Avocado makes a brilliant swap for the egg and oil in this creamy Ceasar dressing. The lemon keeps the avocado from browning and the swap tastes fantastic, making this salad a healthy choice.

Number Of Ingredients 11

1 ripe avocado
2 lemons, juiced
1/2 cup avocado oil
4-6 anchovy filets
2-4 garlic cloves
1/2 teaspoon worcestershire
1 tablespoon white wine vinegar
salt and pepper to taste
4 hearts romaine lettuce, cleaned and chopped
2 ounce grated parmesean cheese
tomatoes (optional)

Steps:

  • To make the dressing, blend all of the ingredients except for the cheese, romaine, and tomatoes, in the blender until creamy and smooth. Chill.
  • Toss the salad greens with the dressing, garnish with the cheese and optional tomatoes. If you have leftover dressing, it will keep without turning brown, for a few days in the refrigerator.

1 avocado ((ripe))
1 lemon ((juiced))
2 tablespoons olive oil
2 teaspoon anchovy paste
2 tablespoons Parmesan cheese ((finely grated))
1/2 teaspoon Dijon mustard
1 clove garlic
1 head romaine lettuce ((washed and torn into bite-sized pieces))
4 slices bacon ((cooked, cooled, and cut into pieces))
1 avocado ((cut into small cubes))
1 cup croutons
2 tablespoons Parmesan cheese ((finely grated))

Steps:

  • In a food processor fitted with a steel blade, combine all dressing ingredients.
  • Blend for 30 seconds on high.
  • Scrape down the sides with a spatula and blend for another 30 seconds - 1 minute, until dressing is creamy (as pictured above).
  • Wash and dry lettuce, and tear into bite-sized pieces.
  • Toss the lettuce with the dressing until completely coated and evenly distributed.
  • Serve with the bacon, avocado, croutons, and additional Parmesan cheese.

  • Slice the lettuce into about 1-inch (2 ½ cm) pieces, then transfer to a large salad bowl.
  • Add the bacon, avocado, croutons, cheese, and dressing, mixing until evenly combined.
  • Serve with additional parmesan on top.

Steps:

  • Dressing: Mix all Dressing ingredients in cruet with lid and shake until blended. May be done hours ahead and held in refrigerator. Salad: Wash lettuce thoroughly, dry, and tear into bite-size bits. Place in a large bowl. Drizzle Dressing over lettuce. Toss with Parmesan. Garnish with avocado and croutons. Serve with French bread.
