This recipe comes from my Uncle Tommy. He used this recipe to marinate chicken kabobs and served them over yellow rice. One tip he gave me was to put a little of the marinade in a dish with the onion halves and microwave for a minute or two. It softend them up before putting on the skewers with the rest of the meat and veggies.

1/4 cup soy sauce
1/4 cup Worcestershire sauce
1 teaspoon dry mustard
1/8 teaspoon garlic powder
1/8 teaspoon onion powder
1/8 teaspoon coarse black pepper
1/2 cup vinegar
1 teaspoon dried parsley
1 teaspoon sugar
1/8 teaspoon dried basil
1/3 cup oil

Steps:

  • Mix the first 11 ingredients. Whisk in the oil.
  • Marinate meat for several hours.
  • Grill meat in the manner you desire.

700g / 1.4 lb chicken breast, tenderloins or thigh ((Note 1))
2 tbsp honey OR brown sugar
1 tbsp olive oil ((or any oil))
5 tbsp soy sauce
2 tbsp lemon juice
2 tsp Worcestershire sauce
4 garlic cloves (, minced)
1 tsp dried oregano ((or rosemary, thyme, minced herbs))
1/2 tsp black pepper (, ground)
Finely chopped parsley
Lemon slices

Steps:

  • Recommended: Pound breast to even thickness using a meat pounder, rolling pin, or fist. OR cut large ones in half horizontally to form 2 cutlets (steaks) for each.
  • Mix marinade in a ziplock bag (or container in which chicken fits snugly). Add chicken.
  • Marinate 3 hours to overnight, though even 30 minutes is effective. (Note 2)
  • Heat 1 tbsp olive oil in a large skillet over medium high heat, and cook chicken per times below until deep golden (see video). If browning too quickly, lower heat.
  • Transfer to serving plate, cover loosely with foil and rest for 3 minutes before serving, garnished with parsley and lemon slices if desired.

3/4 cup soy sauce
1/3 cup vegetable oil
3 teaspoons minced garlic
2 tablespoons honey
2 tablespoons apple cider vinegar
2 tablespoons dijon mustard
2 teaspoons kosher salt
1 teaspoon ground pepper
1 teaspoon dried thyme
2-3 pounds trimmed chicken breasts

Steps:

  • In a bowl whisk together all the ingredients.
  • Add chicken to a large zip-top bag. Pour the marinade over the chicken.
  • Press out the extra air in the zip-top bag and seal. Squeeze the chicken in the bag, to make sure all chicken is covered in marinade.
  • Place the bag in the refrigerator and allow to chill for at least 4 hours or overnight.
  • When ready to grill chicken, remove the chicken from the refrigerator 15 minutes prior to cooking.
  • Preheat the grill to high heat. Place chicken on the grill, discarding extra marinade. Lower grill temperature to medium and cook on each side 5-6 minutes, depending on the thickness, or until internal temperature is 165°F.
  • Remove the chicken from the grill and allow to rest for 5 minutes before serving.

¼ cup lemon juice
¼ cup extra virgin olive oil
3 cloves garlic (, minced)
½ teaspoon red pepper flakes
½ teaspoon Kosher salt
½ teaspoon ground black pepper
¼ cup flat leaf parsley (, minced)
¼ cup basil (, minced)
2 tablespoons oregano (, minced)
1 whole chicken (, cut into pieces)

Steps:

  • Combine the lemon juice, olive oil, garlic, red pepper flakes, Kosher salt, black pepper, parsley, basil and oregano in a bowl.
  • Mix well.
  • Combine with the chicken in a large mixing bowl or an airtight plastic bag. Massage into the chicken.
  • Refrigerate at least 2 hours, but up to 24 hours.
  • Remove chicken from marinade, discarding remaining marinade mixture.
  • If grilling, heat to medium-high heat.
  • Cook on indirect heat for 30 minutes, turning, occasionally, or until internal temperture of chicken reaches 165 degrees.

1 1/2 pounds boneless chicken tenderloins
1/2 cup Caesar salad dressing (creamy or homemade, see below)
Optional: dash garlic powder (if extra garlic flavor is desired)
1/2 teaspoon dried leaf basil
1 teaspoon dried minced onion (or a few teaspoons minced fresh onion)
Dash freshly ground black pepper

Steps:

  • Gather the ingredients.
  • In a large, nonreactive bowl or resealable food storage bag, combine the chicken tenders with the creamy Caesar salad dressing, garlic powder (if using), basil, onion, and pepper. Seal or cover and refrigerate the chicken for 1 to 2 hours.
  • Preheat the grill or broiler. (If broiling, position the rack about 4 inches from the heat source.) Oil the grill grate or rack of the broiler pan.
  • Grill or broil the chicken tenders for about 5 to 8 minutes on each side, or until nicely browned and thoroughly cooked.

½ cup oil
½ cup balsamic vinegar
¼ cup soy sauce
¼ cup Worcestershire sauce
1/8 cup lemon juice
¾ cup brown sugar
2 Tbsp fresh rosemary
2 tbsp Dijon mustard
1 tsp ground black pepper
2 tsp garlic powder
6 chicken breasts or 3.5 lb chicken

Steps:

  • Combine all ingredients in a large ziplock bag.
  • Add chicken to the bag and place the closed ziplock bag in a large bowl and put in the fridge. (The bowl will keep it from making a huge mess in case the bag leaks)
  • Marinade for at least 8 hours or overnight and grill! Enjoy!
  • (I do not add any extra salt to my chicken marinade because salt will dry the chicken out. ALWAYS salt the chicken AFTER you grill it to ensure. It will need a good bit of salt after it is done)

2 pounds meat (chicken, beef, pork, preferably in pieces, like chicken breasts, steaks, pork chops, or thin pork tenderloins)
4 tablespoons fresh lemon juice (from about 2-3 lemons)
1 cup soy sauce (I always use low-sodium OR 1/2 cup soy sauce and 1/2 cup pineapple juice (see note))
2 cloves garlic (finely minced)
2 tablespoons olive oil
1 tablespoon freshly grated ginger (or ginger paste or 1 teaspoon dried ginger)
1 tablespoon onion powder
1/2 teaspoon pepper

Steps:

  • Place the meat in a shallow dish or ziploc bag.
  • In a medium bowl or liquid measuring cup, whisk together the lemon juice, soy sauce, garlic, olive oil, ginger, onion powder and pepper.
  • Pour the marinade over the meat to cover. Refrigerate for 8-12 hours (or up to two days).
  • Grill the meat, discarding excess marinade, until cooked through (exact time will depend on the cut of the meat and temperature of your grill). Let the meat rest for 10-15 minutes before serving to seal in the juices.
