GOLD COAST STEW
Back in the early 1970's my mom belonged to a recipe card club...this is from one of those sets. It looks yummy so decided to post it for safe keeping. Haven't tried it yet. Please note the list of possible accompaniments listed below. Will edit once I do. Let me know if you like it!

Steps:
- In large skillet, cook and stir peppers, garlic and onion in butter until onion is tender. Drain off fat. In medium bowl, blend tomato paste and peanut butter; stir in broth and seasonings.
- Add bvroth mixture and chicken to skillet. Cook and stir over low heat until heated through. (If stew is too thick, stir in additional chicken broth.) Serve over rice; pass your choice of accompaniments.
- Accompaniments:.
- chopped green pepper.
- shredded coconut.
- chopped peanuts.
- sauteed bananas.
- chopped green onion.
- tomato diced.
- eggplant slices.
- pineapple cubes.
- *Chicken broth can be made by dissolving 3 chicken bouillon cubes in 3 cups boiling water.

Oysters Kilpatrick are an Australian Classic - so tasty and easy to make. Fresh oysters, Worcestershire sauce and Bacon under a grill. If you haven't eaten Oysters Kilpatrick, you haven't eaten oysters!

Steps:
- Preheat grill on high, or set oven to grill.
- In a small bowl, mix together the strips of bacon and Worcestershire Sauce.
- Place the rock salt on a baking tray, deep enough for the oysters to keep level while cooking. Position oysters on the rock salt, and spoon the bacon on top of the oysters.
- Grill the oysters for 5-10 minutes, or until the bacon is cooked and crispy. Serve immediately with a lemon wedge.

The Gold Coast is my take on a daiquiri. I love rum. I love lime juice and sugar. It is such a beautiful cocktail, but what I wanted to do is create a rum punch of sorts, and that's what the Gold Coast is.

Steps:
- In a shaker, add lime juice, pineapple juice, simple syrup, and rum. Fill with ice, cover, and shake. Remove cover and pour into a serving glass with ice. Top with champagne or sparkling wine. Stir with a cocktail spoon. Garnish with an orchid and a lime wheel.
