EASY THAI CHICKEN

Easy Thai Chicken image

So sticky, so tender, so moist and just packed with so much flavor. And it's an easy peasy weeknight meal, made in 30 min or less!

Provided by Chungah Rhee

Yield 8 servings

Number Of Ingredients 11

2 tablespoons unsalted butter
8 bone-in, skin-on chicken thighs
1/4 cup peanuts, chopped
2 tablespoons chopped fresh cilantro leaves
1/2 cup sweet chili sauce
2 tablespoons reduced sodium soy sauce
2 cloves garlic, minced
1 tablespoon fish sauce
1 tablespoon freshly grated ginger
Juice of 1 lime
1 teaspoon Sriracha, or more, to taste

Steps:

  • Preheat oven to 400 degrees F. To make the sauce, whisk together chili sauce, soy sauce, garlic, fish sauce, ginger, lime juice and Sriracha in a small bowl; set aside. Melt butter in a large oven-proof skillet over medium high heat. Add chicken, skin-side down, and sear both sides until golden brown, about 2-3 minutes per side. Stir in chili sauce mixture. Place into oven and roast until completely cooked through, reaching an internal temperature of 165 degrees F, about 25-30 minutes. Then broil for 2-3 minutes, or until caramelized and slightly charred. Serve immediately, garnished with peanuts and cilantro, if desired.

THAI SPICY CITRUS SAUCE

THAI SPICY CITRUS SAUCE image

Categories     Sauce     Citrus     No-Cook     Low Fat

Yield 25-30 fl.oz.

Number Of Ingredients 14

1 10 oz. bottle Thai chili sauce ( I like Thai kitchen brand)
zest and juice from:
2 lemons
2 limes
2 oranges
2 tbsp fresh grated ginger
2 tbsp peanut oil
4 cloves minced garlic
1/3 cup sugar
1/4 cup white wine
2 tbsp mirin (Japanese sweet wine)
1 tsp fish sauce
1 tsp sesame oil
I've varied this on occasion with the addition of things like mint, coconut, coconut milk, cilantro, or basil

Steps:

  • Combine all ingredients in a blender, food processor, or hand blender until well combined. Return to a well sealed container Mason jars are good for this. To make a slightly thicker sauce pour 1/3 cup of sauce into small saucepan, add 1 tsp cornstarch and bring to a light boil stirring constantly. This process with intensify the heat so you may want to add some sugar to taste to balance it.

THAI CITRUS CHICKEN SALAD

Thai Citrus Chicken Salad image

This is a healthy and delicious summer salad. Great for lunch while sitting out in the garden with a a nice cold glass of white wine. :)

Provided by - Carla -

Categories     Chicken

Time 1h

Yield 2 serving(s)

Number Of Ingredients 15

1 tablespoon minced ginger
1 garlic clove, minced
2 teaspoons light soy sauce
1/4 cup rice wine vinegar
2 oranges, juice of
1 lime, juice of
1 teaspoon brown sugar
2 cups Chinese cabbage, shredded
100 g bean sprouts
1 red onion, thinly sliced
1 orange, peeled and sliced into 1 inch segments
2 grilled chicken breasts, sliced
chopped fresh cilantro (for garnish)
salt & freshly ground black pepper
1/4 cup fresh cilantro, chopped

Steps:

  • DRESSING:.
  • Combine the ginger, garlic, soy sauce, rice wine vinegar, orange juice, lime juice, and brown sugar together.
  • Add salt and freshly ground pepper and taste for seasoning.
  • Refrigerate 1 hour to allow flavors to infuse.
  • SALAD:.
  • Combine the Chinese Cabbage, bean sprouts, sliced red onion and orange segments. (I like to drop everything in a large zip-lock bag).
  • Toss with half of the dressing. (Again, if you use a zip-lock bag you can easily pour in half of the dressing, seal and fumble to mix dressing in with salad; place in the refrigerator until ready to use.).
  • Add the sliced chicken to a frying pan and brown lightly with a small amount of olive oil.
  • Add the remainder of the citrus dressing; bring to a boil; reduce for 30 seconds to allow mixture to thicken slightly.
  • Place Chinese cabbage mixture on two dinner plates.
  • Arrange sliced chicken on top and pour over the remaining sauce.
  • Top with freshly chopped cilantro.

  • Thai Chicken Lettuce Wraps. If you’re in the mood for something crazy delicious but on the lighter side, then you should try these wonderful wraps. Using lettuce is a great way to keep the carbs down, and it adds such a nice crunch, too.
  • Chicken Satay with Peanut Dipping Sauce. As a massive peanut butter fan, I was pleasantly surprised to see so many dishes using it in new and funky ways.
  • Peanut Dipping Sauce. Once you’ve tasted this sauce, you’ll want to put it on everything. Trust me: I always have a batch in the fridge, and it never goes to waste.
  • Fresh Spring Rolls with Peanut Sauce. Once I found out I could buy rice paper in the supermarket, I started making my own spring rolls, and I haven’t stopped since.
  • Thai Corn Fritters. You may have had corn fritters in the past, but not like this. These are full of some incredible flavors, like ginger, coconut, and garlic chili.
  • Supreme Thai Ribs. Speaking of supreme Thai ribs… Ribs are a real indulgence in my house. I have to get them special from the butcher, so I know they will be thick and juicy.
  • Baked Thai Coconut Shrimp with Lemongrass Guacamole. As if coconut shrimp isn’t good enough. Lemongrass guacamole!? I had to try this one! I actually had something similar from a street cart when I was in Thailand, and I could never entirely recreate it at home.
  • Thai Peanut Salad Wonton Cups. These are for when lettuce wraps just aren’t enough! Who doesn’t love a crunchy wonton? Since they’re available in the grocery stores, making your own has never been easier.
  • Thai Fried Bananas กล้วยแขก (gluay kag) The key to fried bananas is… well, to not use bananas. These recipes call for plantains or a different variety of bananas that we don’t tend to see in the States.
  • Thai Pinwheels with Peanut Sauce. This recipe uses many of the same ingredients you would see in a spring roll. There are plenty of veggies and some lovely sauce.
