2 tablespoons chopped shallots
1 1/2 tablespoons chopped fresh lemon grass (cores of 2 bulbs)
1 1/2 tablespoons chopped fresh ginger
1 large garlic clove, chopped
2 teaspoons Thai shrimp paste, or anchovy paste
1 teaspoon coriander seeds
Grated zest and juice of 1/2 lime
2 tablespoons vegetable oil
1/2 pound asparagus, ends snapped off, stalks slant-cut in 1-inch pieces
1 pound sea scallops
1/3 cup fish stock
2 tablespoons unsweetened coconut milk
1/2 teaspoon sriracha, or to taste
Salt
1 cup jasmine rice, steamed

Steps:

  • Combine the shallots, lemon grass, ginger, garlic, shrimp paste, coriander, lime zest and juice in a food processor or a large mortar. Thrash to a paste.
  • Heat the oil in a heavy sauté pan on high. Add the seasoning paste and cook, stirring, 1 minute. Add the asparagus and stir. Add the scallops, reduce heat to medium and cook, stirring gently, another 3 minutes. Add the fish stock, coconut milk and sriracha, simmer another 2 minutes. Adjust the seasoning with salt and more sriracha to taste. Serve with the steamed jasmine rice.

Thai Scallops make a quick and easy dinner that would be perfect for a date night dinner or Valentine's meal. They are quick to cook but taste like you are eating in a fine dining restaurant! Learn how to sear scallops perfectly and make a delicious and simple Thai style sauce with garlic, ginger, chili.

1 red chilies
2 garlic cloves
½ inch chunk peeled ginger
2 tbsp fish sauce
1 lime
½ tsp brown sugar
Fresh cilantro (- see note 1)
12-16 sea scallops (- see note 2)
3 tbsp oil (- see note 3)
Pinch salt
1 tbsp butter

Steps:

  • Finely chop the chili.
  • Peel and finely slice the garlic
  • Cut the ginger into thin matchsticks
  • Zest the lime and then squeeze the juice out.
  • Set these all aside until needed (see note 4)
  • Use paper towels to pat the scallops dry. You want to ensure the scallops have no moisture on the surface.
  • Place a heavy-based frying pan or skillet over medium-high heat. Add 3 tbsp of oil and let it heat until shimmering (at least 1 minute)
  • Season the scallops lightly with salt. Then carefully and quickly add the scallops to the frying pan.
  • Do them individually, starting at 12 o'clock and working around the outside of the pan.
  • Cook the scallops for 90 seconds on one side.
  • Turn the heat off under the pan and add 1 tbsp of butter.
  • Use tongs to gently turn each scallop over into the sizzling butter, again starting at 12 o'clock and working around in the same order you added the scallops.
  • Leave the scallops for 60 seconds, then remove the scallops from the pan and place them on a plate.
  • Put the prepared garlic, chili, and ginger into the frying pan and stir to cook in the hot oil and butter.
  • Pour in 2 tbsp fish sauce, the squeezed lime juice, and sprinkling over 1/2 tsp of brown sugar.
  • Once everything is bubbling (about 1 minute), pour over the scallops, and serve with fresh cilantro and a little lime zest.

This version of the Thai appetizer tod mun is not completely authentic, but it is pretty faithful to the flavors of the original. Makrut lime leaf provides the unique floral, citrusy flavor. The lime leaf is not absolutely necessary in this recipe, but it's a bit of a pity to leave it out. The leaves are available, if not from your local Asian grocery, then online. Most tod mun recipes call for any white-fleshed fish, but this recipe calls for sea scallops, which give the cakes a wonderful texture.

1/4 cup rice wine vinegar
1/4 cup brown sugar
2 or 3 tiny Thai chiles, red or green, thinly sliced
2 tablespoons chopped or crushed roasted unsalted peanuts
2 teaspoons fish sauce
1 teaspoon grated ginger
1 pound sea scallops, or 1/2 pound sea scallops plus 1/2 pound halibut, cod or other firm white-fleshed fish
1/2 teaspoon salt
1/2 teaspoon black or white pepper
2 teaspoons fish sauce
2 small garlic cloves, smashed to a paste with a little salt
1 (2-inch) piece ginger, peeled and grated
6 scallions, thinly sliced
2 teaspoons finely chopped serrano or jalapeño chile, or to taste
1/2 cup cilantro leaves and tender stems, roughly chopped
4 makrut lime leaves, slivered thinly
1 small egg, lightly beaten
Peanut or coconut oil for frying

Steps:

  • Make the dipping sauce: Combine all ingredients in a small bowl.
  • Make the sea scallop cakes: Put the sea scallops in the bowl of a food processor. Add the salt, pepper, fish sauce, garlic and ginger. Process to a fine-ground paste, about 1 minute.
  • Add the scallions, chile, cilantro, makrut lime leaves and egg. Pulse a few times to combine well. The paste can be transferred to another container and refrigerated until ready to cook, up to a day ahead.
  • Pour peanut or coconut oil to a depth of 1/4 inch into a wide skillet and turn the heat to medium high. When the oil is hot, carefully add the fish cake mixture in large spoonfuls. Fry in batches if necessary to avoid crowding. Adjust the heat to allow the cakes to brown gently for about 3 minutes, then flip them. Flatten them gently with a spatula and cook for 2 to 3 more minutes. Drain on absorbent paper, then serve hot, with the dipping sauce.

6 cups chicken stock
1 stalk lemongrass (minced), or 2 1/2 to 3 tablespoons frozen or bottled prepared lemongrass
2 makrut lime leaves
4 cloves garlic (minced)
1 teaspoon grated galangal or ginger
1 to 2 red chilies (sliced), or 1 to 2 teaspoons Thai chili sauce
Optional: 1 handful of fresh mushrooms (sliced thinly)
12 medium raw shrimp (shelled and deveined)
Other seafood of your choice: fresh mussels, scallops, crab, or sliced fish fillet (up to 1 handful of each)
1 medium tomato (cut into thin strips)
Optional: a handful of baby bok choy
1/2 can (14 ounces) thick coconut milk (not "lite")
2 tablespoons fish sauce
1 tablespoon soy sauce
Juice of 1 lime
1 teaspoon sugar
1/4 cup fresh cilantro (coriander) leaves (roughly chopped)

Steps:

  • Gather the ingredients.
  • Add the stock, lemongrass, and lime leaves to a large pot over medium-high heat. If using fresh lemongrass , also add the upper stalk pieces for extra flavor. Bring to a boil.
  • Add garlic, galangal, chili, and mushrooms if using. Reduce heat to medium. Simmer until mushrooms are soft, 2 to 3 minutes.
  • Add the shrimp, seafood, tomato, and baby bok choy, if using. Simmer over medium heat until the shrimp turns pink and mussels have opened, 3 to 4 minutes. Scallops, crab, and fish should all be firm to the touch and no longer translucent.
  • Reduce heat to medium-low. Add the coconut milk, fish sauce, soy sauce, lime juice, and sugar, and stir well to combine. Gently simmer until hot (do not boil at this point). Taste-test the soup, adding more fish sauce, soy sauce, lime juice, sugar, or coconut milk, if desired.
  • Divide into bowls and garnish with cilantro. For an extra hit of flavor, you can also add some Thai chili sauce, Nam Prik Pao, either store-bought or homemade.
