KITTENCAL'S BUTTERY CUT-OUT SUGAR COOKIES W/ ICING THAT HARDENS

Kittencal's Buttery Cut-Out Sugar Cookies W/ Icing That Hardens image

You will not find a better sugar cookie anywhere you search, this will most likely be the only sugar cookie you will use, not only are these cookies buttery delicious, the dough is an absolute dream to work with, it rolls out easily and is easy to handle, also the cookies hold their shape when baked something many sugar cookies do not do --- make as many different colors as desired in separate bowls with the icing, the cookies must be completely cooled before icing --- plan ahead the dough must be chilled for at least 2 hours before rolling -- since these are topped with icing they are not a sweet cookie if you want a sweeter taste then increase the sugar amount

Time 2h4m

Yield 35-40 serving(s)

Number Of Ingredients 14

1 cup butter, softened (no substitutes)
1 cup sugar
2 eggs
1/2 teaspoon vanilla
1/2 teaspoon almond extract
3 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2 cups sifted confectioners' sugar (the sugar must be sifted)
1 tablespoon milk (adding in more if needed for proper spreading consistency)
1 tablespoon light corn syrup
1/4 teaspoon almond extract (can use 1/2 teaspoon vanilla in place of the almond)
food coloring (use your choice of colours)

Steps:

  • For cookies; in a large bowl combine butter with sugar, eggs, vanilla and almond extract; beat using an electric mixer on high speed until light and fluffy.
  • In another bowl combine the flour with baking powder, baking soda and salt; gradually stir into the butter mixture until well blended.
  • Cover bowl with plastic wrap and chill for 2 hours.
  • Set oven to 400°F.
  • Line cookie sheets with parchment paper (do not grease cookie sheets use parchment paper only).
  • On a very lightly floured surface roll out the dough into about 1/4-inch thickness.
  • Cut into desired shapes using cookie cutters.
  • Place cookies 2-inches apart on cookie sheet.
  • Bake 4-6 minutes.
  • Remove cookies to wire racks to cool completely before icing.
  • For the frosting; in a small bowl mix the confectioners sugar with milk (start with 1-2 tablespoons, you will likely need more milk for the perfect spreading consistency).
  • Beat in corn syrup and almond extract until the icing is smooth and glossy (if the icing is too thick add in a small amount more of corn syrup).
  • Divide into as many separate bowls as you wish for different colours.
  • Add in food colouring until desired intensity is achieved.
  • Paint the icing over the cookies using a brush, or dip edges of cookies into icing.
  • Allow to set on waxed paper.

Time 1h45m

Number Of Ingredients 12

1 cup salted butter (softened)
1 cup granulated sugar
2 tsp vanilla extract
2 large eggs (room temperature)
2 ½ to 2¾ cups all-purpose flour*
3/4 tsp baking powder
½ tsp salt
4 cups powdered sugar (sifted )
3-4 TBS milk (room temperature)
2 ½ TBS light corn syrup
½ tsp pure vanilla extract
Gel food coloring (optional)

Steps:

  • Cream together butter and sugar in the bowl of a standing mixer.
  • Add vanilla and eggs and beat until combined.
  • Add flour, baking powder and salt and beat until combined.
  • Divide dough into two equal portions.
  • Shape each piece of dough into a round, flat disc and wrap tightly with plastic wrap.
  • Chill in the refrigerator for at least 2 hours, or overnight.
  • Preheat oven to 350 degrees F.
  • Line two to four large baking sheets with parchment paper, set aside.
  • Remove one sugar cookie dough disc from the refrigerator and let it sit at room temperature for 5 minutes to soften slightly.
  • Place sugar cookie dough on a floured surface and roll to ½" or ¼" thickness (thicker = softer cookies).
  • Use your favorite cookie cutter shapes and cut out the dough and place them 1" apart on the prepared cookie sheets.
  • Repeat until all the dough is used. You can gather and re-roll the dough scraps two additional times (3 times total).
  • Use a pastry brush and brush the cookies with a little bit of milk or cream. Then decorate with sprinkles, which will stick to the milk/cream.
  • Bake in the preheated oven for 9-10 minutes or until cookies are puffed and just set around the edges.
  • Remove and let sit on cookie sheet for 5 minutes before transferring to a wire rack to cool completely.
  • Repeat with second disc of dough.
  • Combine all frosting ingredients in a medium bowl and whisk to combine.
  • Start with 2 TBS milk and increase until your desired consistency is achieved.
  • If using food coloring, separate frosting into smaller bowls and add food coloring to your liking.
  • Place each color in a disposable piping bag fitted with your tip of choice.
  • Once cookies are completely cooled, decorate cookies.
  • Let decorated cookies sit at room temperature for at least 3 hours, or until the frosting is completely hardened. Chilling them in the refrigerator helps speed up the setting process.
  • Store in an airtight container or on a plate wrapped in plastic wrap at room temperature or in the refrigerator.

