Spinach Salad with Honey Dijon Dressing is the perfect salad for entertaining or for any weeknight meal. Easy to prepare, hearty enough for the biggest appetite, and the tangy dressing adds an extra punch of flavor. I've been making this for several years and it never gets old!

12 cups baby spinach (- pre-washed)
8 ounces mushrooms (- sliced)
1/3 cup red onion (- thinly sliced)
8 slices bacon
6 eggs (- hard boiled)
6 Tablespoons olive oil
3 Tablespoons red wine vinegar
1.5 Tablespoons honey
1 Tablespoon dijon mustard
salt & pepper to taste

Steps:

  • Snap the stems off the baby spinach, and add the spinach leaves to a large salad bowl.
  • Slice the mushrooms (or use pre-sliced) and the red onions. Add them to them bowl.
  • Cook the bacon (or use pre-cooked), and crumble. Add to bowl when slightly cooled.
  • Boil the eggs. You can use stove-top or instant pot method. When cooled, add to the salad.
  • Make the dressing by mixing all ingredients and firmly shake until well mixed. Drizzle on salad and serve immediately.

¾ pound fresh spinach
2 hard-cooked eggs, sliced
2 tablespoons sweet onion, chopped
2 tablespoons chopped raw almonds
1 tablespoon raw sunflower seeds
½ cup vegetable oil
½ cup ketchup
¼ cup cider vinegar
2 tablespoons brown sugar
1 tablespoon Worcestershire sauce
1 clove garlic, minced
1 teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Arrange bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon on paper towels and crumble.
  • Layer spinach, bacon, eggs, and onion in a large bowl. Sprinkle with almonds and sunflower seeds. Whisk vegetable oil, ketchup, vinegar, brown sugar, Worcestershire sauce, garlic, salt, and black pepper in a bowl; pour over spinach mixture and toss. Serve immediately.

Spinach salad with a simple dressing made from lemon juice & olive oil topped with cheese, walnuts, and cracked black pepper.

5oz baby spinach
1 tablespoon lemon juice
3 tablespoons olive oil
1/3 cup grated parmesan or Romano cheese
2 tablespoons diced walnuts
fresh ground black pepper

Steps:

  • Optional: To toast the walnuts*. Add walnuts to a small ungreased skillet over medium heat. Let the diced walnuts warm up, stirring occasionally until they just begin to darken and become fragrant, this usually takes about 5-6 minutes. Remove the skillet from the heat, give the walnuts a little shake, and let the walnuts rest on the warm skillet 2-3 more minutes to finish toasting until ready to add to the salad.
  • Meanwhile add the spinach to a large bowl and drizzle with lemon juice and olive oil.
  • Toss the spinach to coat in the lemon juice and olive oil. Add cheese, walnuts, and a dash of freshly cracked pepper. Toss again and serve immediately.

12 oz bacon (, cooked (drippings and browned bits from pan reserved), crumbled, divided)
5 large eggs (, boiled, peeled and sliced)
9 oz baby spinach
6 oz button mushrooms (, sliced)
1/2 small red onion (, thinly sliced (run under cool water to remove harsh bite))
1 cup shredded or finely cubed swiss cheese
2 1/2 cups homemade or store bought croutons ((optional))
3 Tbsp reserved bacon drippings with browned bits
2 Tbsp olive oil
1/3 cup red wine vinegar
1 Tbsp dijon mustard
1 Tbsp honey
Salt and freshly ground black pepper

Steps:

  • Make the dressing: In a skillet whisk together bacon drippings with browned bits, olive oil, red wine vinegar, dijon and honey. Season with salt and pepper to taste. Allow to simmer over medium heat 1 minute. Stir in 2 slices crumbled bacon. Allow to cool slightly.
  • Assemble the salad: In a large salad bowl, toss together spinach, remaining bacon, mushrooms, red onion and swiss. Drizzle with warm dressing and toss. Add eggs and croutons to top and serve.

1 clove garlic (minced)
2 tablespoons honey
1 tablespoon unseasoned rice vinegar (or apple cider vinegar)
1/2 teaspoon freshly ground black pepper
1/4 teaspoon fine sea salt
1/3 cup extra virgin olive oil
12 ounces baby spinach
2 tomatoes (cut into wedges)
2 avocados (cubed)
8 ounces mushrooms (thinly sliced)
1 medium shallot (or 1/2 small red onion, thinly sliced)
4 strips bacon (cooked until crisp and coarsely chopped)
3 hard boiled eggs (cut into wedges)

Steps:

  • To make the salad dressing, add garlic, honey, vinegar, pepper, and salt to a blender pitcher; blend until smooth. With blender running, slowly drizzle in olive oil until emulsified. Season to taste with salt and freshly ground black pepper.
  • Add spinach to a large bowl (large enough to toss salad with dressing. Drizzle dressing over spinach and toss to coat. Add remaining ingredients (tomatoes through hard boiled eggs) and gently toss to coat. Serve immediately.

1 lb fresh baby spinach leaves
2 -3 hard-boiled eggs, finely chopped (reserve)
2 -3 tomatoes, finely diced
4 slices bacon, cooked crisp and crumbled (reserve)
1 1/8 cups cottage cheese, small curd
3/4 cup salad oil
1/4 cup cider vinegar
3 tablespoons sugar
1 tablespoon red onion, minced
2 1/4 teaspoons poppy seeds
3/4 teaspoon dried mustard
3/4 teaspoon salt

Steps:

  • Mix all salad ingredients well, reserving chopped egg & bacon. Refrigerate until serving time.
  • Just before serving, toss with dressing and top with crumbled bacon & chopped egg.
  • Note: If you can find cottage cheese with chives, it's better than plain. I also substitute chopped shallot for the red onion. Dressing quantity is ample. Add just enough to moisten salad and use remaining in another recipe.
