LIGHT AND FLUFFY LEMON POUND CAKE
I know that the description is a bit of a misnomer, but that is what it is. This cake has a light taste. It is not too sweet, but it has plenty of sugar. It is not as dense as most pound cakes.

Steps:
- Pre-heat oven to 350 degrees.
- Sift together the flour and baking soda in a small bowl.
- In a large bowl, cream butter, sugar, cream cheese, and salt together.
- Beat in each egg one at a time. Add the flavors.
- Combine the flour mixture to the wet mixture.
- Finally add the buttermilk.
- Bake in a loaf pan for 50 minutes.

THE POLISH CHURCH POUND CAKE
Years ago this was THE most popular and coveted recipe at the Polish church of my youth. The flavoring most used was a butter/vanilla/nut flavoring combination sold locally. The cherries and nuts were not cut fine; thus they formed a pretty pattern in a slice of cake. The cake is moist and flavorful with a lovely texture. Very important to start baking in a COLD OVEN!. And the baking time is LONG! No icing needed. Or wanted!

Steps:
- Cream Crisco, margarine, sugar and salt.
- Add eggs one at a time and beat.
- Add flour and milk alternately, ending with flour.
- Add flavoring. Add nuts. Add cherries cut in half.
- Bake in greased and floured tube pan or Bundt pan.
- Bake 1 hour and 45 minutes (or longer) at 300 oven.
- START IN COLD OVEN. DO NOT OPEN DOOR WHILE BAKING.
- Remove from pan immediately. Do not ice.

This Lemon Pound Cake is a Heirloom recipe in my family!! It is so good my grandmother used to hide it in the freezer. It's a winner and the perfect dessert for your church potluck and Sunday dinner!!

- 1. Cream butter and sugar together; add eggs one at a time, beating thoroughly. Add lemon flavor, sour cream, and miracle whip. Next add cake flour and baking powder. Mix until smooth Spray tube cake pan with Bakers Joy baking spray and Bake on 325 F for 1 hour and 30 mintues. Enjoy!!
ORIGINAL POUND CAKE FROM 1700'S ENGLAND
My mother made this recipe or some variation of it for over 60yrs. once a week. When I was in college my weekly "care package" always included this cake. In her letter she always included the same note:"be sure to share, I don't want you wearing these pounds home." I made a lot of friends from this treasure. Don't forget to have a "toasted pound" for breakfast. ummm! 1#butter, 1#flour, 1#sugar, reason for name. If recipe has mace in it, count on it coming from Low Country in S.C.
