1/2 8-ounce package rice vermicelli noodles
1/4 cup lime juice (from about 3 limes)
2 tablespoons sugar
2 teaspoons sambal oelek (Asian chile sauce)
1 teaspoon fish sauce
1 English cucumber, halved lengthwise and thinly sliced
1 red onion, thinly sliced
4 cups cubed watermelon
Kosher salt and freshly ground pepper
1 1/2 pounds skirt steak, cut into 4 pieces
Vegetable oil, for brushing
1/2 cup fresh cilantro

Steps:

  • Heat a grill to medium high. Bring a medium pot of water to a boil. Add the noodles and cook as the label directs. Drain and rinse under cold water. Set aside in a colander to drain thoroughly.
  • Whisk the lime juice, 3 tablespoons water, the sugar, sambal oelek and fish sauce in a large bowl. Add the cucumber, onion, watermelon and noodles. Season with salt and pepper and toss; set aside.
  • Season the steak with salt and pepper. Brush the grill with vegetable oil. Grill the steak until marked, about 3 minutes per side for medium rare. Transfer to a cutting board and let rest 5 minutes, then thinly slice.
  • Add all but a few tablespoons cilantro to the noodle salad and toss. Top with the steak and the remaining cilantro.

2 (3 ounce) packages beef flavored ramen noodles
½ cup beef broth
2 tablespoons Thai chili peanut sauce
1 tablespoon soy sauce
⅛ teaspoon ground ginger
1 tablespoon olive oil
¾ pound beef top round steak, cut into 1/4-inch strips
1 tablespoon olive oil
½ carrot, cut into matchsticks
1 stalk celery, thinly sliced
3 green onions, thinly sliced
¼ cup thinly sliced red bell pepper
2 cups shredded cabbage
1 cup bean sprouts
4 fresh mushrooms, thinly sliced
salt and pepper to taste

Steps:

  • Bring the water to a rolling boil over high heat. Once the water is boiling, stir in the ramen noodles with only 1 seasoning packs, and return to a boil. Cook until the noodles are tender, stirring occasionally, about 3 minutes. Drain well in a colander set in the sink. Whisk the beef broth, peanut sauce, soy sauce, and ground ginger together in a bowl; set aside.
  • Heat 1 tablespoon olive oil in a large skillet. Stir in the steak; cook and stir until the steak is no longer pink, 3 to 5 minutes. Remove the meat from the pan and set aside. Heat the remaining 1 tablespoon olive oil in the same skillet. Stir in the carrot, celery, green onion, and bell pepper. Cook and stir until the vegetables begin to soften, about 2 minutes. Add cabbage, bean sprouts, and mushrooms. Stir in the sauce. Cover and cook until the vegetables are tender, about 3 minutes.
  • Toss in the cooked ramen noodles and steak. Season with salt and pepper, and serve in bowls.

1/4 cup soy sauce

2 jalapenos, finely chopped,ribs &,seeds removed
1 tablespoon vegetable oil
1 (3 ounce) package beef-flavor ramen noodles, reserve the seasoning pkt
1/4 cup steak sauce (Diana, A1, Lea & Perrin your favorite)
1 medium carrot, shredded
2 tablespoons fresh cilantro, chopped
1/4 cup unsalted peanuts, roasted

For the Pad Thai Sauce:
1/3 cup chicken stock (good quality)
3 tablespoons rice vinegar (or white vinegar)
1 tablespoon lime juice
3 to 4 tablespoons brown sugar
2 tablespoons fish sauce
1 tablespoon soy sauce
1/4 teaspoon cayenne pepper
For the Pad Thai:
1 chicken breast (boneless and skinless, or 1 to 2 thighs, chopped into small pieces)
1 1/2 tablespoons soy sauce
8 ounces pad thai rice noodles (rice noodles)
2 to 3 tablespoons vegetable oil
3 to 4 cloves garlic (minced)
1 to 2 fresh red chilies (or green chilies, finely sliced)
1 teaspoon galangal ​(grated, or ginger)
10 to 15 medium shrimp (raw, shells removed)
1 egg
2 cups bean sprouts
4 green onions (sliced)
1 lime (cut into wedges, for serving)
1/3 cup dry roasted unsalted peanuts (chopped)

Steps:

