The Jack Frost Winter Cocktail image

The Jack Frost is a peppy winter cocktail that will remind you that Jack Frost won't be here forever. With rum, blue curacao, pineapple juice, and coconut cream, this one packs a punch. You'll feel like you're sitting on a beach in no time!

Honey
½ cup shredded coconut (either sweetened or unsweetened)
4 ½ oz white rum
1 ½ oz blue curaçao
6 oz pineapple juice
¼ cup cream of coconut (like Coco Lopez) - see Note below

Steps:

  • Drizzle a puddle of the honey on a small-ish plate (dessert plate size is fine). Spread the shredded coconut in an even layer on another small-ish plate. Set both aside for while you mix the drink.
  • Shake all of the liquor, pineapple juice, and cream of coconut in a shaker with ice. Stick the shaker in the fridge while you garnish the glasses.
  • Turn a martini glass upside and dip the rim into the honey, all the way around. You'll want a good coating for the coconut to stick to.
  • Move the upside down glass to the second plate and set it down in the shredded coconut. Ease the coconut onto the honey on the inner and outer rim of the glass, pressing lightly as you go to help it stick. Repeat with the remaining glasses.Note: It will help to keep the finished glasses in the fridge on a platter so the honey stays cold which will help prevent it and the coconut from running down the glass.
  • Give the drink mix another quick shake and quickly strain it into the garnished martini glasses. Serve!
