BETTER THAN BEST FRIED CHICKEN
Simply delicious fried chicken using, of all things, cream of chicken soup! The other key ingredient is cornstarch. The end result will surprise you. It will be perfect--crispy on the outside, juicy on the inside, and loaded with mouthwatering flavor. This chicken will definitely be requested on a regular basis by family and friends!

- In a shallow dish or bowl combine the soup, egg and seasoning salt (be careful, as soup is already salted); mix together. Dip chicken in mixture and turn to coat completely. Set aside.
- In a resealable plastic bag mix together the flour, cornstarch, garlic powder, paprika, salt and pepper. One at a time, place chicken pieces in bag, seal and shake to coat. Add more flour and/or cornstarch as necessary, but add them in equal parts (there should be an equal amount of each in the mixture).
- Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C). Be sure to use enough oil to cover chicken pieces.
- Place coated chicken on a platter and allow to sit until it becomes doughy (this is critical, to ensure crispiness when fried). Once chicken is doughy, test oil by dropping a piece of the "dough" into it; the oil is ready when it starts to fry immediately.
- Fry chicken pieces in oil for about 7 to 10 minutes each, or until cooked through and juices run clear. Drain on paper towels and serve.

BREADED FRIED CHICKEN

- Fill a large cast-iron skillet with 1 inch of vegetable oil. Heat over medium heat until a deep-fry thermometer registers 350 degrees F.
- Meanwhile, whisk the flour, cornmeal, cornstarch, thyme, 1 tablespoon salt and 2 teaspoons pepper in a large bowl. Whisk the eggs and milk in another large bowl. Season the chicken all over with salt and pepper. Dredge each piece in the flour mixture, then dip in the egg mixture, letting any excess drip off. Return the chicken to the flour mixture and turn until well coated. Transfer to a large plate or baking sheet.
- Carefully add about half the chicken to the hot oil (do not crowd the skillet). The oil temperature will drop; adjust the heat as needed to maintain a temperature of 350 degrees F. Fry the chicken, without turning, until the crust starts browning, about 2 minutes. Flip the chicken and continue cooking, turning occasionally, until browned and crisp all over and a thermometer inserted into the breasts registers 160 degrees F and the thighs 170 degrees F, 13 to 16 minutes. Remove with tongs and transfer to a rack set on a baking sheet; sprinkle with salt. Let the oil temperature return to 350 degrees F before frying the remaining chicken.
TRADITIONAL ITALIAN BREAD
Steps:
- Gather the ingredients.
- In a large bowl, stir together the sugar, salt, yeast, and warm water.
- Stir in the softened butter or margarine, whichever using.
- Sift in one cup of flour at a time until you have a dough that can be easily kneaded by hand without sticking to your hands.
- Turn the dough out onto a lightly floured surface and knead for 8 minutes, adding more flour if necessary, until the dough is soft and not sticky.
- Lightly grease a medium-sized bowl with olive oil and flip dough over so that the top is also greased.
- Cover with a clean kitchen towel or wrap paper and let rise for 30 minutes in a warm, draft-free place.
- Grease a large baking sheet and sprinkle it with coarse cornmeal, if desired.
- Remove the dough from the bowl, place onto a lightly floured table, and divide into two equal parts.
- Roll each dough half into an approximately 15 x 9-inch rectangle.
- Roll the dough tightly along the 15-inch side, pinch the seams, and taper the ends of each loaf with your hands at a 45-degree angle.
- Place the loaves on the prepared baking sheet and cover. Let rise in a warm, draft-free place for 20 minutes.
- Preheat the oven to 425 F. Make 3 deep diagonal slashes on each loaf.
- Bake the bread for 20 minutes.
- Lightly beat the egg white and cold water in a small bowl to create an egg wash . This step is key for a traditional Italian bread.
- Remove the loaves from the oven and brush with the egg wash.
- Return the loaves to the oven for another 5 minutes.
- Serve bread warm or cold and enjoy.

CHICKEN KATSU RECIPE

Steps:
- Remove the skin of the chicken breast.
- Cut each chicken breast half into two cutlets.
- Pound the chicken cutlets to about 1cm thick with a meat mallet.
- Season both sides of the chicken meat with salt and pepper.
- Dip the chicken meat into flour. Shake off the excess flour.
- Remove and transfer it into beaten eggs. Turn over the meat so that both sides are wet by the eggs.
- Lift and let the excess egg drip off.
- Dredge the chicken in breadcrumbs. Remove the excess. Lightly press the surface to help the breadcrumbs adhere to the surface.
- Deep fried the chicken in hot oil at 350°F/175°C for five minutes,
- Drain away the oil on the wire rack or paper towel lined tray.

THE BEST TASTING BREADED CHICKEN!
I found this recipe about 4 years ago and I have been making it ever since. It has a wonderful taste and it is so crunchy. It is definitely one of my husbands favorite chicken recopies as well as all my guests. This recipe does not get boring so it can be made again and again and trust me it will be! I hope you enjoy it!

- Preheat oven to 400. Wash, (skin) and dry chicken.
- MIx the mayonnaise and the spice ingredients together is a medium size bowl.
- Put cornflake crumbs in a separate bowl or plate.
- Take a spoonful or mayonnaise and rub it all around each piece of chicken
- Place each piece of chicken in the bread crumbs and roll it around making sure each piece is fully covered.
- Place in a pan big enough to fit all the pieces of chicken.
- Cover the pan with tinfoil and place in the oven for 40 minute.
- Uncover chicken and put it back in the over for 20-30 ,min until it is brown on top and appears crunchy.
- Enjoy!
