- 4 hours before you start cooking, soak the glutinous rice in a generous amount of water. Then, drain it and rinse well. Place the rice in a piece of cheesecloth.
- Lay the rice in your vegetable steamer. Keep the water level low enough so that when it boils it is not coming up onto the rice. Steam the rice for 20 minutes, then check it.
- For the most delicious mango with sticky rice, use the mangoes from Thailand that are called Mamuang Nam Dok Maai (flower nectar mango) . They are long and slender and have very yellow skin even when not fully ripened.
- In a small saucepan, stir 1 cup of coconut milk together with 3 tablespoons of sugar and 1/2 teaspoon of salt. Heat only until the sugar and salt dissolves.
- By now the rice should be done and still very hot. Lay it in a shallow boil and spread it around. Do not flatten it like a pancake, but use a spatula to make creases and open areas.
- Poor the sweetened coconut into the rice. Just use enough so that it starts to puddle. The rice will soak up a lot of the liquid after a while, but you don't want the rice to be wet.
- In a small saucepan over low heat, blend the 1/2 cup coconut milk, 1/4 teaspoon salt, and 3 teaspoons sugar. When the sugar melt and the mixture starts to get hot, thin the starch with a little water and whisk it well to prevent clumps, then add it to the pan.
- Use a small flat pan to toast the sesame seeds. It doesn't take long or much heat to get them golden brown, but for best results do it slowly and continue stirring them up by shaking the pan.
- Peel and cut the mango. One large mango is usually enough for 2 servings, but that's up to you. I usually use one side for each, then cut it straight across.
- Put half the sweetened rice on a medium sized plate (warm is better). Lay the mango (cold is better) next to it. Sprinkle the rice with a little toasted sesame seed.

- Steam the sticky (glutinous) rice. Sticky rice is also called glutinous rice or sweet rice. It is shorter and rounder than long grain rice and is generally available in all the grocery shops in Asia.
- Prepare the sweet coconut milk. The freshly cooked sticky rice still able to absorb more liquid since it is steamed without adding water. Now we want to season the rice with sweetened coconut milk.
- Make the coconut sauce as a topping. Now let’s make the coconut sauce to drizzle on the rice as the topping. Combine the cornstarch with some water to form a slurry.
- Use the ripe mangoes. The attraction of the mango sticky rice is attributed to the contrast between the refreshing mango and the sticky and milky rice texture.
- Toast the mung beans. This step is optional. Toasted mung beans are crunchy, which provide a welcoming contrast against the soft and fluffy sticky rice.
- To assemble and serve. Cut a piece of banana leaf and put it on a dessert plate. Mold the sticky rice with a bowl. Please rise on the banana leaf. Alternatively, you can just pile up the sticky rice on the plate.

- Soak the sticky rice in water overnight. Then steam it until the grains are soft and translucent (~40 minutes) using a Thai rice steamer as seen in the pictures above.
- While the rice is steaming, mix the coconut milk, salt, and sugar over medium heat until the mixture is smooth. Reserve 2 Tablespoons of this sauce for later.
- Once the rice is done, add it to the coconut milk sauce. The rice will soak up the sauce as it cools, so add it in small sections and wait for it to absorb the liquid before adding more. You may not need to use all of the rice to achieve the right texture.
- Slice a ripe mango and arrange next to the sticky rice. Spoon the reserved coconut sauce on top and garnish with toasted sesame seeds. Enjoy!
