- Split bread in half lengthwise; cut into four pieces. Fry eggs in a large non-stick skillet coated with cooking spray until yolks are set. Layer bread bottoms with salami, ham, egg and cheese; replace tops., Cook on a panini maker or indoor grill for 2 minutes or until bread is browned and cheese is melted.

THE CUBAN MISSILE CRISIS BREAKFAST SANDWICH
This combination of a classic Cuban sandwich and a delicious Egg-McMuffin-Style breakfast sandwich is one of the best breakfast sandwiches I have ever toyed with. The pork I use is simply leftovers from whenever I cook up a pork loin.

Steps:
- Split English muffin. Break up the pepper jack so that the slice can be distributed across both halves of the muffin. Toast to medium.
- In a non-stick skillet on medium-high heat, heat Canadian bacon and Pork. Both are already cooked, so this is merely to get them hot again. Once cooked, removed pork and bacon to a plate and place in warmer if possible.
- In the same skillet cook eggs to preference. I prefer over easy or medium so the yolk stays runny. A Teflon ring helps to keep the egg the proper size. Poaching is also a possibility.
- Once toasted, spread mustard on the bottom side of the English muffin and the relish on the top. Layer pork, then egg, then bacon.
- Season with salt and pepper as necessary.
- Enjoy!

- In a medium nonstick skillet over medium heat, cook bacon, flipping occasionally, until browned and crispy. Drain on a paper towel-lined plate.
- Drain bacon fat, leaving about 1 teaspoon behind. Place croissant halves cut side down in skillet and toast until golden. Remove from pan and wipe out skillet.
- Lightly beat eggs with salt and pepper.
- Add butter to pan and swirl to coat.
- When foaming subsides, add eggs, tilting pan so the bottom surface is covered. Using a rubber spatula, push cooked edges of eggs towards the center, swirling to move uncooked eggs to outer rim of pan.
- When most of the egg is cooked, add American cheese to middle and fold edges inward to create a square.
- Transfer egg square to toasted bottom half of croissant, topping with bacon and avocado. Season with salt, pepper, and red pepper flakes.
- Top with croissant top and serve immediately.

This breakfast is cheap and has always gotten me through some rough test mornings. Its easy to make a dozen and throw them in the fridge. My husband loves them and takes them to work.

- Brown sausage over medium heat. Drain sausage and let cool.
- Meanwhile, make scrambled eggs to desired consistancy. Set aside and cool.
- Once sausage and eggs are cooled completely begin making breakfast sandwich.
- Cut apart english muffins, top with eggs and sausage. Then place one slice of cheese on top of mixture. Place other side of muffin on top.
- Place one sandwich in a plastic bag and store in fridge. Easy to reheat in microwave.

- Bring a medium pot of water and vinegar to a simmer (vinegar helps the eggs to set). Meanwhile, in a medium bowl, use a fork to coarsely mash the beans with lime juice, cumin and salt. Stir in half the coriander. In a small bowl, stir peanut butter with mayonnaise and adobo peppers.
- Crack one egg into a small ramekin or bowl. Slide egg into simmering water. Repeat with the second egg. Simmer for 3 minutes. While eggs are cooking, split and toast English muffins. Remove eggs, one at a time, using a slotted spoon. Pat dry with paper towel and set on a plate.
- Spread both sides of English muffins with peanut butter mixture. Top base with bacon if using, then tomato slices, dollops of black bean mash, egg and coriander. Finish with tops of English muffins to form 2 sandwiches.
- Tip: Swap out the poached egg for a fried or scrambled egg, if preferred.

- Cut French loaf lengthwise.
- Spread butter on top and bottom. Generously add mustard, don't be shy!
- Layer ham, cheese, pickles and cucumber. Add salt and pepper to taste.
- Put top on the sandwich and cut into 3 or 4 equal pieces.
- Heat pan to medium-high temperature.
- Baste top of one section with olive oil and place oiled side down in pan. Baste other side with olive oil.
- OR Heat sandwich press or plancha to medium-high. Only use the flat side, no grooves on this sandwich! Close until toasted and cheese is melted!
- For pan - Place heavy item on top of sandwich - I used 2 nested pots. Toast for 5 minutes.
- Turn sandwich over and toast for another 5 minutes.
- Turn the heat down and put a lid on the pan to finish the melting. I can see how a sandwich press might do a better job because it's not easy to heat through if you have too many layers.
- Cut each sandwich diagonally and enjoy!

- Toast bread.
- Heat Smart Balance or oil in non-stick pan on medium high.
- Meanwhile, microwave Boca burger in package (just open it on one side) for 2 minutes.
- When pan is hot, crack egg into it and break yolk with edge of shell.
- Sprinkle egg with salt and pepper.
- Turn egg over with plastic spatula when ready (usually about 30-45 secs).
- Cook until yolk reaches desired consistency (I like it a little gooey but mostly firm).
- While egg is cooking, spread mayo on one side of toast and put Boca burger on top.
- Put cheese on other piece of toast.
- When egg is done, put put it on top of cheese (if cheese doesn't melt, put the whole thing in the microwave for about 10 seconds).
- Put sandwich together and eat before it gets cold!
- Optional: add some hot sauce for extra kick.