  • Gather the ingredients.
  • Combine the chicken stock, rice vinegar, lime juice, brown sugar, fish sauce, 1 tablespoon soy sauce, and cayenne pepper in a cup or small bowl, stirring to dissolve the sugar. Set aside.
  • Place the chopped chicken in a bowl and toss with the 1 1/2 tablespoons soy sauce. Set aside.
  • Bring a large pot of water to boil. Add the rice noodles and cook approximately 6 minutes, or until soft enough to bend easily but still firm and a little crunchy when you try to eat it (undercooked by regular standards). Drain and rinse noodles briefly with cold water to keep them from sticking. Set aside.
  • Heat a wok or large frying pan over medium-high heat. Drizzle in the oil and swirl around. Add the garlic, chili, and galangal or ginger. Stir-fry 1 minute.
  • Add the chicken and stir-fry 2 minutes. Add the shrimp, continuing to stir-fry until they turn pink and chicken is opaque-about 2 to 3 minutes.
  • When pan becomes dry, add 1 to 2 tablespoons of the pad thai sauce-just enough to keep ingredients frying nicely.
  • Push the ingredients to the side of the pan (if the pan is dry, drizzle in a little oil). Crack the egg into the empty space and stir-fry quickly to scramble.
  • Add the drained noodles plus 3 to 4 tablespoons of the pad thai sauce. Using two utensils, lift and turn the noodles with the other ingredients. Continue in this way, adding more sauce every minute or two, until all the sauce has been added and noodles are chewy and a little bit sticky, 8 to 10 minutes.
  • Fold in the bean sprouts and green onion. Remove from heat and taste-test, adding more fish sauce or lime until the desired taste is achieved.
  • Portion out onto individual plates and add a lime wedge on the side. Top with a sprinkle of chopped peanuts.

1/4 cup lime juice
1/2 cup warm water
3 tablespoons sugar
1 garlic clove, minced
1 shallot, finely chopped
1 tablespoon fresh ginger, peeled and finely chopped
1 strip loin steak (about 12 ounces leave on fat for flavor) or 1 strip top sirloin steak (about 12 ounces leave on fat for flavor)
1 (6 ounce) package vermicelli rice noodles
4 large green leaf lettuce or 4 large red leaf lettuce leaves, separated washed and dried
1 large carrot, cut into matchsticks
1 medium cucumber, peeled seeded and sliced into thin crescents
1 bunch cilantro, stemmed
1 bunch mint, stemmed
garlic sauce, Sriracha (optional)

Steps:

  • To make dressing, combine fish sauce, lime juice, water, sugar, garlic, shallot and ginger in a small bowl and stir until sugar dissolves. Put steak in a shallow bowl, pour in 1/4 cup of dressing and marinate 15 to 20 minutes.
  • Cook noodles according to package directions.
  • Preheat grill for high heat. Lift steak from marinade, pat dry and grill for 4 to 5 minutes per side for medium-rare. Let rest for 10 minutes before slicing it into very thin strips.
  • To serve, tear lettuce into the bottom of 4 bowls. Add noodles and add carrots, cucumber, cilantro and mint. Top with steak and dressing. Add a splash of Sriricha, if using.

5 tablespoons vegetable oil, plus more for the grill
4 tablespoons Thai red curry paste
6 ounces rice vermicelli
2 red bell peppers, sliced into thick strips
12 ounces green beans, trimmed

1/4 cup fresh lime juice (from 2 to 3 limes)
2 tablespoons packed light brown sugar
2 teaspoons fish sauce
1 teaspoon Asian chili-garlic sauce
1 cup fresh basil

Steps:

  • Bring a large pot of water to a boil. Meanwhile, preheat a grill to medium high and line one side with foil. Pound the steak between 2 pieces of plastic wrap until 3/4 inch thick; cut in half lengthwise. Stir 1 tablespoon vegetable oil and the curry paste in a small bowl and spread all over the steak.
  • Add the rice noodles to the boiling water and cook as the label directs. Drain and rinse under cold water; shake off the excess water. Snip the noodles into pieces with kitchen shears.
  • Brush the uncovered side of the grill with vegetable oil. Toss the bell peppers and green beans with 1 tablespoon vegetable oil, 1/2 teaspoon salt and a few grinds of pepper and place on the foil. Grill the vegetables, stirring, until charred, about 10 minutes. Meanwhile, season the steak with salt and pepper and cook on the other side of the grill until marked, 4 to 5 minutes per side for medium rare; transfer to a cutting board. Chop the vegetables.
  • Whisk the remaining 3 tablespoons vegetable oil with the lime juice, brown sugar, fish sauce, chili-garlic sauce and 2 tablespoons water in a large bowl. Add the rice noodles, vegetables and basil; season with salt and pepper and toss. Divide among plates. Thinly slice the steak and add to the plates.
