This chili recipe is many years in the making and I have won several awards with it. I think you'll be pleased with it. You can alter it to your own spice levels to achieve your perfect chili. Garnish with shredded mozzarella cheese, and use corn chips for dipping.

4 tablespoons vegetable oil
1 green bell pepper, chopped
1 yellow onion, chopped
2 ½ pounds lean ground beef
2 beef bouillon cubes
⅔ cup red wine
2 (16 ounce) cans whole peeled tomatoes, chopped, juice reserved
garlic cloves, crushed
1 (12 ounce) can tomato paste
1 ½ teaspoons paprika
2 ½ teaspoons chili powder
1 teaspoon cayenne pepper
2 ½ teaspoons dried basil
½ teaspoon dried oregano
2 tablespoons dried parsley
½ teaspoon black pepper
1 teaspoon salt
12 drops hot pepper sauce (e.g. Tabasco™)
1 (15 ounce) can kidney beans, drained
3 tablespoons flour
3 tablespoons corn meal
½ cup water

Steps:

  • Heat oil in a large saucepan over medium heat. Cook green pepper, and onion, until softened. Add the ground beef and cook until browned. Crumble over bouillon cubes, and stir in wine; continue to cook for a few minutes. Stir in chopped tomatoes, garlic, and tomato paste. Season with paprika, chili powder, cayenne pepper, basil, oregano, and parsley. Stir in salt and pepper.
  • Bring to a boil over high heat. Reduce heat to medium low. Cover, and simmer for 90 minutes, stirring occasionally.
  • Stir in kidney beans, and hot pepper sauce. You can add the reserved tomato juice if more liquid is needed. Continue to simmer for an additional 30 minutes.
  • In a small bowl, whisk together the flour, corn meal, and water until smooth. Stir into chili, and cook for a further 10 minutes, or until chili has thickened up.

1 lb ground beef
2 medium onions, chopped (about 1 cup)
1 cup chopped green pepper
1 (28 ounce) can tomatoes
1 (8 ounce) can tomato sauce
2 teaspoons chili powder
1 teaspoon salt
1/8 teaspoon red cayenne pepper
1/8 teaspoon paprika
1 (15 1/2 ounce) can kidney beans, drained

Steps:

  • Cook and stir ground beef, onion and green pepper in large skillet, until meat is brown and onion is tender.
  • Drain off fat.
  • Stir in remaining ingredients except kidney beans.
  • Heat to boiling.
  • Reduce heat; cover and simmer 2 hours, stirring occasionally (or cook uncovered about 45 minutes).
  • Stir in beans; heat.
  • Serves 4 or 5 (about 1 cup each).

I was given 'Happy Days With The Naked Chef' and found that I enjoy Jamies style, he can be relied on for sensible recipes that work. I decided to try his Chilli Con Carne for my son and husband one weekend when the girls were away. Good comfort food, served over rice, DH found this spicy while I thought it could be pepped up a little more (sometimes I surprise myself!!).... adjust for your own taste! Jamie recommends chuck steak, minced, but I used ground beef that I had in the freezer. I don't think the sun-dried tomatoes are traditional, but they are a nice touch! This dish is ideal for make-ahead, and definitely tastes even better the next day!

2 medium onions, chopped
1 garlic clove, chopped
olive oil
2 teaspoons chili powder
1 red chili, de-seeded and finely chopped
1 teaspoon ground cumin
sea salt
fresh ground black pepper
500 g minced beef
200 g sun-dried tomatoes packed in oil
2 (400 g) cans tinned tomatoes
1/2 stick cinnamon
1 cup water
2 (400 g) cans red kidney beans, drained

Steps:

  • In a large pot, fry onions and garlic in a little olive oil until soft.
  • Add chilli powder, fresh chilli, cumin and a little seasoning. Then add the meat and continue to cook, stirring, until it has browned.
  • Process the sun-dried tomatoes in your food processor, with a little oil from the jar, enough to loosen into a paste.
  • Add these to the beef with the tomatoes, cinnamon stick, and the water. Check the seasoning, and add more if you prefer.
  • Bring to the boil, cover, turn the heat down and simmer for about 1 and a half hours.
  • Add the kidney beans about 1/2 an hour before serving, they are already cooked and only need to be warmed through.
  • Serving suggestions, steamed rice, crusty bread, a tossed salad, some guacamole or/and sour cream/yoghurt.

i came home from the supermarket, thinking i had bought everything i needed for my usual chili recipe, but after 10 seconds i discovered that i had completely forgotten to buy the compulsory 400g can of tomatoes and also found out that i had run out of tomato paste! i still thought i'd give it a go. i still had 4 (...) little cherry tomatoes left in my fridge, and decided i'd try to fix something with my bottle of ketchup. to save the taste of the chili, i chose to add extra spices. and all of these plan b remedies actually led to a great chili con carne! i'll never make it again like i always have before.

1 (300 g) can black beans or 1 (300 g) can kidney beans
500 g ground meat, of your choice
1 big onion
4 garlic cloves
2 cm piece fresh gingerroot
4 small cherry tomatoes
500 ml water
1 beef bouillon cube
1 tablespoon of plain ketchup
1 tablespoon Worcestershire sauce
1 tablespoon red wine vinegar
1 teaspoon salt
1 teaspoon cumin
1 teaspoon paprika
1 teaspoon dried parsley
1 teaspoon coriander powder
1 teaspoon curry powder
1/2 teaspoon cardamom powder
1/2 teaspoon turmeric powder
1/2 teaspoon black pepper

Steps:

  • brown the ground meat in some butter and/or oil.
  • add the chopped onion.
  • when the onion softens, add the minced garlic and ginger.
  • stir for a couple of moments.
  • add the chopped cherry tomatoes, the water, the ketchup, the worcestershire sauce and the red wine vinegar.
  • when it boils, add the bouillon cube and all the spices.
  • let it simmer for 20 minutes.
  • add the drained beans.
  • let simmer for another 10 minutes.
  • add the chopped fresh cilantro.