THE BEST SUGAR COOKIE RECIPE

The Best Sugar Cookie Recipe image

We have The Best Sugar Cookie Recipe ever and we can't wait to share it so that everyone can have super yummy homemade sugar cookies that always keep their shape.

Provided by Two Sisters Crafting

Categories     Cookies

Time 18m

Number Of Ingredients 6

2 cups Sweet Cream Salted Butter (softened)
2 cups Granulated Sugar
2 Large Eggs
2 tablespoons Vanilla Extract
4 teaspoons Baking Powder
6 cups All-Purpose Flour

Steps:

  • Add the 4 sticks (2 cups) of butter and 2 cups of white sugar to your mixer. A word about the butter, we use Sweet Cream Salted Butter when we are baking and I think it tastes great with these sugar cookies too. The butter needs to be softened but still cold. A prime culprit for dry sugar cookie dough is butter that is too warm and soft. I let the butter sit out on the counter for just under an hour before I start making the cookies - this seems to be the perfect amount of time for me. The butter is still cold to the touch but you can press into the stick with your fingers. In the past, when in a rush, I have softened the butter in the microwave but inevitably the dough that I get is on the "crumbly" side.
  • Cream the butter and sugar until it is completely mixed (3 minutes on medium-high should do the trick.)
  • Add 2 tablespoons of vanilla and 2 eggs. I know that sounds like a lot of vanilla but this recipe needs a little extra moisture and the cookies will taste great.
  • Mix the cookie dough until light and fluffy (about 3 more minutes.)
  • Add 4 teaspoons of Baking Powder and mix.
  • Mix in the 6 cups of flour two cups at a time. Don't over-mix the dough when you are adding the dry ingredients. Mix it only until the flour is incorporated into the dough.
  • After you have added the 6 cups of Flour the dough should be firm but not dry or crumbly. If the dough seems to dry, add a tiny bit of vanilla or milk (start with a teaspoon) and mix again.
  • Roll a handful of the dough out on a prepared surface until it's about 3/8" thick.
  • Cut out shapes with cookie cutters.
  • Bake in an oven pre-heated to 350 degrees for 6-10 minutes depending on the size of the cookie cutter you used. Do not over-bake! We like thicker sugar cookies so they will hold a good amount of frosting. If you make your cookies on the thick side as we have done in the pictures here, you should cook them 9-10 minutes. They might not look done to you but they are. Take them out of the oven. You don't want them to start browning around the edges the way a Chocolate Chip Cookie would, for example. The cookies should be set and just bet starting to slightly brown around the edges. Over-baking is the prime culprit if you feel your sugar cookies seem dry. If you roll out thinner cookies, or use smaller cookie cutters than the ones we have used here, you should only bake the cookies 6 or 7 minutes.
  • Let your cookies cool and then they are ready for frosting. We use our Best Buttercream Frosting recipe with these Best Sugar Cookies. The frosting is easy to color and tastes so delicious and yummy on these Sugar Cookies. You will have all the tips and tricks to make this yummy homemade sugar cookie frosting right here.

SUGAR COOKIE FROSTING

Sugar Cookie Frosting image

This creamy and delicious frosting is the perfect topping for sugar cookies.

