2 cups firmly packed brown sugar
1 cup Land O Lakes® Butter softened
2 large Land O Lakes® Eggs
2 teaspoons vanilla extract

1/2 teaspoon salt
1 1/2 cups all-purpose flour

Steps:

  • Heat oven to 375°F.
  • Combine all ingredients except flour in bowl. Beat at low speed, scraping bowl often, until well mixed. Stir in flour until well mixed.
  • Drop dough by rounded tablespoonfuls, 2 inches apart, onto lightly greased cookie sheets. Bake 8-12 minutes or until edges are lightly browned. Let stand 1 minute; remove from cookie sheet.

1 cup shortening
1/2 cup brown sugar, firmly packed
1 cup granulated sugar
2 large eggs, beaten
1 teaspoon vanilla
1 1/2 cups flour

1/2 cup chopped nuts (optional)
1/2 cup semi-sweet chocolate chips (optional)

Steps:

  • Preheat oven to 350°F.
  • Cream together shortening and sugars.

  • Sift together flour, salt and soda.

2 tablespoons milk

OPTIONAL 1 to 1 1/2 cups raisins, chocolate chips, shredded coconut or nuts.

Steps:

  • Preheat oven to 350°F.
  • In a large bowl with an electric mixer, blend granulated sugar, brown sugar and butter until light and fluffy. You can also use an electric stand mixer if you have one.
  • Next, add in the vanilla, eggs and milk and blend until fully incorporated.
  • Add in the baking soda, baking powder, salt and cinnamon and mix until fully incorporated.
  • Next, add in the flour and mix until fully incorporated.
  • Add in your oatmeal and mix until combined.
  • At this point, you can either add in optional ingredients like raisins or chocolate chips if you'd like. 1 - 1 1/2 cups of either is perfect, if using both, split the amount added between them. If you just like plain oatmeal cookies like me, you can go to next step!

1 1/2 cups (212g) all-purpose flour ((scoop and level to measure))
1 tsp ground cinnamon
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 cup (226g) unsalted butter, (softened slightly (it should still be somewhat cold and firm))
1 cup (200g) packed light brown sugar
1/2 cup (100g) granulated sugar
2 large eggs
1 1/2 tsp vanilla extract
3 cups (260g) rolled old fashioned oats*
1 cup (153g) raisins** ((preferably from a freshly opened package))
1 cup (118g) chopped walnuts

  • Preheat oven to 350 degrees. Line rimmed 18 by 13-inch baking sheets with parchment paper or silicone baking mats.
  • In a mixing bowl whisk together flour, cinnamon, baking soda, baking powder and salt for 20 seconds, set aside.
  • In the bowl of an electric stand mixer fitted with the paddle attachment cream together butter, brown sugar, and granulated sugar until combined.

2 tablespoons unsalted butter or coconut oil
2 cups old-fashioned rolled oats
1 ½ cups water
½ cup milk of choice or additional water
Generous pinch of fine salt
Pinch of ground cinnamon (optional)

Steps:

  • Melt the butter in a medium-to-large saucepan over medium heat. Once melted, add the oats and stir to coat. Cook, stirring occasionally, until the oats smell toasty and some are starting to turn lightly golden, about 4 to 6 minutes.
  • Pour the water and milk into the pot, being careful to avoid splatters. Add the salt and cinnamon, if desired. Stir to evenly incorporate the oats, then watch the pot until the mixture is bubbling rapidly around the edges. Continue cooking until the bubbles expand a couple of inches toward the center of the pot, about 3 minutes in total.
  • Cover the pot and turn off the heat. If using an electric cooktop, move the pot to a cool burner. If using a gas cooktop, leave it be. Either way, let the covered pot rest for 7 minutes.

2 large eggs
1 1/2 cups of all-purpose flour
1 tbs of vanilla extract

1/2 cup chopped walnuts (crushed to dust if you want to hide)
3 cups of rolled oats

  • Preheat oven to 350F, grease two large baking sheets.
  • Soak raisins in cold water (10-15 min ideally)
  • If you are using a mixer, add the butter to the mixer and beat until creamy. Otherwise, use a large mixing bowl to beat the butter.
  • Add brown and white sugar to the mix, beat for a few minutes, until fluffy.
  • Add eggs, and mix well. Add vanilla extract, mix well.
  • In a separate medium bowl mix the dry ingredients: flour, salt, baking soda.

1/2 cup unsalted butter, softened to room temp (1 stick)
1/2 cup light brown sugar, packed
1/4 cup granulated sugar
1 tablespoon vanilla extract
1 1/2 cups old-fashioned whole rolled oats (not instant or quick cook)
3/4 cup all-purpose flour
1/2 to 1 teaspoon cinnamon, added to taste
1/2 teaspoon baking soda
pinch salt, optional and to taste
1 heaping cup semi-sweet chocolate chips
1/2 cup raisins or nuts, optional and to taste

Steps:

  • To the bowl of a stand mixer fitted with the paddle attachment (or large mixing bowl and electric mixer) combine the egg, butter, sugars, vanilla, and beat on medium-high speed until creamed and well combined, about 4 minutes.
  • Stop, scrape down the sides of the bowl, and add the oats, flour, cinnamon, baking soda, optional salt, and beat on low speed until just combined, about 1 minute.

We used dark brown sugar for added flavor and moisture but our secret ingredient is honey. When baked right away, the honey causes the cookie to spread, keeping it soft and moist. When you let the dough rest, the oatmeal and flour absorb the honey for that classic cakey texture.

1 cup all-purpose flour (see Cook's Note)
1 1/4 teaspoons kosher salt
1 teaspoon baking soda
1 teaspoon ground cinnamon
3/4 cup packed dark brown sugar
1 stick (8 tablespoons) unsalted butter, at room temperature
1/4 cup honey
1 tablespoon pure vanilla extract
1 large egg, at room temperature
2 1/2 cups old-fashioned rolled oats
1 cup raisins

Steps:

  • Arrange an oven rack in the center of the oven and preheat to 350 degrees F. Line a rimmed baking sheet with parchment paper.
  • Whisk together the flour, salt, baking soda and cinnamon in a small bowl until combined. Beat the brown sugar and butter in a large bowl with an electric mixer on medium-high speed until light and fluffy, about 3 minutes. Add the honey, vanilla, egg and 1 tablespoon warm water and beat on high speed until creamy, scraping the sides and bottom of the bowl, about 3 minutes more. Add the dry ingredients and mix on low speed, scraping the bowl as needed, until completely combined. Add the oats and beat on low speed until combined. Fold in the raisins until evenly distributed. Arrange twelve 1-ounce scoops (2-tablespoon portions) of cookie dough on the prepared baking sheet, leaving about 2 inches between each. Bake until the cookies are lightly golden around the edges, 15 to 20 minutes. Cool on the sheet for 10 minutes, and then transfer to a wire rack to cool completely. Let the baking sheet cool, and then repeat with the remaining cookie dough.
