THE ELEGANT EGGLESS OMELET!
These tender, fluffy, egg free omelets are great all by themselves or topped with sour cream. You can also serve them stuffed with fruit or vegetables, or beans! They are surprisingly easy and quick to make. Adapted from Vegan Vittles cookbook by Jo Stepaniak.

Steps:
- Place flour, nutritional yeast flakes, baking powder, salt, and turmeric in a medium bowl, stir with a whisk until well combined. Pour in the milk and oil, stirring well with the whisk to make a smooth batter. Let rest 5-10 minutes, then stir again.
- Oil a 9" or 10" nonstick skillet, or mist with cooking spray. Place over medium hot heat. Pour in 1/3 cup of batter. Immediately tilt and rotate the skillet to distribute the batter evenly and creat a 5"-6" circle Cook until the top is completely dry, the bottom is deep golden and the edges start to curl up slightly.
- Carefully loosen the omelet with a spatula and gently turn it over. Cook the second side until it also is deep golden and flecked with brown. Slide the finished omelet ou of the skillet onto a plate. Cook the remaining omelets in the same way.
- Adjust the heat as necccessary during cooking, and always add a layer of oil to the skillet before cooking each omelet, to prevent from sticking.
- Stack the cookd omelets, one on top of another, on the plate.
- To serve, fold the omelets in half(most attractive side out), or stuff the omelets with your favorite filling before folding them. Enjoy!

WW INSPIRED GREEK INFUSED EGG WHITE OMELET
I'm on Weight Watchers and I used to follow a low carb plan. I missed the big omelets that I used to make when I was low carbing it. I use the egg white substitue that comes in a carton (Better than Eggs or Egg Beaters) and the Birds Eye Pepper Stir Fry Frozen Mix because I'm usually pressed for time. This is so good with the mixed veggies and spinach, the tanginess of the feta, and the oregano. All for only 8 points! This makes a big omelet, so if you split it it's only 4 points! Enjoy!

Steps:
- In a nonstick 8 inch skillet heat the oil over medium-high heat until hot but not smoking.
- Add the frozen vegetables, stirring often, until they soften and heat up.
- Add the fresh spinach, and cook, until spinach wilts and is heated through.
- Pour the egg whites over the vegetables and when the edges begin to set, push inward with a spatula to allow uncooked egg to go to the sides. Tilt pan if necessary to make sure the egg whites cook evenly.
- When egg mixture is almost set, top with the feta and parmesan cheese. Sprinkle the oregano and salt and pepper on. Fold in half, and allow to cook 1-2 minutes longer so the cheese will melt. Transfer to a plate and eat!

FLUFFY ITALIAN OMELET
I'm not sure this is really an Italian Omelet, but that is what my mom always called it. Very simple and tasty.

- Mix all ingredients together and beat well.
- Heat skillet and spray with cooking spray.
- Pour egg mixture into pan and cook until almost set; fold omelet in half and cook about 30 seconds longer.

SWEET FLUFFY OMELET WITH RASPBERRIES
This recipe takes like no time to prepare and omelets are really really fluffy! It is great for breakfast or desert. I like them with sweet cream cheese and raspberries, but you can serve it with whatever you like. And the omelets are even tasty without any additions.

Steps:
- Separate whites from yolks.
- Beat egg whites with a whisk or an electric mixer until stiff.
- Add egg yolks, sugar and flour and blend it together. Make it quickly so that the mixture is still fluffy.
- Heat the oil in skillet over low heat. Add the mixture to the pan, cover with the lid and fry for 1-2 minutes.
- Flip the omelet and fry for 30 seconds.
- When the omelet is done spread the vanilla cream cheese on the top.
- Add raspberries or other fruit on top and sprinkle with cacao.