Provided by Allison - Celebrating Sweets

Categories     Dessert

Time 10m

Number Of Ingredients 6

1 cup unsalted butter (softened to cool room temp (still cool to the touch))
3 cups powdered sugar* (sifted if lumpy)
1 tablespoon half and half or milk* (plus more as needed)
1 ¾ teaspoons pure vanilla extract
¼ teaspoon almond extract
pinch salt

Steps:

  • Using a hand mixer, or stand mixer fitted with the paddle attachment, beat butter and half of the powdered sugar until well-combined (starting out the mixer low and increasing to medium-high). Slowly add the remaining powdered sugar (while beating), followed by extracts, pinch of salt, and 1 tablespoon milk. Continue to add more milk, a little bit at a time, until you get a creamy spreadable frosting. If desired, you can add food coloring at this point.
  • Turn the mixer to medium-high and beat well. Depending on how thick you want the frosting, you can easily adjust the consistency by adding more powdered sugar (to thicken) or more milk (to thin).
  • Use a piping bag, small knife, or spreader to add the frosting to baked and cooled sugar cookies. Immediately top with sprinkles, if using.
  • Prepare the frosting above adding extra powdered sugar and milk (see note).
  • Working with half of the frosting at a time: Place frosting in a wide shallow bowl and microwave for 15-20 seconds. Stir really well. The frosting should be melty and thin. Microwave for a few more seconds, and add a splash of milk, if necessary, to get it thin enough.
  • Working quickly, dip each sugar cookie face down into the frosting. Move the cookie around a bit, then flip it over and jiggle it back and forth to get the frosting to settle into an even layer. Top with sprinkles, if using, then set aside to allow the frosting to set.
  • Note: The frosting will firm up as it cools, so you might need to microwave it again to thin it out. Once you have used the first half of the frosting, proceed with microwaving the second half.

SOFT CUT-OUT SUGAR COOKIES

Soft Cut-Out Sugar Cookies image

With crisp edges, thick centers, and room for lots of decorating icing, I know you'll love these soft sugar cookies as much as I do. The number of cookies this recipe yields depends on the size of the cookie cutter you use. If you'd like to make dozens of cookies for a large crowd, double the recipe.

Provided by Sally

Categories     Cookies

Time 4h

Number Of Ingredients 9

2 and 1/4 cups (281g) all-purpose flour (spoon & leveled), plus more as needed for rolling and work surface
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup (1.5 sticks or 170g) unsalted butter, softened to room temperature
3/4 cup (150g) granulated sugar
1 large egg, at room temperature
2 teaspoons pure vanilla extract
1/4 or 1/2 teaspoon almond extract (optional, but makes the flavor outstanding)*
Royal Icing or Easy Glaze Icing

Steps:

  • Whisk the flour, baking powder, and salt together in a medium bowl. Set aside.
  • In a large bowl using a hand mixer or a stand mixer fitted with a paddle attachment, beat the butter and sugar together on high speed until completely smooth and creamy, about 2 minutes. Add the egg, vanilla, and almond extract (if using) and beat on high speed until combined, about 1 minute. Scrape down the sides and up the bottom of the bowl and beat again as needed to combine.
  • Add the dry ingredients to the wet ingredients and mix on low until combined. Dough will be relatively soft. If the dough seems too soft and sticky for rolling, add 1 more Tablespoon of flour.
  • Divide the dough into 2 equal parts. Place each portion onto a piece of lightly floured parchment paper or a lightly floured silicone baking mat. With a lightly floured rolling pin, roll the dough out to about 1/4-inch thickness. Use more flour if the dough seems too sticky. The rolled-out dough can be any shape, as long as it is evenly 1/4-inch thick.
  • Lightly dust one of the rolled-out doughs with flour. Place a piece of parchment on top. (This prevents sticking.) Place the 2nd rolled-out dough on top. Cover with plastic wrap or aluminum foil, then refrigerate for at least 1-2 hours and up to 2 days.
  • Once chilled, preheat oven to 350°F (177°C). Line 2-3 large baking sheets with parchment paper or silicone baking mats. Carefully remove the top dough piece from the refrigerator. If it's sticking to the bottom, run your hand under it to help remove it- see me do this in the video above. Using a cookie cutter, cut the dough into shapes. Re-roll the remaining dough and continue cutting until all is used. Repeat with 2nd piece of dough. (Note: It doesn't seem like a lot of dough, but you get a lot of cookies from the dough scraps you re-roll.)
  • Arrange cookies on baking sheets 3 inches apart. Bake for 11-12 minutes or until lightly browned around the edges. If your oven has hot spots, rotate the baking sheet halfway through bake time. Allow cookies to cool on the baking sheet for 5 minutes then transfer to a wire rack to cool completely before decorating.
  • Decorate the cooled cookies with royal icing or easy glaze icing. Feel free to tint either icing with gel food coloring. See post above for recommended decorating tools. No need to cover the decorated cookies as you wait for the icing to set. If it's helpful, decorate the cookies directly on a baking sheet so you can stick the entire baking sheet in the refrigerator to help speed up the icing setting.
  • Enjoy cookies right away or wait until the icing sets to serve them. Once the icing has set, these cookies are great for gifting or for sending. Plain or decorated cookies stay soft for about 5 days when covered tightly at room temperature. For longer storage, cover and refrigerate for up to 10 days.

