BLUEBERRY VEGAN PANCAKES
You won't be able to tell that these Blueberry Vegan Pancakes are vegan - made without eggs, milk, or butter. These pancakes are incredibly thick and fluffy, and soak in just the right amount of maple syrup. Feel free to swap out the blueberries for bananas, add in some nuts, or even a touch of cocao powder.

Steps:
- Heat a griddle or large skillet (preferably cast iron - see notes) on medium-low to medium heat. Using a paper towel, rub on a bit of oil. Each pancake takes about 8 minutes total to cook, so if you can only fit one pancake on your griddle, use 2 pans at once to reduce the total cooking time.
- In a large bowl, mix together all the dry ingredients, except the blueberries. Make a well in the middle and add in all the liquid ingredients. Mix with a fork until everything comes together. The batter should be mostly smooth, but a few small lumps are fine.
- When your griddle is evenly pre-heated (around 10 minutes if you are using cast iron), drop on a bit less than 1/2 cup of batter on the heated pan, and lightly spread the batter with the back of the spoon to make a round. Quickly place on about 1/4 cup of blueberries in a single layer before the batter it sets. Try not to put the blueberries on the edge of the pancakes, though some may roll to the edge as the batter settles. Drop on a bit more batter to partly cover some of the blueberries.
- Cook until the edges of the pancakes are dried and starting to brown, and the surface of pancakes have some bubbles and a few blueberries have burst, about 5 minutes. You may need to adjust the heat to medium-low so the surface of the pancake does not burn. Keep in mind that these pancakes cook slow compared to other traditional pancake recipes since these are very thick and do not contain any egg. Do not rush the cooking time by turning up the heat. (See also the notes about how different materials of the griddle will affect the cooking process).
- Once the pancakes are ready, carefully flip with a spatula, and cook until browned on the underside, about 3-4 minutes more. Transfer to a cooling rack and cover loosely with aluminum foil. You may want to keep them warm in oven while you finish cooking the other pancakes.
- Continue with more oil and the remaining batter. I usually make 5-6 pancakes, depending on how large I make them. Serve with maple syrup and any other topping of choice.

THE BEST VEGAN OAT & WALNUT WAFFLES (OR PANCAKES)
Our Sunday tradition entails that my hubby make waffles for me and the boys (3 and 5). We tried this recipe this morning and it was the BEST waffles he's made by far! This recipe is from Moosewood Resturant and is listed exactly as they wrote it. Here are my adaptions: We omitted the walnuts due to allergies. We used all unbleached flour. We decreased the soy milk by 1/3 cup and added a glob of vanilla yogurt instead. We used sugar instead of maple syrup. Lastly, we doubled the recipe for the four of us because we love leftovers for the next morning! (though I only added one tbsp of oil instead of two) This could be used for pancakes also. Follow-up: since posting this recipe, I tried as pancakes. While the taste was good, I prefer the waffles.

Steps:
- If toasting walnuts, toast in a single layer on an unoiled baking tray at 350 for 5 to 10 minutes, until fragant and golden brown.
- In a large bowl, sift the flours, salt, baking powder, cinnamon, and nutmeg, Stir in the walnuts and oats.
- In a separate bowl, stir together the milk, oil, and maple syrup or sugar.
- make a well in the dry ingredients and pour in the wet ingredients. Stir until just combined.
- Do not overmix the batter. When combining wet and dry ingredients, it is better to leave a few lumps than to stir too much.
- After mixing, let the batter sit for a few minutes until bubbles form on the top. This 'rest' gives the baking powder time to start working so the waffles (or pancakes) will be lighter.
- Preheat waffle iron and lightly oil to prevent sticking.
- Use 1/3 cup of batter for each waffle and bake accoring to the directions for your waffle iron.
VEGAN WAFFLES
I made these once before without the baking powder, but I added blueberries. They were very good; a little heavy because of the lack of baking powder though. I recommend them. You can use the same batter for pancakes. You can also substitute the water for more soymilk for a richer flavor.

