How to Make Thanksgiving Dressing image

This Thanksgiving dressing (or stuffing) recipe remains light and crumbly, and it doesn't get soggy or lose any of its beautiful texture after it's baked.

1 loaf cornbread (see my skillet cornbread recipe)
1 loaf Italian bread, such as ciabatta
1 loaf French bread
1 whole large onion or 2 medium onions, diced
5 stalks celery, diced
1/2 bunch parsley, chopped
1/2 c. (1 stick) butter
6 c. low-sodium chicken broth, more if needed for moisture
1/2 tsp. dried basil
1/2 tsp. ground thyme
1 tbsp. fresh rosemary, finely minced
Salt and pepper

Steps:

  • Cut all the bread into 1-inch cubes and lay them out on sheet pans. Cover with a dish towel and let them dry out for 24-48 hours until they're dry and crisp.
  • Melt the butter in a large skillet. Add the onions and celery and cook for 3-4 minutes. Add the broth, parsley, rosemary, basil, thyme, salt, and pepper and stir.
  • Put all the bread cubes in a large bowl and slowly ladle in the broth mixture, tossing as you go until the dressing has the moisture level you want. Taste and add more seasonings as needed.
  • Pour the dressing into a large casserole pan and/or the turkey cavity. Bake the casserole for 20 to 30 minutes at 375 degrees until golden and crisp on top. Serve piping hot with a turkey and gravy!

BROWN BREAD

Yield 2 country loaves

Number Of Ingredients 10

1 1/2 cups warm coffee (about 100 degrees F)
1 tablespoon brown sugar
2 1/4 teaspoons active dry yeast
2 1/4 cups bread flour
1 1/2 cups whole-wheat flour
1 tablespoon cocoa powder
1/3 cup honey
2 tablespoons salted butter, softened
2 tablespoons molasses
Olive oil, for greasing and drizzling

Steps:

  • Mix together the warm coffee and brown sugar in a small pitcher. Mix in the yeast and set aside for a couple minutes to bloom.
  • In the bowl of an electric mixer, mix together the bread flour, whole-wheat flour and cocoa powder. Add in the coffee/yeast mixture, as well as the honey, butter and molasses. With the dough attachment, mix on medium until a ball begins to form, about 2 minutes. Reduce the speed to low and knead for an additional 6 minutes.
  • Grease a large bowl with olive oil; put the dough in it and cover with plastic wrap. Place in a warm spot in the kitchen and let rise until doubled in size, about 2 hours.
  • Divide the dough in half, form into 2 tight balls and put on a baking sheet. Drizzle the tops with olive oil and cover very loosely with plastic wrap. Allow to rise again for 45 minutes to 1 hour.
  • Preheat the oven to 375 degrees F.
  • When the dough is ready, remove the plastic wrap. With a serrated knife, cut an X in the top of each round. Carefully transfer the dough to two 10-inch cast-iron skillets. Place both skillets on the center rack of the oven and bake until the crusts are browned and the centers are set, about 30 minutes. Transfer to a cooling rack and allow to cool for at least 15 minutes before slicing.

1 loaf French bread, sliced lengthwise
1 cup salted butter, Softened

Steps:

  • Preheat oven to 350 degrees.
  • Spread one stick of softened butter on each half of the loaf (That's one stick per half loaf. Yes, you read that right. The idea here is that every speck of the surface of the bread needs to be coated.).
  • Place on a cookie sheet and bake for 10 minutes, or until butter is melted and starting to soak into the bread.
  • Crank on broiler and broil bread for 3 to 5 minutes, watching the whole time. Remove when butter has started to brown and blacken. Don't under-broil it! The flavor really kicks in when the butter's color changes (The goal here is to broil the bread to the point that the butter becomes very dark brown and, in just a few areas, begins to burn. When that happens, the flavor shows up. If you don't take it to the next level, it will just be buttered, warm bread. Which is fine, and all...but it's not The Bread).
  • Slice into strips and serve immediately (When I serve this, I slice it on a cutting board into relatively thin (because it's so rich) strips).

CINNAMON S'MORES TOAST



Cinnamon S'mores Toast image

1 tablespoon sugar
1/4 teaspoon ground cinnamon
4 slices cinnamon swirl bread
4 teaspoons butter, at room temperature
4 tablespoons semisweet chocolate chips
1 cup mini marshmallows

Steps:

  • Preheat the broiler and set a rack close to the broiler.
  • Combine the sugar and cinnamon in a small bowl.
  • Put the bread on a sheet pan and toast the bread lightly on both sides under the broiler. When the bread is hot, spread each piece with 1 teaspoon butter. Sprinkle the cinnamon sugar equally among the slices of toast. Top with equal quantities of the chocolate chips. Finally, lay 1/4 cup of the mini marshmallows on each slice.
  • Place under the broiler and broil just until the marshmallows are golden brown, watching them so they don't burn, about 1 minute. Serve immediately.

PUFF PASTRY BRAID

One 9-inch square sheet frozen puff pastry, thawed
All-purpose flour, for dusting
1/2 cup chocolate-hazelnut spread
1/4 cup salted roasted peanuts, chopped
1 large egg, beaten
Pinch sea salt
1/2 cup powdered sugar
1/2 teaspoon vanilla extract
Splash of milk

Steps:

  • Preheat the oven to 375 degrees F. Line a sheet pan with parchment.
  • Lay out the puff pastry on a lightly floured surface. Imagine the pastry has 3 equal sections. Add the hazelnut spread to the center section and, using a knife, cover the center section with the spread, leaving a 1/2-inch border at the top and bottom. Sprinkle the peanuts over the chocolate hazelnut spread.
  • Using a sharp knife, cut the 2 outside sections into six 1-inch horizontal strips just to the center section.
  • Fold the 1/2-inch borders at the top and bottom inwards, over the edges of the chocolate filling. Next, starting at one end, begin folding the pastry strips over the filling, alternating the sides to create a braid appearance. Put the braid on the parchment-lined sheet pan.
  • Brush the pastry braid with the beaten egg and sprinkle with the sea salt. Bake until golden and cooked through, 28 to 30 minutes.
  • While the pastry bakes, make the icing by whisking the powdered sugar, vanilla and milk in a bowl until smooth. Set aside.
  • Allow the pastry to cool for 10 to 15 minutes. Drizzle over the icing, slice and serve.

ARTY HOLIDAY BREAD

3 tablespoons olive oil
1 pound frozen white bread dough, thawed
1/2 cup red and yellow cherry tomatoes, halved
1/2 cup olives, pitted
2 tablespoons fresh sage leaves
2 tablespoons fresh rosemary leaves
2 teaspoons flaky sea salt
1/4 cup finely grated Parmesan

Steps:

  • Oil a quarter sheet pan with 1 tablespoon of the oil and stretch out the bread dough to the edges. Allow the dough to rest and rise for 15 minutes.
  • Preheat the oven to 450 degrees F.
  • Brush the surface of the bread with another tablespoon of the olive oil. Decorate the bread with the tomatoes, olives, sage and rosemary, pressing them into the bread. Brush on the remaining olive oil; this will make it shiny and stop the vegetables burning. Sprinkle on the salt and Parmesan.
  • Bake until it is golden brown, 20 to 25 minutes.
