THE BEST OATMEAL CHOCOLATE CHIP COOKIES

The Best Oatmeal Chocolate Chip Cookies image

Soft, chewy, loaded with chocolate, and they turn out perfectly every time! Totally irresistible!!

Provided by Averie Sunshine

Categories     Cookies

Time 2h21m

Number Of Ingredients 12

1 large egg
1/2 cup unsalted butter, softened to room temp (1 stick)
1/2 cup light brown sugar, packed
1/4 cup granulated sugar
1 tablespoon vanilla extract
1 1/2 cups old-fashioned whole rolled oats (not instant or quick cook)
3/4 cup all-purpose flour
1/2 to 1 teaspoon cinnamon, added to taste
1/2 teaspoon baking soda
pinch salt, optional and to taste
1 heaping cup semi-sweet chocolate chips
1/2 cup raisins or nuts, optional and to taste

Steps:

  • To the bowl of a stand mixer fitted with the paddle attachment (or large mixing bowl and electric mixer) combine the egg, butter, sugars, vanilla, and beat on medium-high speed until creamed and well combined, about 4 minutes.
  • Stop, scrape down the sides of the bowl, and add the oats, flour, cinnamon, baking soda, optional salt, and beat on low speed until just combined, about 1 minute.
  • Stop, scrape down the sides of the bowl, and add the chocolate chips, optional raisins or nuts, and beat on low speed until just combined, about 30 seconds.
  • Using a large cookie scoop, 1/4-cup measure, or your hands, form approximately 11 equal-sized mounds of dough, roll into balls, and flatten slightly. Tip - Strategically place a few chocolate chips on top of each mound of dough by taking chips from the underside and adding them on top.
  • Place mounds on a large plate or tray, cover with plasticwrap, and refrigerate for at least 2 hours, up to 5 days. Do not bake with unchilled dough because cookies will bake thinner, flatter, and be more prone to spreading.
  • Preheat oven to 350F, line a baking sheet with a Silpat or spray with cooking spray. Place dough mounds on baking sheet, spaced at least 2 inches apart (I bake 8 cookies per sheet).
  • Bake for about 11 minutes (for super soft cookies, longer for more well-done cookies), or until edges have set and tops are just set, even if slightly undercooked, pale, and glossy in the center; don't overbake. Cookies firm up as they cool.
  • Allow cookies to cool on baking sheet for about 10 minutes before serving. I let them cool on the baking sheet and don't use a rack.

Provided by Danielle

Categories     Dessert

Time 57m

Number Of Ingredients 11

1 cup (125 grams) all-purpose flour (spooned & leveled)
½ teaspoon ground cinnamon
½ teaspoon baking soda
¼ teaspoon salt
1 and ½ cups (150 grams) old-fashioned rolled oats
½ cup (115 grams) unsalted butter (softened)
½ cup (100 grams) light brown sugar (packed)
¼ cup (50 grams) granulated sugar
1 large egg (room temperature)
1 teaspoon pure vanilla extract
1 cup (190 grams) semisweet chocolate chips

Steps:

  • In a medium-sized mixing bowl, whisk together the flour, cinnamon, baking soda, and salt. Stir in the old-fashioned rolled oats and set aside.
  • In the bowl of a stand mixer fitted with the paddle attachment, or in a large mixing bowl using a handheld mixer, beat the butter, light brown sugar, and granulated sugar together for 1-2 minutes or until well combined.
  • Mix in the egg and vanilla extract, stopping to scrape down the sides of the bowl as needed.
  • Add the dry ingredients and mix on low speed until just combined, then mix in the chocolate chips on low-speed until fully incorporated into the cookie dough. Cover tightly and refrigerate for at least 30 minutes.
  • Meanwhile, preheat the oven to 350°F (177°C). Line two large baking sheets with parchment paper or silicone baking mats and set aside.
  • Using a 1.5 tablespoon cookie scoop, scoop the dough onto the prepared baking sheets, making sure to leave a little room between each one. Gently press down each ball of cookie dough to slightly flatten them.
  • Bake at 350°F (177°C) for 10-13 minutes or until the tops of the cookies are set.
  • Remove from the oven and cool on the baking sheet for 5-10 minutes, then transfer the cookies to a wire rack to cool completely.

