- Heat the oil in a large pot over medium heat. Cook and stir the ginger, lemongrass, and curry paste in the heated oil for 1 minute. Slowly pour the chicken broth over the mixture, stirring continually. Stir in the fish sauce and brown sugar; simmer for 15 minutes. Stir in the coconut milk and mushrooms; cook and stir until the mushrooms are soft, about 5 minutes. Add the shrimp; cook until no longer translucent about 5 minutes. Stir in the lime juice; season with salt; garnish with cilantro.

INSTANT POT THAI SOUP WITH CORN & ZUCCHINI
This gluten-free and vegan Instant Pot Thai soup with corn, zucchini and coconut is light, healthy and delicious and takes no time at all.

- Turn the Instant Pot on and press the Saute function key. Once heated, add olive oil, onions, ginger and garlic to the pot and stir for 30-60 seconds.
- Add the rest of the ingredients (except for finishing ones) and stir through. Please note that the vegetables will also give out some liquid into the soup. Press Cancel to stop the Saute function.
- Pop the lid on top and lock, making sure the top valve is pointing to Sealing. Press Manuaa/Pressure Cook and set to 1 minute at HIGH pressure. The Instant Pot will take 5-8 minutes to come to pressure and then the timer will begin.
- Once the timer is done, use the quick release method to let the pressure out. Point the top valve to Venting and waiting until the steam is out and you can open the lid.
- To finish the soup, add the lemon or lime juice, coconut cream and cilantro and stir through. Serve with extra chili, cilantro and fried shallots of extra crunch.

- Heat the oil in a large pot over medium heat. Add the onion and garlic and cook for 5 minutes. Add the zucchini and cook for 5 minutes. Stir in the cumin, turmeric, cayenne, salt and pepper. Stir in the broth and coconut milk. Bring to a boil. Reduce heat and simmer until zucchini is soft, about 25 minutes.
- Scrape the soup into a blender and process until smooth. Place in a saucepan over low heat just until hot. Combine the cilantro, mint and orange zest in a small bowl. Divide soup among 4 bowls. Sprinkle with the grated coconut and then the herb mixture. Serve immediately.

- In a large saucepan, heat oil over medium. Add zucchini, shallots, ginger, garlic, and 2 teaspoons salt; cook, stirring occasionally, until zucchini softens but has not developed any color, 10 to 12 minutes. Add potato, coconut milk, and 2 1/2 cups water. Bring to a boil, then reduce heat to medium-low and simmer until potato is easily pierced with the tip of a knife, 10 to 12 minutes. Remove from heat; let cool slightly. Stir in cilantro and lime juice. Transfer mixture to a blender, working in batches if necessary, and purée until very silky and smooth, 2 to 3 minutes. Refrigerate until cold, at least 4 hours or, in an airtight container, up to 3 days. Season with salt; serve topped with zucchini slices and cilantro leaves.
