Pesto is so versatile, the principle of herbs, nuts and cheese, bolstered by garlic and good extra virgin olive oil, can be taken in so many different ways. This is the classic combo, celebrating basil, pine nuts and Parmesan, but use what you've got in stock.

1 clove of garlic
1 large bunch of fresh basil, (40g)
50 g pine nuts
3 tablespoons extra virgin olive oil
50 g Parmesan
optional:
1 cooked Jersey Royal or new potato

Steps:

  • Peel and bash the garlic in a pestle and mortar with a pinch of sea salt.
  • Pick the basil leaves and add with the pine nuts, and pound to a coarse paste.
  • Muddle in the extra virgin olive oil and finely grate and stir in the Parmesan, adding a splash of water if you like it a little runnier, then continue bashing and pounding until smooth.
  • Have a taste and season with salt and black pepper, if needed. For a lovely creamy finish, try crumbling in and stirring through a cooked Jersey Royal. Serve with grilled meat or fish, or simply stirred through pasta - delicious!

The world's best basil pesto recipe, adapted from chef Paolo Laboa, which won the award in Italy. A few ingredients and techniques make this perfect basil peso sauce fragrant and silky.

6 cups loosely-packed Genovese basil, preferably young, bright-green leaves
1/3 cup pine nuts, preferably Italian
1/3 of a small, fresh garlic clove
1/2 cup fruity, mild extra-virgin olive oil, preferably from Liguria
1 teaspoon medium or coarse flaky sea salt, such as Maldon or fleur de sel (use less if using saltier pecorino-Romano cheese)
1/3 cup freshly-grated pecorino-Toscano cheese (pecorino-Romano is an ok substitute)
1/3 cup freshly-grated Parmigiano-Reggiano cheese

Steps:

  • Chill the blender bowl either in the freezer or by adding water and ice cubes until ready to blend. Meanwhile, rinse, then soak, the basil leaves in water for about 10 to 15 minutes.
  • Combine the nuts, garlic, and olive oil in the blender. Blend until the nuts are very finely chopped and the mixture is creamy. Add the salt.
  • In several handfuls, lift the basil from the bowl of water. Shake some of the excess water off, but not all, and add it to the blender. Pulse in the blender until it is a smooth, beautiful green color. If necessary, add more water a teaspoon at a time until it blends and emulsifies fully.
  • Add the cheeses and blend again until fully incorporated and serve.PRO TIP: To store pesto, place it in a container and cover the top with a thin layer of olive oil. This acts as a seal, preventing oxidization. This pesto can be frozen for up to 3 months. Do not heat to defrost; let it thaw at room temperature for about an hour or two, or overnight in the refrigerator.

This fresh basil pesto recipe is easy to make with pine nuts (or walntus), garlic, Parmesan cheese, and a generous drizzle of quality extra virgin olive oil. Make ahead and store in the fridge or freezer for later use. Be sure to read through my post and watch the video for important tips!

2 cups packed fresh basil leaves
1 to 2 clove garlic (roughly chopped)
1/3 cup pine nuts (or walnuts, toasted)
Juice of ½ lemon
1/2 cup extra virgin olive oil (plus more for storing)
1/2 cup finely grated Parmesan cheese
Kosher salt and black pepper (to taste)

Steps:

  • Quickly blanch the basil. Prepare a bowl of ice water and set aside near your stove. Fill a small saucepan halfway with water and bring to a boil. Drop the basil leaves in the boiling water and blanch for 5 to 10 seconds or until wilted. Using tongs, transfer the basil leaves to prepared ice water to stop cooking.
  • Dry the basil very well. Pick up the basil leaves and wrap them in paper towel and squeeze to wring out all the water.
  • Make the pesto. Place the basil, garlic, pine nuts, and lemon juice in the bowl of a food processor fitted with a blade. With the processor running, slowly pour the extra virgin olive oil. Do not run the processor too long, you want to have a little bit of texture to your basil pesto.
  • Stir in the Parmesan cheese. Transfer the basil mixture to a small bowl. Add the Parmesan cheese and season with salt and pepper to taste. Mix to combine. If needed add a little bit more extra virgin olive oil to mix.
  • Use immediately or store for later (see notes for storage).
