Pikelets image

Smaller than pancakes and fluffier than crepes, pikelets make a great breakfast or snack. Serve with jam and cream or a hearty dollop of lemon curd.

Number Of Ingredients 7

1 cup self-raising flour
1/4 teaspoon bicarbonate of soda
1/4 cup caster sugar
1 lightly beaten egg
3/4 cup milk
30 gram butter, melted
jam, whipped cream, to serve

Steps:

  • Sift flour and soda together into a medium bowl. Stir in sugar. Make a well in centre. Gradually stir in egg and enough milk for a smooth, pouring consistency. Rest 15 minutes.
  • Heat a large, non-stick frying pan on medium. Brush with butter. Working in 3 batches of 6, drop tablespoons of batter into pan, allowing room for spreading. Cook 1-2 minutes, until bubbles appear on surface. Turn and cook 1 minute further, until golden. Brush pan with butter between batches.
  • Transfer cooked pikelets to a wire rack. Serve warm with jam and cream.

Yummy golden little pancakes served warm with jam or honey. Every Australian would have made these many times throughout their youth. My son had his little friend over today and I ended up making a second batch because the boys gobbled them up and begged for more.

Number Of Ingredients 4

1 large egg
1/4 cup sugar (use vanilla sugar if you have it, or as some reviewers have suggested ...add 1/2 to 1 teaspoon of va)
1/2 cup milk (1-2 tbsp extra may be required for correct consistency)
1 cup self raising flour

Steps:

  • In a pouring jug, whisk together well the egg, sugar and half of the milk.
  • Add the flour and mix thoroughly.
  • Then add milk until the batter is the consistency of a thick cream.
  • Beat until smooth.
  • Pour about a soup spoon sized amount onto a preheated lightly greased frypan (You will need to start about medium high heat but after a few rounds you will need to drop it back to medium).
  • Flip with a spatula when the top is all bubbly (should be a lovely golden colour), and cook the other side.
  • Remove from pan and pile piklets up on a plate (cover with a paper towel so they don't go rubbery).
  • Serve with jam, honey or maple syrup etc.
  • Enjoy.

Unlike American pancakes, the Australian pikelets can be purchased ready-made in grocery stores. You can eat the cold or hot and they are typically topped with cream, jam, fruit or butter and sugar! They are handle for snacks and lunches. I found these on an Australian website. Enjoy!

1 cup self-raising flour
1 pinch salt
1/4 teaspoon baking soda
6 fluid ounces milk
1 egg
2 tablespoons sugar
2 teaspoons butter, melted
1/2 teaspoon vanilla

Steps:

  • Sift together flour, salt and baking soda into a large bowl.
  • Place milk, egg, sugar, butter and vanilla in the center of the flour mixture.
  • Beat until smooth and a thick pouring consistency.
  • Heat greased frying pan over medium high heat. Drop batter by the spoonful into pan.
  • Cook until you see bubbles appear.
  • Turn the pickelets over with a spatula and continue cooking until the underside is light brown.
  • Remove from pan and place on a cloth or between layers of paper towel to cool.

1/2 cup milk (one or two extra tbsp may be required for correct consistency)
1 cup self-rising flour

Steps:

  • In a pouring jug, whisk together well the egg, sugar, and half the milk.
  • Add the flour, and mix thoroughly.
  • Then add milk until the batter is the consistency of a thick cream.
  • Beat until smooth.
  • Pour about a soup spoon-sized amount onto a pre-heated, lightly greased frying pan. You will need to start about medium-high heat, but after a few rounds, you will need to drop it back to medium.

  • Whisk flour, baking powder and sugar in a bowl. Make a well in the centre, add egg, milk and vanilla. Whisk until the batter is almost lump free - a few small ones is ok. The batter should be the consistency in between maple syrup and tomato sauce - see photo above in post.
  • Melt butter in a NON STICK skillet over medium high heat. Then WIPE all the butter off with a paper towel so there are no visible drops of oil. This is how the first batch comes out beautifully golden instead of splotchy.
  • Place 2 tbsp of batter (or 1/2 filled ice cream scooper which is what I use) into the skillet. Cook until bubbles appear on the surface (see photo) then flip and cook the other side until golden (usually around 1 - 1 1/2 minutes). Repeat with remaining batter.
