KIDS CORNBREAD
This makes a sweet corn bread that is a great after school treat at our house. Very easy and quick to mix.

Steps:
- Preheat oven to 400.
- Put about 2 tablespoons butter in a square pan and set it in the oven while mixing the batter.
- Mix the dry ingredients and then add the wet ingredients, stirring just until moistened.
- Pour batter into hot pan with the melted butter in it.
- Bake for about 20 minutes or until knife inserted in center comes out clean.

CORN BREAD
Steps:
- Place chipotle chile in a small pot and add 1/2 cup of water. Bring to a boil, cover and remove from heat until cool. When cool, remove stem and seeds from chipotle and chop finely.
- In a large bowl, combine the cornmeal, flour, baking powder, sugar, salt and baking soda. Melt the butter in a medium skillet over medium heat. Cook the onions until soft, about 5 minutes. Add chopped chipotle and set aside.
- Grease a cast iron skillet (6 inches in diameter and at least 1inch deep), with 1 teaspoon of the shortening and heat skillet in a 450 degree oven for 10 minutes. Add the remaining shortening to the cornmeal mixture and blend until it resembles coarse crumbs. Add the onion mixture and gradually stir in the buttermilk so that batter that barely holds its shape. Stir until just mixed.
- Pour batter into the hot skillet and bake it in the middle of a 450 degrees oven for 10 to 12 minutes. Cool for 5 minutes in the pan. Place a rack over the skillet, turn skillet over and invert bread onto rack.
THE KIDS' CORN BREAD

- Preheat the oven to 400 degrees F (375 degrees if using a Pyrex or dark-finish pan). Grease an 8-inch round metal or Pyrex pan or a ceramic souffle dish.
- Combine the flour, cornmeal, wheat germ, baking powder, and salt in a large bowl.
- Make a well in the center of the dry ingredients and add the egg, buttermilk, butter, honey, and marmalade. Using a large spoon or dough whisk, stir just until all of the ingredients are moistened yet thoroughly blended; take care not to overmix.
- Pour the batter into the prepared pan and bake on the center rack of the oven for about 20 to 25 minutes, or until dark golden around the edges and a cake tester inserted in the center comes out clean. The top should feel firm to the touch. Let stand for 30 minutes in the pan before cutting into thick wedges
OLD FASHIONED SOUTHERN CORNBREAD

Steps:
- Grease an 8-inch round or square baking pan (or, for more authenticity, a cast iron skillet). Preheat oven to 425. Place pan in oven to preheat.
- Combine cornmeal, flour, salt, and sugar in mixing bowl. Add corn oil and use a cutting motion with spoon so that oil will be well blended with other ingredients. Add the boiling water and mix well.
- Add cold milk and stir. Let stand for a few minutes until batter has cooled to room temperature.
- Mix in egg and then baking powder; beat briskly.
- Remove preheated pan from oven and pour in batter. Bake until lightly browned (approx. 20 minutes).

- Heat the oven to 400°F. Spray the bottom and sides of an 8-inch square pan or 9-inch round cake pan with the cooking spray.
- In a 1-quart saucepan, heat the butter over low heat until melted.
