You're going to love how fast it is to cook Instant Pot Red Potatoes that have the perfect texture. This easy recipe is a healthy side dish that has so much flavor and is ready in just over 20 minutes.

1.5 pounds red potatoes (about 12 medium potatoes or 16 small potatoes), scrubbed and halved
1 cup reduced-sodium vegetable broth
2 teaspoons dried Italian seasoning or dried parsley
½ teaspoon garlic powder
½ teaspoon sea salt
¼ teaspoon ground black pepper
2 tablespoons butter, ghee, or vegan butter

Steps:

  • In the base of a 6-quart pressure cooker, combine the halved potatoes, broth, Italian seasoning, garlic powder, sea salt, black pepper. Stir gently to combine.
  • Place the butter on top and lock on the lid.
  • Set the time to 7 minutes at high pressure.
  • When the cooking time is complete, carefully use the quick release to release the pressure and remove the lid.
  • Stir the potatoes and transfer to a serving dish.
  • Serve hot.

2 pounds small red potatoes, quartered
½ cup butter
½ cup milk
¼ cup sour cream
salt and pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Add potatoes, and cook until tender but still firm, about 10 minutes. Drain, and place in a large bowl.
  • Combine potatoes with butter, milk, sour cream, salt, and pepper. Mash together until smooth and creamy.
