PISTACHIO CRUSTED SALMON

1 (2 to 3-pound) side salmon, skin on
2 lemons, juiced
4 tablespoons stone-ground mustard
1 cup shelled pistachio nuts
1/2 cup panko bread crumbs
4 tablespoons canola oil
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 375 degrees F.
  • Arrange the side of salmon on an oven proof baking sheet, skin side down. Mix the lemon juice and mustard together in a small bowl and spread sparingly over the top of the salmon.
  • Coarsely grind the pistachios in a food processer. Add the panko bread crumbs, the oil and salt and pepper, to taste. (The bread crumbs should be slightly wet, as it helps the stick to the salmon.)
  • Sprinkle the pistachio mixture over the mustard to cover the salmon evenly.
  • Put in the preheated oven and bake until the salmon reaches the correct doneness, about 15 to 20 minutes. Remove from the oven to a serving platter.
  • Remember the fish needs to rest outside of the oven for at least 5 minutes. It will continue to cook, so remove the salmon from the oven with this in mind. Enjoy.

2 salmon fillets (approx. 4-6 oz. each ,skin on (wild King or your favorite variety))
Salt and pepper to taste
½ lemon (juiced)
1/4 tsp lemon zest
1 Tbsp course grain mustard (or Dijon)
1 Tbsp honey
¼ cup pistachio nuts (shelled)
2 Tbsp panko bread crumbs
1 Tbsp olive oil (or avocado oil)

Steps:

  • Preheat oven to 375F
  • Rinse salmon and pat dry with paper towel. Arrange salmon on a foil (or parchment paper) lined baking sheet, skin side down. Sprinkle salt and pepper to taste.
  • In a small bowl, combine lemon juice, lemon zest, mustard and honey. Spoon mixture and spread evenly over top of each salmon fillet.
  • Coarsely chop pistachios in a food processor (or with a knife ) and combine with panko and olive oil. Spread pistachio mixture on top of salmon, pressing lightly to adhere.
  • Bake until salmon is cooked through to your liking and pistachios are golden brown, approx. 15-20 min. Let salmon rest 5 min.(outside of oven) before serving (Salmon will continue to cook during this time so keep this in mind when removing salmon from oven) .

2 tablespoons panko bread crumbs
1 tablespoon grated Parmesan cheese
1 tablespoon butter, melted
4 (6 ounce) fillets salmon with skin, center cut
salt and ground black pepper to taste
2 tablespoons olive oil
1 tablespoon Dijon mustard
4 lemon wedges

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine pistachios, panko bread crumbs, Parmesan cheese, and butter in a small bowl; stir with a fork until evenly combined.
  • Lightly season salmon fillets with salt and pepper on both sides.
  • Heat olive oil in a large oven-safe skillet over medium heat. Sear salmon fillets, flesh-side down, for 2 to 3 minutes. Turn heat off and flip salmon pieces over so skin side is down. Brush tops of salmon evenly with Dijon mustard. Top with pistachio mixture, pressing mixture down onto salmon.

1 T Dijon mustard
1/4 cup breadcrumbs
1/2 oz pistachios, shelled (about 25)
1 clove garlic, minced
1 shallot, minced
nonstick cooking spray
salt and pepper to taste

Steps:

  • Makes 4 servings.
  • Preheat oven to 425 degrees. In a food processor or with a knife, chop pistachios until they are about the size of the bread crumbs. Mix with breadcrumbs, minced garlic and minced shallots and place on a deep plate.
  • Season fish with salt and pepper. Spread mustard evenly over one side of fillets, then press salmon into mixture on that same side.
  • Place on baking sheet coated with nonstick cooking spray. Bake 10 minutes, or until top is browned and fish is cooked through.

Roasted Pistachio Salmon with Maple Whiskey Sauce image

This sauce is so decadently delicious! The maple flavor is far more prominent than that of the whiskey, which suited my palette just right. It's perfect atop the salmon, but would be wonderful on chicken as well.

4 salmon filets
1/3 c whiskey (i use jack daniels) plus 2 tb
1/2 c butter
1/2 c maple syrup
1/2 c brown sugar, light
1/2 c pistachio nuts, chopped, dry roasted

Steps:

  • 1. Marinate salmon in 1/3 cup whiskey in zip-lock bag for at least 2 hours in refrigerator. Preheat oven to 350 degrees.
  • 2. Combine butter, maple syrup, brown sugar and 2 tablespoons of whiskey together in a saucepan. Cook on high heat till almost boil then simmer reducing heat until you have a thicker consistency, about 15 minutes. Reserve ½ of the mixture, set aside and keep warm.
  • 3. Place salmon on a foil lined cookie sheet or baking pan sprayed with non-stick spray then lightly baste with the remaining whiskey sauce on both sides. Bake for 25-30 minutes, basting twice during the baking. Time in cooking may vary depending on the thickness of the salmon. Discard the used basting sauce.
  • 4. Baste one last time with fresh reserve whiskey sauce and sprinkle with the roasted pistachios just before serving. Lightly drizzle with whiskey sauce and serve hot. Perfect with a Rice Pilaf and/or Asparagus Also, this works just fine WITHOUT the Whiskey if you don't want to cook with the liquor.

2 large salmon filets - Alaskan salmon is best.
Mustard Glaze:
½ large lemon - juice & zest
1 tablespoon honey
1 tablespoon Dijon mustard
½ teaspoon freshly ground black pepper
¼ t kosher salt
*Place all ingredients in a small bowl and whisk until combined.
Topping:
¼ cup panko-style breadcrumbs
½ cup pistachios - shelled & coarsely ground
2 tablespoons canola or olive oil
¼ teaspoon salt
¼ teaspoon black pepper
*Coarsely grind pistachios in a food processor then add all other topping ingredients. Mix well. The mixture should be moist to stick easily to the salmon.
Vinaigrette:
¼ cup Lemon balsamic vinegar (can substitute equal parts regular balsamic & lemon juice)
1 tablespoon honey
salt & pepper (to taste)
¼ cup olive oil (can lemon olive oil)
*Mix vinegar (honey, salt & pepper together in a small bowl. Slowly add the olive oil and whisk quickly to incorporate the oil.)

Steps:

  • Preheat the oven to 375F.
  • Place the salmon, skin-side down on a parchment-paper covered baking sheet.
  • Spread the mustard mixture over the salmon.
  • Sprinkle then gently press the pistachio mixture on top of the mustard layer, cover the salmon evenly.
  • Bake the salmon at 375F for 15-20 minutes.
  • When ready to serve, place the salmon on serving plates and drizzle with vinaigrette.
  • Garnish with lemon slices & zest.
  • *Note: The salmon will continue cooking after removing it from the oven.
  • ENJOY!