- In a medium bowl, mix together the oats and 1 cup (240 milliliters) oat milk. Microwave on high for 1 minute 30 seconds. Remove from microwave and give the oatmeal a stir. Mix in the sunflower oil. Set aside and allow to cool for a few minutes.
- In a separate large bowl, mix together the flour, baking powder, baking soda, sugar and salt. Make a well in it and mix in the oatmeal with a fork.
- Slowly mix vinegar and the remaining 1/2 cup oat milk, adding about 2 tablespoons at a time. You may not need the entire 1/2 cup. How much you end up using will be dependent on the brand and type of oats you use. The batter should be the consistency of a thick bowl of oatmeal, so when you drop the batter on the griddle, the batter will slowly form into a circle shape with the gentle help of a spoon to spread it.

- Combine almond milk and vinegar in a large liquid measuring cup and let set for a few minutes to curdle/activate. Then add melted butter, vanilla extract and agave nectar and whisk. Set aside.
- Add wet ingredients to dry and mix until well incorporated. Let set for 10-15 minutes while your waffle iron preheats. (I set mine to 4 out of 5 for a crispier waffle, but adjust yours according to preference.)
- Once waffle iron is ready, generously coat with non-stick spray or vegan butter and pour on about 1/3 cup of batter. Cook according to manufacturer instructions and then remove and place on a baking rack in a 200-degree F (93 C) oven to keep warm. Do not stack and instead keep them in a single layer to ensure crispiness remains.

- Add the oat flour, cornstarch, baking powder, salt, pepper and chai spices to a large bowl and whisk very well until thoroughly incorporated.
- In a medium separate bowl, add the milk, syrup and walnut butter and whisk until smooth. Pour the liquids over the dry and whisk just until mixed and smooth. Don't over-mix it, as oat flour can get too thick if overly mixed.
- Now let the batter sit while you heat up your waffle machine. The batter will thicken some as it sits, that is normal. I used a 7 inch round waffle maker and setting 4 for the perfect crispy waffles. I got 3 of the large round waffles. Obviously, this will vary if your machine is smaller. If using the same size as my machine, once your machine beeps that it is ready and hot, spray with nonstick spray on the top and bottom plates. If you don't spray, they will stick. Even though it says "nonstick surface", mine stuck without spray. May also be because I don't use oil in the recipe. You will add about 2/3 cup of batter and quickly spread out the top with a spoon being careful not to spread it too close to the edge to prevent overflowing. With my machine, I used the setting 4 and it beeps when they are done. I always let it go about 20 seconds after the beep and then remove. I get nice and crispy results. They seem soft right at first, but crisp up almost immediately once the air hits the
- Waffles are obviously best eaten immediately, as they do soften if they are left out awhile. If I have leftovers, I just pop them into my toaster oven to bring back the yummy crispy texture! I love these with a drizzle of maple syrup.

- Combine the quinoa and oats in a blender or food processor (I use a vitamix). Process on high until the mixture is a fine consistency (think whole wheat flour).
- Add in the baking soda, cinnamon, flax meal, salt, maple syrup, and almond milk, then blend until combined (you will need to stop the blender and scrape down the sides to ensure it's evenly incorporated). Note that the batter will be thick; this is normal.
- Pour the batter into a preheated non-stick waffle iron (you will need to lightly oil your waffle iron if it's not non-stick). Cook per your waffle iron instructions, or for ~5 minutes until golden brown. Top as desired with fresh fruit, chopped nuts, coconut whipped cream or simply pour on the maple syrup.

- Add non dairy milk, apple cider vinegar, tahini and vanilla into a bowl and whisk to combine. Add in the oat flour, corn starch, baking powder and salt and stir until just combined.
- Splash your waffle iron with water or place a small amount of batter onto the waffle iron, it should sizzle immediately. If it doesn't, let the waffle iron heat for a few minutes longer- this is the key to crispy waffles! Pour half the batter onto the waffle iron and close the top. You should instantly see steam releasing out of the iron. Once there is no more steam coming out of the waffle iron the waffle should be fully cooked. Lift the top up and remove from the waffle iron and repeat.
- If making more than 2 waffles, place the waffles in a 200 F pre-heated oven to keep them warm and crispy. If freezing, place on a wire rack and let them cool completely before placing in the freezer.
