An easy waffle recipe that results in a nice crisp outside, and tender middle waffle. I love the results this gives while not having to separate the eggs and take time to whip egg whites! These will also reheat in the toaster for a quick work day breakfast.

THE BEST BUTTERMILK WAFFLES

The Best Buttermilk Waffles image

In creating this recipe, we tried out many different methods-folding in egg whites, milk versus buttermilk, a yeasted batter. But at the end of the day, this simple dump-and-stir was our favorite by far. Someone in the test kitchen may have even said this was the best waffle they'd ever eaten! The buttermilk makes this waffle ultra-light while the generous amount of butter makes for a super crispy exterior, leaving the inside custardy and soft. Finally, we kept the sugar to a minimum, making these the perfect foil for sweet toppings like maple syrup, berries or jam.

Provided by Food Network Kitchen

Categories     main-dish

Time 40m

Yield about 6 waffles

Number Of Ingredients 11

1 3/4 cup all-purpose flour (see Cook's Note)
2 tablespoons granulated sugar
1 3/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon kosher salt
1 3/4 cup well-shaken buttermilk
2 large eggs
2 teaspoons vanilla extract
1 stick unsalted butter, melted and slightly cooled
Nonstick cooking spray
Maple syrup, jam, berries or yogurt, for serving

Steps:

  • Preheat a waffle iron to medium-high.
  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda and salt.
  • In a medium bowl, whisk together the buttermilk, eggs and vanilla. Whisk the buttermilk mixture into the flour mixture until a batter is formed. Whisk in the butter until incorporated, being careful not to overmix the batter.
  • Spray both sides of the preheated waffle iron with nonstick cooking spray. Pour in enough batter to lightly cover the surface of the iron, about 1/3 to 3/4 cup, depending on its size. (Take into consideration that the batter will spread once the lid is closed.) Close the iron and cook until the waffles are a deep golden brown and slightly crisp, about 5 minutes. Repeat with the remaining batter. (If the waffle iron has a well-seasoned or nonstick surface, it may not be necessary to spray it between each batch.)
  • Serve the waffles immediately with butter, syrup, jam, berries or yogurt.

THE BEST WAFFLE RECIPE

The Best Waffle Recipe image

Thick, fluffy waffles with golden crisp exteriors. I make this waffle recipe in a belgian iron, but you can use any waffle iron just keep in mind that the time required to cook will vary.

Provided by Sam Merritt

Categories     Breakfast

Time 19m

Number Of Ingredients 10

2 cups all-purpose flour ((250g))
3 Tablespoons granulated sugar
2 Tablespoons cornstarch
2 teaspoons baking powder
½ teaspoon baking soda
¾ teaspoon salt
2 cup buttermilk (please click the link for instructions on how to make a simple buttermilk substitute (473ml))
2 large eggs (whites and yolks divided)
1 teaspoon vanilla extract
4 Tablespoons unsalted butter (melted and cooled a bit)

Steps:

  • In a large bowl, whisk together flour, sugar, cornstarch, baking powder, baking soda, and salt. Make a well in the center of the bowl,
  • Add buttermilk, egg yolks (reserve the whites, you will need them in a moment), and vanilla extract to the well. Gently whisk together wet ingredients (avoiding the dry) and drizzle butter into mixture while whisking.
  • Whisk all wet ingredients together in the well to combine and scramble the egg yolks. Use a spatula to gradually incorporate the rest of the batter until all ingredients are well-combined (but don't over-mix). There will likely be some small lumps in the batter.
  • In a separate (completely clean and completely dry) bowl, use an electric mixer to beat egg whites to stiff peaks.
  • Fold egg whites into batter, stir gently until completely combined,
  • Let the batter sit for about 5 minutes while your waffle iron preheats.
  • Once waffle iron is ready, portion batter into hot iron (for my Belgian iron I need about 1 ¼ cups of batter). Cook until golden brown. How long the waffle takes will depend on your iron, for my Presto Belgian iron it takes about 4 minutes. The first waffle is usually a test to judge how much batter to use and how long to cook.
  • Serve warm, topped with butter and syrup, whipped cream and berries, or powdered sugar!

  • To keep waffles warm while you are making the whole batch, heat oven to 225°F and place a large sheet pan inside.
  • Add the eggs, buttermilk, butter and vanilla; whisk until just combined. Some small lumps remaining are fine. (Do not over stir the mixture. Mix until a few streaks of flour are remaining.) Let batter sit for about 10 minutes.
  • Preheat waffle iron and grease. Pour about 1/3 - 1/2 cup of batter into the waffle iron (or until batter reaches about 1/2-inch to the edge of the iron).