SOFT AND CHEWY OATMEAL CHOCOLATE CHIP COOKIES

Soft and Chewy Oatmeal Chocolate Chip Cookies image

With oats, butter, and mostly all brown sugar, you are guaranteed a soft and chewy oatmeal cookie. Use this perfect oatmeal cookie as the base for other add-ins such as raisins, dried cranberries, and nuts. Cinnamon and a touch of molasses add that little something extra. These are the best oatmeal chocolate chip cookies!

Provided by Sally

Categories     Dessert

Time 1h24m

Number Of Ingredients 12

1 and 1/2 cups (188g) all-purpose flour (spoon & leveled)
1 teaspoon ground cinnamon (optional)
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks; 230g) unsalted butter, softened to room temperature
1 cup (200g) packed light or dark brown sugar
1/2 cup (100g) granulated sugar
2 large eggs, at room temperature
1 Tablespoon unsulphured or dark molasses*
2 teaspoons pure vanilla extract
3 cups (240g) old-fashioned whole rolled oats
1 and 3/4 cups semi-sweet chocolate chips*

Steps:

  • Whisk the flour, cinnamon, baking soda, and salt together in a medium bowl. Set aside.
  • In a large bowl using a hand mixer or a stand mixer fitted with a paddle attachment, beat the butter on medium-high speed until smooth, about 1 minute. Add the brown sugar and granulated sugar and beat on medium-high speed until creamed, about 2 minutes. Add the eggs, molasses, and vanilla and beat on high speed until combined, about 1 minute. Scrape down the sides and up the bottom of the bowl and beat again as needed to combine.
  • Add the dry ingredients to the wet ingredients and mix on low until combined. With the mixer running on low speed, beat in the oats and both types of chocolate chips. Dough will be thick and sticky. Cover and chill the dough for at least 45 minutes in the refrigerator (and up to 4 days). If chilling for longer than a few hours, allow to sit at room temperature for at least 30 minutes before rolling and baking because the dough will be quite hard.
  • Preheat oven to 350°F (177°C). Line baking sheets with parchment paper or silicone baking mats. Set aside.
  • Use a large cookie scoop to scoop the cookie dough, about 3 Tablespoons of dough per cookie, and place 4 inches apart on the baking sheets. Bake for 13-14 minutes or until lightly browned on the sides. The centers will look very soft.
  • Remove from the oven and allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely. While the cookies are still warm, I like to press a few more chocolate chips into the tops- this is only for looks!
  • Cookies stay fresh covered at room temperature for up to 1 week.

  • Toast the nuts: Place a rack in the center of your oven and preheat the oven to 350 degrees F. Spread the nuts in a single layer on an ungreased baking sheet. Bake until the nuts are toasted and fragrant, 8 to 10 minutes, shaking the pan once halfway through. Do not walk away from the nuts towards the end of their baking time to ensure that they do not burn (it happens fast!). Immediately transfer the nuts to a cutting board and let cool. Turn off the oven.
  • Cut the butter into a few pieces and place it in a large microwave-safe bowl. Microwave for 30 seconds. Continue to microwave in 15-second bursts, just until melted. (Alternatively, you can melt the butter in a large saucepan over medium heat. Remove the pan from the heat as soon as the butter is melted.) Stir in the coconut sugar and granulated sugar until smooth. Stir in the vanilla, vinegar, and egg until well combined.
  • Add the dry ingredients to the butter mixture. With a rubber spatula or wooden spoon, stir until combined. The batter will seem loose and wet. Roughly chop the nuts, then add them to the bowl. Add the chocolate chips, then fold to combine. Cover the bowl with plastic wrap, pressing the wrap against the surface of the dough. Refrigerate for at least 1 hour, or up to 3 days.
