I love this squash recipe served at the Black-Eyed Pea Restaurant. The recipe was posted in response to a request, but it's been a family favorite ever since it was posted in the local paper years ago. A true Southern favorite.

5 lbs yellow squash
2 eggs
1 cup breadcrumbs
4 ounces butter
1/4 cup sugar
2 teaspoons salt
2 tablespoons finely chopped onions
1 dash pepper

Steps:

  • Cut the tops off the squash.
  • Cut in 3- 4 pieces.
  • Boil in water til tender (just a few minutes).
  • Drain and mash.
  • Add remaining ingredients.
  • Place in casserole dish.
  • Cover with light layer of breadcrumbs.
  • Bake at 350 til lightly browned (about 10- 15 minutes).

Squash Casserole(like Black Eyed Pea Restaurant) image

Even if you don't like yellow squash, you've got to try this. It almost tastes like fresh sweet corn! This is a copycat recipe of the Black Eyed Pea Restaurant's squash casserole. They are well known for their southern country veggies!

Number Of Ingredients 11

5 lb medium yellow summer squash, cleaned and cut into 2" lengths
1/2 c chopped onion
1 c soft bread crumbs(crumble a few slices of bread/rolls in a food processor)
2 large eggs
1 stick butter
1/4 c sugar
1 tsp salt
1/2 tsp black pepper
BREADCRUMB TOPPING
1/2 c soft bread crumbs
2 Tbsp butter, melted

Steps:

  • 1. Cut tips off squash and cut each squash into 3 or 4 pieces. Drop squash and chopped onion into a large saucepan with enough boiling water to cover. Return to boil, reduce heat and cook until tender. Drain well in colander and mash, allowing excess liquid to drain.
  • 2. Combine with beaten eggs, 1-cup breadcrumbs, butter, sugar, salt, onion, and pepper. Turn into a greased 3-quart casserole.
  • 3. Toss remaining bread crumbs with melted butter and sprinkle over top of casserole. Bake at 350 degrees for 30 minutes, until lightly browned.

I hope you enjoy her recipes as much as we do. I have not made each one yet-so cooking time and servings may vary. 5 lbs medium yellow squash
2 eggs, beaten
5 -6 whole wheat rolls, torn into bits (rumor is the Black Eye Pea uses its whole wheat rolls)
1/2 cup butter
1/4 cup sugar
1 dash salt
1 dash pepper
1 small onion, chopped

Steps:

  • Cut squash and onion in pieces, boil together, then reduce heat until tender.
  • Drain & mash squash some.
  • Combine squash,onion, eggs, bread bits, butter,sugar, salt .
  • Put into a 3 quart dish that has been oiled.
  • Bake at 350 until lightly browned.
  • Sometimes I toss in some velveeta - when the kids were small they liked it with the cheese.

2 cups breadcrumbs
1/2 cup butter
1/4 cup sugar
2 tablespoons onions, chopped
salt
pepper

Steps:

  • Preheat oven to 350 degrees.
  • Bring a large saucepan of water to boil.
  • Add Squash. Return to a boil, reduce heat and cook until tender.
  • Drain and mash.
  • Stir in eggs, crumbs, butter, sugar, salt, onion and pepper.
  • Spoon mixture into greased casserole dish.
  • Sprinkle a light layer of bread crumbs on top.
  • Bake 30 to 40 minutes or until lightly browned.

4 OZ Butter or Marg. (1 Stick)
1/4 Cup Sugar
2 TBS Chopped Onion
Salt as needed
Dash of Pepper

Steps:

  • Cut off tips of squash,& cut ea. in 3-4 pieces. Drop into Lg saucepan, with enough water to cover squash. Return to boil reduce heat & cook until tender,drain in colander then mash coarsley. Combine with beaten eggs,almost all bread crumbs,butter,sugar,salt,onion,& pepper.Cover with a light layer of bread crumbs use about 1/4-1/3 cup reserved for this. Bake at 350* until lightly browned.