THE BEST SUGAR COOKIE RECIPE

The Best Sugar Cookie Recipe image

This is the best sugar cookie recipe and my favorite roll out sugar cookies for the Christmas season. Use this easy sugar cookie recipe for any holiday! We included a simple frosting recipe for these sugar cookies with a smooth finish.

Provided by Nikki Gladd

Categories     Cookies

Time 2h30m

Number Of Ingredients 15

1 cup granulated sugar
1/2 cup unsalted butter (, at room temperature)
1 large egg
1 teaspoon pure vanilla extract
1/2 cup sour cream
2 3/4 cups all purpose flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
5 cups powdered sugar
6 tablespoons butter (, melted)
1 tablespoon pure vanilla extract
6 tablespoons milk
Food coloring (, optional)
Sprinkles and other decorations (, optional)

Steps:

  • In a large mixing bowl, cream together the sugar and butter until light and fluffy, about 2 minutes. Add the egg, then the vanilla and mix until combined. Stir in the sour cream. Beat on high for 2 minutes, then scrape the sides of the bowl.
  • In another bowl, combine the flour, baking powder, baking soda and salt. Add to the wet ingredients and beat on low until just combined. Divide the dough in half and wrap each half tightly with plastic wrap. Chill in the refrigerator for at least 2 hours, or up to 3 days.
  • Preheat the oven to 350°F. Line baking sheets with parchment paper.
  • Working with one half of dough at a time and leaving the other chilling in the fridge, roll the dough to about 1/2-inch thick (no less than 1/4-inch thick) on a clean floured surface. I recommend flipping the dough at least once while rolling and adding more flour to the work surface and rolling pin.
  • Use cookie cutters to cut out shapes and carefully transfer to prepared baking sheets. Bake for 10 minutes, or until cookies just start to look dry, rotating pans halfway through the baking time. Do not over-bake! They might not look done, but they are! Let cool on the baking sheet for 10 minutes before transferring to a wire rack. Cool completely before frosting. Frost the cookies using my Easy Icing recipe.
  • Beat the sugar, butter, vanilla and 4 tablespoons of the milk in a mixing bowl on low speed until combined. Add the remaining milk, 1 tablespoon at a time until smooth.
  • Switch to high speed and beat until the frosting is a spreadable consistency, but still thick enough so it's not too runny. Add more milk, if needed, 1 tablespoon at a time. If it gets too runny, add more powdered sugar, as needed, 1/4 cup at a time. Use an offset spatula to spread frosting on the cookies, leaving 1/4-inch edge. Decorate with sprinkles immediately before frosting dries.

  • In a small bowl, combine egg, vanilla, baking powder, and salt. Add to the butter and sugar mixture and beat on medium until the egg is fully combined. As soon as it is combined, stop beating.
  • Measure the flour in a separate bowl and add about ½ cup at a time to the dough - beat on low. Continue adding in ½ cup increments until all the flour is incorporated. The dough will look a bit dry and be crumbly.
  • Add the heavy cream and beat on high for 10-20 seconds - stop as soon as the mixture is all incorporated and the dough is cohesive. If you are using a stand mixer this will happen on its own. If you are using a hand mixer, you may need to knead the dough just a few times to get it to become cohesive.

  • In a small bowl, use a fork to beat together all the ingredients except the food coloring. Beat in the food coloring, a few drops at a time, until colored to your liking.
