Honey Oat Bread is great for sandwiches or toast. This delicious bread recipe is light and airy with a bit of texture from the oats.

2 cups warm water
2 ¼ teaspoons yeast (active dry yeast, 1 packet)
¼ cup honey
¼ cup olive oil
1 cup old fashioned oats
1 teaspoon salt
2 cups all-purpose flour
2 - 2½ cups white whole wheat flour
¼ cup oats (optional)

Steps:

  • In a large bowl of a stand mixer, mix water, yeast and honey. Let stand for 5 minutes until bubbly.
  • Mix in olive oil, oats and salt
  • Mix in all-purpose flour.
  • Mix in white whole wheat flour 1/2 cup at a time. You might not need all the flour. Reserve the final 1/2 cup to determine if needed. Dough should be tacky, but not overly sticky.
  • Knead dough in stand mixer for 5 -8 minutes
  • Place dough in a greased bowl, cover with plastic wrap and let sit for at least one hour, or until doubled.
  • Gently deflate dough by pressing your fist into the center of the dough.
  • Divide dough in two and shape into two loaves. Place loaves into greased bread pans. Cover with a clean towel and let rise for 30 minutes.
  • Just before baking brush loaves with water, (or egg white mixed with 1 Tablespoon of water) and sprinkle with oats.
  • Place in a preheated 375 degree oven and bake for 40 minutes.
  • Let cool in pan for 5 minutes. Remove and place on a baking rack until completely cooled.

This easy homemade bread recipe makes three loaves! Using your stand mixer, you can make hearty, delicious white bread for sandwiches using all-purpose flour!

4½ teaspoons instant yeast (two 0.25-ounce packets)
¾ cup + 2⅔ cups warm water (divided)
¼ cup granulated sugar
1 Tablespoon salt
3 Tablespoons butter (cubed, at room temperature)
9 to 10 cups all-purpose flour (divided)
3 tablespoons butter (melted, for brushing on top of loaf)

Steps:

  • Dissove the Yeast: In the bowl of a mixer, stir to dissolve the yeast in ¾ cup of warm water (110˚ F), and let sit for 5 minutes.
  • Add ingredients: Add the remaining 2 ⅔ cups water at same temperature, sugar, salt, room temperature butter, and 5 cups of the flour to mixer bowl. Stir to combine.
  • Add remaining flour 1 cup at at time and knead: Using a dough hook, mix on low speed and gradually add the remaining 4 -5 cups of flour one cup at a time until the dough is soft and tacky, but not sticky (you may not need to use all of the flour). Continue to knead using dough hook until a soft ball of dough forms and clears the sides of the bowl, about 7 to 10 minutes.
  • Let bread dough rise: Place the dough in a lightly greased bowl and turn it over so it is completely coated. Cover loosely with plastic wrap or a kitchen towel and set in a draft-free place to rise until doubled in size, about 45 minutes to 1 hour. (I used bread control on oven and set temperature to 100˚ F.)
  • Divide the bread dough: Turn the risen dough out onto a clean, lightly floured surface. Gently press it all over to remove any air pockets. Divide the dough in three parts (1.5 pounds each) and, working with one piece at a time, gently pat it into a 9x12-inch rectangle. Roll up the rectangle, starting on the short end, into a very tight cylinder. Pinch to seal the seams and the ends, tuck the ends of the roll until the bread, and place seam down into greased 9-inch loaf pans with parchment paper only on the bottom.
  • Let bread dough rise again: Cover the loaves loosely with a towel and place in a draft-free area until doubled in size, 30 to 45 minutes. While bread rises, preheat oven to 400˚ F.
  • Bake: Brush the loaves with some of the melted butter. Bake the loaves for 25 to 30 minutes, rotating halfway through, until golden brown (an instant-read thermometer inserted into the center should read 190-195˚ F). If the top of the bread starts to get too brown, form an aluminum foil tent and cover after 15 minutes.
  • Let cool: Remove from the oven and immediately brush with more melted butter. Allow to cool for 10 minutes in the bread pans. Remove from the pans and cool completely on a cooling rack before slicing, about 50 minutes.
