SCOTCH SHORTBREAD

Scotch Shortbread image

My best friend in high school's mom made this for me when I had my first overnight stay in a hospital. I loved it so much that I made it whenever I got the chance. When we lived overseas, my mom had to limit the number of times I could make it because butter was so expensive. Now it's part of my Christmas baking. Very rich and good!

PERFECT (AND EASY!) SHORTBREAD

Perfect (And Easy!) Shortbread image

This is from the back of the Canada Cornstarch box - I've been making it for years. Four ingredients, and it comes out tasting and looking perfect each time. For fun I like to add coloured sugar sprinkles for the holidays! (P.S. I learned how to bake with this recipe, so that tells you how easy it is!)

Time 1h5m

Yield 24 cookies

Number Of Ingredients 4

1/2 cup cornstarch
1/2 cup icing or 1/2 cup powdered sugar
1 cup flour
3/4 cup softened butter

Steps:

  • Sift together the cornstarch, icing (powdered) sugar and flour.
  • Blend in butter until a soft smooth dough forms.
  • Shape into 1" balls and chill 30 -60 minutes.
  • Place 1 1/2" apart on a cookie sheet and flatten slightly with a floured fork. (omit if throwing sprinkles on, and/or don't like fork flattened shortbread - I don't and it still comes out just fine)
  • Bake 300' for 15-20 minutes. Transfer to a rack and cool. Watch that they don't brown, you want to pull them out while they still look a smidge underdone - the idea is that they do not brown on the bottom.

THE CONFEDERATE WIDOW'S SHORTBREAD

The Confederate Widow's Shortbread image

"The Oldest Living Confederate Widow Tells All" is an unlikely place to find a shortbread recipe. I have adapted the recipe which is found in the novel written by Allen Gurganus, 1984, page 761 (paperback version). Alfred a Knopf Inc., publisher. You can use all flour instead of the flour and cornstarch. Using the combined flour and cornstarch gives shortbread a melt-in-the mouth buttery goodness,
