- In a large bowl, whisk together the flour, sugar, baking powder, baking soda and salt; set aside.
- In a medium bowl, whisk together the buttermilk, butter, eggs and vanilla extract. Add the wet ingredients to the dry ingredients and gently whisk to combine. Do not overmix!
- Spray a waffle iron with non-stick cooking spray, then preheat. Once the waffle maker is ready, add the batter according to the manufacturer's instructions and cook for 2 to 3 minutes, or until the waffle maker indicates they are ready. Serve immediately, or place in a 300-degree oven to keep warm. Leftover waffles can be wrapped in plastic wrap, placed in a ziploc bag and stored in the refrigerator for 2 days or in the freezer for up to 1 month.

- In a large mixing bowl, whisk together the flour, cornstarch, sugar, baking powder, baking soda and salt, set aside.
- In a medium mixing bowl, whisk together the buttermilk, butter, egg yolks vanilla extract. Add the wet ingredients to the dry ingredients and gently whisk to combine. Do not overmix!
- In a separate mixing bowl, beat the egg whites (using a hand mixer) until they form stiff peaks, gently fold into the batter. Allow the batter to rest for a few minutes before using.
- Lightly spray a waffle iron with non-stick cooking spray, then preheat (My waffle maker makes 4 square waffles, I usually get 8-9 waffles out of one batch). When the waffle maker is ready, add the batter and cook according to the manufacturer's instructions, about 3-4 minutes. Serve immediately!

I purchased a waffle maker at a thrift shop for a dollar. My daughter wanted me to make waffles so I told her to find me a recipe in one of my many cookbooks. She found this one in American Cooking. These are very light and wonderful tasting and can easily be frozen.

In creating this recipe, we tried out many different methods-folding in egg whites, milk versus buttermilk, a yeasted batter. But at the end of the day, this simple dump-and-stir was our favorite by far. Someone in the test kitchen may have even said this was the best waffle they'd ever eaten! The buttermilk makes this waffle ultra-light while the generous amount of butter makes for a super crispy exterior, leaving the inside custardy and soft. - Preheat a waffle iron to medium-high.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda and salt.
- In a medium bowl, whisk together the buttermilk, eggs and vanilla. Whisk the buttermilk mixture into the flour mixture until a batter is formed. Whisk in the butter until incorporated, being careful not to overmix the batter.

- In a large bowl, whisk together flour, sugar, cornstarch, baking powder, baking soda, and salt. Make a well in the center of the bowl,
- Add buttermilk, egg yolks (reserve the whites, you will need them in a moment), and vanilla extract to the well. Gently whisk together wet ingredients (avoiding the dry) and drizzle butter into mixture while whisking.
- Whisk all wet ingredients together in the well to combine and scramble the egg yolks. Use a spatula to gradually incorporate the rest of the batter until all ingredients are well-combined (but don't over-mix). There will likely be some small lumps in the batter.
- In a separate (completely clean and completely dry) bowl, use an electric mixer to beat egg whites to stiff peaks.
- Fold egg whites into batter, stir gently until completely combined,
- Let the batter sit for about 5 minutes while your waffle iron preheats.
- Once waffle iron is ready, portion batter into hot iron (for my Belgian iron I need about 1 ¼ cups of batter). Cook until golden brown. How long the waffle takes will depend on your iron, for my Presto Belgian iron it takes about 4 minutes. The first waffle is usually a test to judge how much batter to use and how long to cook.
- Serve warm, topped with butter and syrup, whipped cream and berries, or powdered sugar!
